I wouldn't say major but we're playing out more nowadays. Our drummer used to do a lot of the logistics and organising and since we replaced him, that job of band leader/manager seems to have fallen on me.

Aside from getting some new music gear, bass guitars, amps and effects, I also took on the challenge of upping the sound and visual aspect of our show so have been getting to grips with band lighting and PA. We used to spend a fortune hiring gear in but decided to invest in some pro quality kit and run as much as possible in house so that's been keeping me busy. And depleted hifi/music spend as well.

Also I've partnered with a collective who put on psychedelic music shows and festivals around the North East so have involved in helping out promoting and staging of some of their gigs.

Things have also been fairly busy on the home front too. My wife's mother is deteriorating health wise and she's bearing the weight the additional care needed. I'm no good in that department but I can try and support Mrs B as best I can with all the stress which comes with it.

I'm currently wrestling with a few faults in home system so I'll be raising a couple of advice threads here. Managed to blow out the tweeters in my RS5 so that's a repair I need to get to.

Sorry to hear about your mother-in-law. I know exactly what you're going through, as Del and I went through it with her mum, who eventually died from brain cancer. All the best to your good lady and family in coping with things as best as possible.

However, I'm glad you've been enjoying yourself gigging and being more hands on with the sound and visuals. Hope you get your own system sorted out, and if you need any advice in that respect then we're all here to help! :cool:

From the left. Fujifilm E900 (9mp), Nikon P6000 (13.5mp), at rear two Kodak P880's (8mp) and lastly to the front an Olympus (7.1mp).

Each camera has its own uses. The Fuji being the general purpose job, the Nikon being good for macro shots, the pair of Kodaks having a 24mm extra wide angle and the Olympus has a long tele zoom with effective image stabilsation.


If you're wondering what I took the photo with, its a bit of a digital classic. The Fujifilm F810 (6.3mp).

You'll notice that each of the compacts has an optical viewfinder. Not that many half decent cameras about that have one and I hate using the rear LCD screen in bright daylight, so a viewfinder is important to me.

The lowish pixel count means little. Each camera has a good lens and turns in very decent photos.

The whole lot stands me in at around £300, with the Nikon being the costliest, so I can't really grumble.

ive only got 1.. a canon. good camera, and has wifi for transferring pics to my ipad easily. thats why i got it and sold my sony that I felt took a better pic overall.
The fuji and the nikon are both decent cameras.. I used to have a kodak too but gave it to my boy.

probably was. there was a nikon I was looking at but fancied another canon. one before the Sony I had was a nice canon and before that was a panasonic with Leica lens(all metal) which I gave to the wife.(daughter has it now)

As a general purpose all rounder, I find the Fujifilm Finepix E900 difficult to beat. It's reasonably compact, includes an optical viewfinder, has a good lens and the 9mp available is plenty for anything I need to do. It's old enough to use an XD card, again no drawback, as I have various card readers or connect directly to PC. And it uses two AA batteries, which I can charge anywhere. Paid about £20 for this one, so I'm happy enough.

Well, that's different then, as you just don't like the taste. Personally, I like a small amount of home-made stuff on lamb, as I think it compliments the flavour of the meat and helps break down the fattiness.

However, sometimes I don't bother, as Del makes really lovely gravy (from the meat juices, wine and stock, etc), which I pour over the lamb, so it doesn't really need anything else. Depends what mood I'm in and also the quality of the lamb, which can vary :)

Commercial mint sauce is strong and robust in taste, whereas home made mint sauce is weaker, but more subtle.

I don't get too partisan about it.

Sauce, Barry, as the home-made variety I'm talking about is much thinner than a jelly. It's also thinner than the bought stuff found in jars.

Del usually makes it the night before, to allow the mint to infuse into the vinegar and sugar, which improves the intensity of the mint flavour. And you need to use plenty of mint to get the proper flavour! :)

Sprinkle over some grilled lamb cutlets (when there is no gravy, compared with roast lamb), almost like a salsa verde, and it's delicious!

I have an aversion to bland tasting food, just like you do to strong tasting stuff. It's just what I've been used to since I was a kid. I remember in primary school, when my mum used to make me up packed lunches on a Monday, which would often be a couple of pieces of cold roast chicken (usually a leg and thigh), wrapped up in tinfoil, left over from Sunday lunch.

