Rock Eel aka Huss
Fish,
That's what I thought, just checking... Is that a southern term, then?

Fish,
Actually, 'rock salmon', Dogfish, Huss. It's a smallish shark found in British Coastal waters. Very tasty too.
But I guess you all know that anyway! :)
Not me, first I'd heard of it. I suspect its origins are in the south of the UK :)

Me too, can't eat it.

Update: just picked a few apples from the garden, always cut them open in case there is something inside!

That's what I know it as, during my school days, used to sometimes get that, until I found out what it really was.
Rock and chips
Though I did have rock and chips a few months ago ,its incredibly difficult to get in London these days . This fish I feel is immense and really envious of
you today Roy.
had Huss before but up here its usually Haddock, although some shops try to bump you with whiting which is crap. Not much beats a nice bit of Haddock cooked right.

Yes, good haddock cooked right, nice. Used to get that a terrific Southend Fish and Chip shop, but that was about 35 years ago.

Nothing wrong with Whiting. It's very tasty and delicate. I agree Haddock is great.

Actually, just remembered, in the fridge, bought yesterday Morrissons chunky haddock in breadcrumbs, meant to have that today - doh! Hope it keeps till tomorrow!
got haddock in fridge too. have it tomorrow
There used to be a fantastic fish market in Brighton, so fresh and just around the corner was fruit and veg. I'll never forget " yellow peril " aka smoked and dyed haddock, bloody amazing.
Just a sandwich for me tonight and Mia had Felix beef with poultry in jelly. I sometimes think she eats better than me although I'm not about to share a pouch with her lol.

Indeed. Haddock is what you generally get in Scotland, as part of a 'fish supper' (or whiting, equally excellent, both of which my dad used to serve in his chippy), not that pish you get down here, called cod...
That's one thing I certainly miss from Glasgow! :exactly:
Marco.
Yeah prefer haddock myself, but stand in a fish shop down south and all peeps order is cod and chips, cod and chips, get the idea !
but its rather bland, haddock s definitely the sweeter fish.

The frozen North Atlantic Pollock, that is sold as 'cheap' fish by the supermarkets, is actually very nice. It's related to Cod, but with more delicate flesh. The flavour is good.
Having some in a minute actually.
You're are a man of good taste, Brian! Haddock rules (not that thick 'puffy' crap that folks here like)... I know where you can stick yer 'cod and chips'! ;)
[Hard to get a decent 'fish tea' around here].

In our family tea (meal) meant afternoon tea with sandwiches and cakes.
Evening meal was called supper. I still find it a bit strange when friends talk about their tea meaning their evening meal.
That's all very true, Alex, but also very British! ;)
For us continentals, it's always been breakfast > lunch > dinner/evening meal. The latter, however, is usually something rather light, as the main meal of the day is mostly eaten at lunch time.
Marco.

We usually called dinner teatime and that was about 5 ish. Lunch often got called dinner and was often a bigger meal, but that was many years ago, its now lunch and dinner

yup, it was eaten at table. afternoon tea would traditionally be in easy chairs

I occasionally enjoy some proper afternoon tea at a 'posh hotel', which usually follows a substantial breakfast, and replaces lunch :)
In such cases, breakfast would be eaten around 9am, and afternoon tea around 3pm. A light evening meal, around 7pm may follow.

It used to go like this here.
Early morning cuppa, sometimes with a biscuit.
Breakfast, could be a full cooked one, or just cereal, toast and cup of tea.
Elevenses, coffee and perhaps a biscuit.
Lunch, usually followed by a coffee.
Afternoon tea, cup of tea, sandwiches and cakes (but not always).
Supper, main evening meal
Late evening tea, usually about 9 pm, probably just a cup of tea.
Lol.... Ok if you're a 'tea-jenny'! ;)
Marco [rarely, if ever, drinks tea].

I used to like both about equally, but I'm getting a bit old and perhaps my digestion isn't so good, tea seems to suit me better than coffee, strangely, coffee can make me feel a bit nauseous.
No worries, Alex, each to his or her own :)
Last time we enjoyed 'proper' afternoon tea, al fresco, it was at The Manor House Hotel in Moreton-in-Marsh:

It was in 2000, I was taken to Harrods for afternoon tea. I seem to remember that it was £25, I think each!
It seemed very nice, but later that day I felt ill, and certainly was.
I didn't tell my host that this happened, but some time later they let on to me that they were ill too after the tea!
Cool... Do you think you've got a bit of a delicate tummy?
One place I'd love to have afternoon tea, which is where we'll go next time we're in London, is the Savoy. What a beautiful place that is! Especially as Del and I absolutely adore anything Art Deco :)
When we're up in Scotland, our favourite haunt for afternoon tea is the Roman Camp Hotel in Callander: http://www.romancamphotel.co.uk/afternoon-tea/
Simply awrsome!

