Veggy breakfast again, avocado, shooms, toms, egg. Trying to cut meat/fish intake to just main evening meals about 2/3 times a week.

Breakfast usually involves eggs of some description, have to stay away from oats, porridge not as healthy as they make out apparently.
Courgette omelette with a small amount of bacon lardons, fried cherry toms and some feta, tarragon.

Oats are good. It's those instant things you need to avoid.they are mostly sugar

Probably, I've been looking social media for diabetes/pre-diabetes treatments, its all about the NO-carb, not easy, I could kill a baguette!
slow carb is better than no carb. slow release like good oats dont cause spikes that affect diabetes as much.
You should:
eat a wide range of foods – including fruit, vegetables and some starchy foods like pasta
keep sugar, fat and salt to a minimum
eat breakfast, lunch and dinner every day – do not skip meals
If you need to change your diet, it might be easier to make small changes every week.
Oat foods — such as oatmeal and muesli made from steel-cut or rolled oats — are low-GI foods, with a score of under 55.
wholemeal breads are ok too

I'm afraid I've gone down a rabbit hole, diet wise then, its super low carb for me now, I'll see what results in brings, then modify if needed. I have to watch my protein intake too due to likely kidney damage, yet to be confirmed, but my left kidney is half the size of my right one, and I' anemic, these doctors are negligent.
Renal hypoplasia*(or kidney hypoplasia)*is usually a birth defect. It just doesn't fully develop. Might be that as it's not so uncommon

It works for me - I'm diabetic (though not by the obvious reasons), but in sticking to the above-mentioned and not particularly onerous diet, I'm enjoying my food and my blood sugar levels are as for a non-diabetic.

I've had many Charlie Bighams over the years but they are now so expensive. Always were that bit more but worth it, now getting on for £10 for the larger ones.
I've been having a few Aldi ready meals. They are around £4 but very good. My favourite is King Prawn Linguini which actually has a dozen prawns and a sprinkling of those baby red Bell peppers to show they'e put some thought into it. Worth a try as is the Lasagne and Beef with Pappardelli.

No, I only got in from a job at 3pm, too near to tea-time so I didn't bother. Plus, I can't post my own pictures, I've tried and failed many times. Maybe when Santa brings me a replacement laptop I'll try again :)

And I've just had a slice of toast with peanut butter.
How the other half live.
Nowt wrong with peanut butter on toast. I often have such for breakfast.
(And you could walk on the wild side and have peanut butter and Marmite on toast!)

Pip & Nut dark roast crunchy is my peanut butter of choice. Good ol' fashioned peanut butter you have to stir before using. Lovely flavour and loadsa nuts.
Yes, I have gone to the dark side with Marmite. Also with cheese and tomato toastie.

Yes, it has to be crunchy peanut butter, and as you say, one where you have to stir in the oil which has separated out.

I can do an omelette, most types of sandwich, cheese on toast, sardines on toast, I can heat a can of soup and even make scrambled eggs..

Rice dishes are a little more difficult, but I can do a mean chilli con carne.

Remember sweet n sour chicken in batter was thee special meal of choice back in the 80s, from the local chinky, like, everybody wanted the same thing. It's the batter, moreish.

One is Cantonese style, then there is Hong Kong style. The proper batter ones are a western version I think. The batter the Chinese use is just cornstarch. I actually prefer just bits of chicken in the sauce with no coating.