The Italian way is to stuff it full of garlic and herbs, so that the flavour is really infused, and also the chicken is highly seasoned, and my schoolmates (and also the teachers) used to love it, as the aroma of garlic and herbs pervaded the classroom at lunchtime, especially when they tasted it! :eyebrows:

Often when roast chicken is offered outside in UK restaurants, it tastes rather bland to me, as the British way is done much plainer. I also notice the same with the gravy served with roasts, which often just tastes like tarted up Bisto! :rolleyes:

I don't 'do' thin, watery-brown liquid, posing as 'gravy' either.... You can't make proper gravy quickly! Don't get me started on 'gravy granules'... :spew:

I agree with you about seafood, which has a delicate flavour, but even that can be enhanced with the *correct* and subtle use of fresh herbs, sometimes butter. But seasoning is always very important. It's not the same adding salt or pepper afterwards.

How roast chicken turns out is largely down to how good the chicken is to start with. If you've bought a frozen battery-farmed one, then it'll taste like shit no matter what you do with it. However, if you buy a fresh organic or free-range chicken, then yes, it doesn't need much doing to it to be tasty, other than cooking properly.

We still wrap ours in streaky bacon (or pancetta), to keep it moist, at the very minimum, especially as the bacon (once cooked) imparts a lovely flavour on the meat juices, which make up the gravy.

What's your view then on gravy? Do you just eat roast chicken dry or what? :)

A proper gravy involves the use of chicken stock, which needs to be made up in advance.

I love barbecued food, but only when it's done right. I don't like things tasting overtly of anything, as if it's like that it's not been done subtly, and that's wrong. With herbs, it's all about subtly enhancing the flavour of the dish, and knowing which flavour combinations work together!

I don't keep chicken stock (or any other kind).

When roasting chicken, I drain the juices from the pan near the finish and strain then reduce that as gravy base, adding butter, pepper, salt and a bit of chicken oxo, also a touch of Chinese 'Miso' paste, which goes well.

The grand kids prefer cheapo gravy granules.

Yes, that seems to be a British trait - either that, or swimming in the bloody stuff, as is often the case when roast meats are served in most UK pubs and restaurants! Your preferring it dry is likely partly because proper gravy takes time to make (boiling bones and carcasses down, etc, in a pot), so it's easier just to have it dry.

The stock thing is crucial, which is why we only ever buy whole chickens, as the carcass, giblets, etc is then used to make stock (along with veg and herbs), which once done we freeze into ice cubes, which then act as home-made 'stock cubes' - only full of all the natural goodness of the bird. You'll find that this is how any proper cook or chef makes gravy, especially abroad.

If you eat roast chicken in any country in Europe, other than here, it'll be stuffed full of garlic and herbs and served with a light but very flavourful gravy, and taste wonderful as a result!

I'd be confident, Barry, that if you were served a proper gravy (in a gravy boat, so you could just pour a little on the side to taste), you'd love it and consider it as an enhancement to the accompanying meat (as effectively it's been made from part of it). We'll need to try it next time you're round, but not with roast chicken.

As for venison, there's nothing nicer than serving it with a lovely rich port wine and juniper berry sauce! Trust me, you'd love it. Sauces/jus are one of the things that the French do particularly well, as they know how to bring out the flavour of meats with beautifully judged sauces :)

Lol - freshly grated Parmesan does NOT smell like vomit! :nono:

You're getting mixed up with that stagnant old sock dust, posing as 'Parmesan', sold inside little tubs in supermarkets.

Parmesan needs to be eaten when it's fresh, and freshly grated onto food, with a microplane grater, to get it nice and fine. Once the pack's been opened, it's good for a week or so in the fridge, tops. As soon as the cheese becomes unnaturally hard (and yellow looking), that's when it smells as you describe.

Also, you need to buy good quality stuff. Only use Parmigiano Reggiano DOP, which will be stamped onto the skin/rind. Anything else is grossly inferior.

Two reasons:

[1] I don't like to 'faff about' when it comes to eating; cutting away fat: removing bones etc.

[2] I'm squeamish: so I don't really want to be reminded about the source of the meat. Hence I much prefer cooking with mince or say chicken breasts or gammon steaks, rather than a whole chicken or cooking lamb or pork chops. I don't even like to eat fish served up with the head attached.

Hypocritical I know - I used to be a vegetarian but like the taste of meat too much.

What happened to canvas awnings outside of shops?

Was looking at an old postcard (from about 1910) of a street near to me the other day, all the shops had awnings unfolded. Walked down there on my way back from work tonight, the buildings are still there and mostly look identical, but the awnings and the metal apparatus for opening them are all gone except for one.