If you can, chicken marinates overnight in buttermilk before coating.

Ah gotcha... I just like things to be as tasty as possible. Same with your steak, which looked nice, but some pan juices poured over the top/some form of sauce, or a little Dijon mustard on the side, to dip the slices of steak into, would've been just the ticket for me :)

Only just had my supper, was out most of the day helping an elderly neighbour. The Police were, according to him, supposed to be going round to him to check his driving license and insurance as they alleged that he/ his car was involved in a hit and run. He had no knowledge of any accident on the day mentioned, and no damage to his car.
I was suspicious, so I made a point of being present. Sure enough the Policeman looked at my neighbours driving license/ insurance, but then said that he wanted to take a statement and that I should go out of the room. My neighbour said that he would like me present. The Policeman said I could only do that if I gave my name and address. I said that that I did not want to, and the Policeman said that I had to. My reply was that I only have to give my name if I am suspected of a crime or am under strong suspicion of having committed a crime.
The Policeman did not like that, and said that he would have to check with the station. I said that he could do that by phone, he said no, he would do that in person at the station.
More cr**p went on and I put the Policeman right on several points of law that I just happened to know. It was quite funny really, he went back to the station to with a few queries about law, but no statement taken.
I'm a usually quiet and meek person, determined though, the Policeman must have though I was a retired Lawyer, or at least legally trained, my neighbour and his wife were very surprised and happy with the way I took charge, stopping the Policeman intimidating the Neighbour.
Supper, coming back home, I met another neighbour, a friend of the elderly one, they asked if I would like some curried chicken, I didn't refuse, had that with potatoes and courgette cooked with garlic, ginger and a little chilli, very nice. Cuppa following shortly.
Nice one, Alex. Don't take any shit and stand up for your rights! When the going gets tough, it's often the 'quiet ones' that get going ;)

Fair enough - you like what you like. My main objection is the water content, which simply makes the base soggy! That's why I won't entertain mushrooms either, or any other toppings that are similarly as 'wet' :)

wont need long Alex. 15 mins is plenty when it liquidized as long as the garlic is wafer thin to start with. I used to gently fry the garlic on a very low heat. cut it really seethrough thin then add it to the tos before giving it a qhick zap in the blender. improves flavour but you have to be careful not to burn it.

Dont like anything floppy :D well drained usually stiffens it
Your recipe for a quick tomato sauce? Would be useful.
Pretty much what Grant has said, although also add some fresh basil. You can also use passata instead of tinned toms, and add a teaspoon of tomato puree to the mix for extra richness :)
Marco.

Heh-heh... It's the water content inside the 'offending toppings' seeping into the pizza, once they've been put on top, that's the problem, and the longer they're lying there, the worse things get!
The test is, when you hold a slice of pizza in your hand, the end should stay rigid, not flop, as is often the case with British or American-style pizzas, simply because there's too much cheese and other crap on them ;)
The base of any *proper* pizza should always remain firm and crispy!
Marco.
Pizza without mushrooms? That's unthinkable!

forgot to mention herbs  yup basil or oregano usually. if in mood a splash of chili, or even a sweet pepper. you can get quite nice ones in jars too in lidl or Aldi

No worries. Just don't use too much, or it'll impart a bitter taste. The best is the double-concentrated type (most flavourful), and use LESS of it! 'Less is more' in Italian cooking ;)
Marco.

It happens... I've even seen broccoli and sweetcorn on some!!

Not for me, although you do get ones with porcini mushrooms on them in Italy.
But that's the problem when things become bastardised beyond recognition, like pizza has become today, which let's not forget originated in ITALY. What's forgotten in the quest for turning pizza into a heavy, stodgy overelaborated mess, is that the star of the show is always THE BASE, and the toppings of secondary importance.
It's mostly the other way round these days, until that is, anyone visits Italy and gets a (pleasant) surprise at what REAL PIZZA looks and tastes like!! ;)
Now don't get me started on lasagne!!

