I don’t really do New Year’s Resolutions but I am aiming to use the Foodi more this year. I got a recipe book for Christmas, unfortunately it’s complete shite (pigeon English, actually maybe just pigeon? Completely unreadable) but will find another one or search online.
Any road up, today was roast gammon, with maple and marmalade sauce. Wouldn’t bother with the sauce again, as a bit too sweet for my taste but enjoyable nonetheless.

Tuesdays just got hyper busy - son has Art Club after school, then his drum lesson, daughter has piano lesson and then guides. Trying to factor in feeding everyone when we’re here, there and everywhere means something quick - and this was what Sue and I had last night, Tesco Finest £10 meal deal, meatballs and chips. The deal includes a main and side, plus deserts and a bottle of wine - a bargain, and the meatballs were amazing for fling in the oven and forget!

A bit more time this evening, so I created prawns and salmon in a creamy smoked paprika, garlic and Prosecco sauce with linguine - a little dry but quite tasty. More Prosecco needed next time, not necessarily in the dish! ;)

When I was 10 we moved from Cardiff to Lincolnshire. After a week at my new school I'd made a friend and went to his house. I asked his mum if I could have my peas in a separate bowl so the water didn't make my chips soggy. The next day the whole class was laughing about it and I was of course embarrassed. But it soon passed and we remained friends for several years.
Italian meatballs tonight. These are huge but tasty.

Deboned a Guinea fowl, minced the leg meat, along with pancetta and herbs, put it back into the legs, rolled up, poached, roasted, and it really wasn't worth the effort, basically just tasted like a sausage. Never again! Will attempt a Chicken ballotine next time, no mincing of meat, just debone a chicken and stuff it, I think minced meat has rather limited qualities.

Will attempt a Chicken ballotine next time, no mincing of meat, just debone a chicken and stuff it, I think minced meat has rather limited qualities.Usually find if you mince meat it needs some filler like breadcrumbs and an egg binder plus lots of herbs,spices etc or as you say it becomes pointless and isn't even as good as a sausage.

I prefer to cook potatoes with the skins on (as that is where all the vitamines etc. reside), so just give them a good scrub and remove as you have noticed any 'eyes' and spade 'cuts'.
There was a more meat left in the pan: but as Alex had noted we did go a bit overboard with the veg. Not that I'm complaining - I love vegetables.

Deboned an entire chicken including legs/wings, took a while as first attempt, but found a good video online, which recommended use of hands rather than knife, you can basically pull a lot of the meat off rather than cutting. Used some left over veal mince as stuffing, mixed with breadcrumbs, sage, egg, and onion/garilic - which I forgot to fry first mind. It was quite nice, and easy to carve, will try again next sunday may'be, hopefully deboning will be a fair bit easier.

Good to get the veggies in. I also had apple crumble, probably one of the easiest desserts to make, I think a good pinch of salt in the crumble mix is the secret. All time favourite is rhubard crumble of course, not much to compare to that!

I think this is my all time favourite dessert, Bread & Butter pudding. Loads of butter, bit of salt, very eggy, served with creme anglaise, not exactly weight watchers fare.

Stuffed a chicken again, much faster to debone this time, I can see this being a thing. Breadcrumbs, onions - fried this time along with garlic, rosemary and a few bacon lardons I had leftover, egg to bind. Very nice. 45 min cook was perfect.

:lol: That might have something to do with it. Actually I'm very fond of the soup bowls: they are made of stone clay, commissioned and made for me by a collegue at work who was an amateur potter in his spare time. He even built his own kiln.
Sadly he is no longer with us, so the bowls have great sentimental value. I ought to mention he also made a flower vase, a table lamp and a fruit bowl for me.
Stuffed a chicken again, much faster to debone this time, I can see this being a thing. Breadcrumbs, onions - fried this time along with garlic, rosemary and a few bacon lardons I had leftover, egg to bind. Very nice. 45 min cook was perfect.

Wife and kids out for the afternoon/evening, including a meal out at a local “datalink you can” place... :spew:
So home alone with the dog, “modded” Tesco four cheese and Balsamic red onion became “Seven cheese, Balsamic red onion, and non-Balsamic red onion, Salami Milano, Chorizo, green olive and oregano pizza!” :lol: still not a good as making them completely from scratch but tasty enough, can’t remember where the Valpolicella came from but is reasonable, and the dog is used to listening to Capital Dance! :)

Have been using some Ottolenghi Test Kitchen recipes for the last week or so. They’re very good for using up ingredients in unusual but tasty combinations. Really versatile and easy to lift bits from, to use elsewhere.
This was Magical Chicken and Parmesan Soup with Pappardelle.

I used to have and use a slow cooker when I was a student. You could use cheap cuts of meat and make very tasty meals, but there was so much preparation needed before the slow cooker could do its job, I stopped using it.

Whole leg of lamb and veggies in white wine, braised for 5 hours (Jamie Oliver recipe) and whilst I’m not the biggest fan of lamb it was really good, melt in the mouth and the veggies, too. Definitely one we’ll do again, although kids weren’t keen on eating Flossy so they had to have chicken breasts casseroled with roasties and normal veg. :rolleyes:

was great. i had a cooked breast that needed a place so sliced it finly and layed it ontop of the macaroni in oven with 12 mins left

It’s no effort really. You just throw it in a slow cooker with half an onion, a jalapeno, garlic and a cup of fresh orange juice. When it’s falling apart, shred it with forks then refry it on a hot skillet, basting it with the leftover cooking juices. It’s crispy but stays moist. Bloody marvellous in anything.