Seem to recall as a child in the 1970s that most shops still had and used their awnings, not sure when this stopped or why?

I got a new Zanussi integrated fridge/freezer this week to replace the malfunctioning Smeg unit. Bloody lovely to have nice cold stuff again and not to be throwing food out after a couple of days. The advice I can pass on is don't buy an expensive Smeg fridge, they are rubbish, even the engineer who came out to look at it said as much. Would have cost almost four times what the Zanussi cost ( sorry Marco I know they are Italian lol ).

We use bleach very occasionally (such as on our enamel bath), as bleaching everywhere is not particularly good for your immune system - and if you clean stuff often enough it doesn't need bleached! ;)

Cleaning products made from natural ingredients are far better than anything with chemicals in them - certainly much healthier :)

Just not a big fan of using bleach, or any strong chemicals around the home. Prefer regular (ordinary) cleaning, to prevent dirt build up. Cleaning the house is one of my jobs every day, whilst Del's at work. I quite enjoy it actually, parading around in my wee pinny.... :eyebrows:

As little as humanly possible. I tend to buy things that occassionally need a very light go over with my cordless iron. I hate ironing shirts and tend to buy more the casual winter or linen shirts that dont need much if any ironing. There is plenty of acceptable clothing that doesnt need a sharp crease pressing in the tousers etc.

If washed and carefully hung to dry, a lot of good clothing doesnt need any ironing. I think some people have a dated idea about what is smart dress.

I think the dress suits and shirt should be a thing of the past. I dont do business with someone because they are wearing a tie. I remember earning minimum wage in my first job and having to dress up in a suit and tie....ridiculous really as I was doing a fair bit of manual handling and general dogsbody work....put me off suits for life

The excuse is that bank attendance has fallen by 40% in the last three years, and most people are doing it online. Not me - I still like a face-to-face interaction, and despite the bank staff telling me their cyber-security "is as good as that of the Pentagon", I don't trust it. I've had four attemps of people trying to hack my account.

Still there will be a free-to-use cash dispenser at the Post Office, and they will be able to do a certain amount of banking business, but I shall miss my bank and the staff who work there.

Natwest just closed here as well. There used to be Natwest, Barclays, HSBC, LLoyds and TSB. When LLoyds and TSB merged the LLoyds closed and became a trendy café bar. Which then closed.

Then HSBC went, then Barclays and now Natwest, Only LLoyds left, since when they separated Lloyds took on the old TSB branch. which fortunately is my bank. When that closes I'll have to go 2 towns over to pay a cheque in.

All the former bank buildings are empty. Will probably become student accommodation since that seems to be happening to every empty building round here. Presumably the poxy students don't need banks because they bank on their 'phones or something. Who knows?

Mind you, those of us who've been using Internet banking for years (I would add with ZERO security issues) would be hypocrites if we complained now about bank branches closing, as a result of us simply not having used them often enough - so we've essentially engineered their downfall!

We're fortunate again living in Wrexham, which is, by some margin, the biggest town (should be a city) in North Wales, and so acts as a 'central hub' for everyone living in the area to flock to, in order to do proper shopping and/or carry out their financial affairs. In that respect, there are currently no shortage of banks. There is:

Both a TSB and Lloyds bank
HSBC
Barclays
Nat West
Halifax
Santander
RBS

and also a couple of building societies. How long that'll be the case of course remains to be seen!

Really? That's a shock to me. I can only imagine that their trading environment must be rather limited. If it works for them, then fair enough, but for how much longer? Round here - congested over populated south - banks close with a promise (!!!) to keep the cash machines. But the promise is short lived, so that the cash machines disappear some months later. There is now only one bank within a couple of miles, though it is near some shops - see next para, so most of the time there are two cash dispensers accessible even on Sunday - if they actually have any money in them!

A recent development is that some shops - for example the Coop - now have free cash dispenser machines, which is fine if people are aware of this, and also if the shops are open. Our local Post Office closed and was relocated into a very small shop - and the postal services and other services still function quite well in that, but the ultimate threat is to close POs completely. Getting cash on a Sunday can quite often be very difficult, and sometimes it is useful to have cash then.

Re cheques - they are still useful, and there are also some circumstances and some very special places where cash may be difficul.- http://theclinkcharity.org/the-clink-restaurants/ and cheques are the way to go.

Just got me a new laptop. Well, new second hand. Fujitsu Lifebook A series. No idea of it is any good in the range of these things but has all the things my old one didn't. Numeric keypad, disc drive, memory... and it's massive. Lovely condition too, looks brand new.