Looks pretty good, Roy. Perhaps, for me, just a little too much sauce and parmesan cheese. I'm sure it tasted nice, though! :)
At the end of the day, cooking is all about making what YOU like to eat, but in Britain, especially in the majority of Italian restaurants, the tendency is to overcomplicate/overelaborate Italian food, which when done right, majors on simplicity [the 'less is more' concept].
The key is always in the quality of the ingredients used and their freshness, not on how many you can use and bung on a plate ;)
Marco.

That's rather impressive, Barry! Did you make the Tournedos [note the spelling, lol;)] Rossini yourself? It's one of my favourite dishes... A true classic. What about the Tiramisu, was that home-made? :)
Marco.
No of course not - I'm not a bad cook, but that is way beyond my capabilities! We dined out to celebrate Happy's homecoming, and pushed the boat out a bit.
Yeah, I got that feeling, even though you didn't say... ;)
Italian restaurant, was it? Or perhaps not, as TR is classically French. Hope the fillet tenderloin was cooked to perfection, with a nice rich demi-glace sauce :)
Did they serve it with black truffles or pâté? The accompanying potatoes were hopefully either pommes fondant or dauphinoise.
Marco.

Marco.
Yes it was perfect. Pâté, rather than truffles with pommes dauphinoise, so could have been a bit rich for my tastes. But as it's something only I eat occasionally, and as you don't often see it on the menu, I thought I would give it a go.
Needless to say, breakfast this morning was just a cup of coffee.
Tournedos Rossini is also something I only enjoy occasionally (haven't had it for years). In fact, I think the last time was when Del made it when you were visiting. Do you remember?
Perhaps we'll do it again, ably assisted this time by the gadgets in our new kitchen? :)
As you say, it's not something you see often because it's somewhat 'retro' (a 70s/80s classic), but I love some of that stuff, including a good Prawn Cocktail, Chicken Kiev or Steak Diane, particularly in restaurants when the latter is flambéed at the table, by the waiter! I really enjoyed it when good restaurants practiced proper Silver service. Remember that?
The same applies, in terms of flambé, with one of my favourite desserts, Crêpes Suzette:

You must be clairvoyant Marco - that is what I had planned to have tomorrow!
Some cod will make a nice change, as we've been having a salmon 'binge' over the last few weeks.
Lol... They're just classic dishes, if you like a nice sauce with some flaky fish :)
If you're up for doing some cooking yourself, aside from Mornay, etc, a great way to cook cod or salmon is in the oven, wrapped in tinfoil, as it keeps the fish lovely and moist.
So before putting it in the oven, blob a knob of butter on top of the fish, along with some lemon juice, a dash of white wine and some fresh herbs (dill is ideal), then wrap up the fish, and everything else, into a little parcel with the tinfoil.
When it's cooked, and you unwrap the parcel, the fish will be beautifully succulent, and the butter, wine and herbs will have infused together into a lovely, tasty light sauce. Simply carefully lift the fish off of the tinfoil and place it onto a plate, then drizzle the sauce inside the tinfoil over the top of the fish, and serve it with the potatoes and veg, as mentioned above.
For extra finesse, place a sprig of dill and a slice of lemon on top of the fish before serving. And if having it with boiled new potatoes, melt some butter on top and add some sprigs of fresh parsley. That makes a lovely, tasty and healthy meal!
Marco.
I’m doing that one for sure!

I know, but there was not too much:) for a shop bought it was actually decent... nothing like homemade mind
Cool... :)
The best supermarket lasagne I've found is Sainsbury's 'Taste the Difference', as it contains the right amount of pasta to sauce, and most importantly (if lasagne has been faithfully reproduced), when you cut through it, it'll be nicely layered like a thick 'cake', subsequently between pasta sheets, bechamel sauce and meat sauce.
I can't stand it when so-called 'lasagne' comes out of a container, just like one big slop, basically because it's too 'wet' (too much sauce and not enough pasta)...
This is what a proper Italian lasagne should look like:
http://imagizer.imageshack.us/v2/1024x768q90/924/E1Qzzo.jpg
And so you eat that with a fork, not a spoon! ;)

Lol... The pic above is the *only* way you'll ever see lasagne served in Italy, or for that matter in an Italian household :)
Oh, and it it'll never *EVER* be served with chips or garlic bread (as you often see it here)!!! Maybe a green side-salad, tops.....

Never eaten 'proper' Lasagne. Dunno why not, it's just never come my way. Mind you, if it always has meat content, maybe people have avoided suggesting it to me.
