Probably because our butcher does not adulterated the minced meat with sawdust, or whatever it is that goes into burgers and commercial sausages.

There was still a touch of pink, they get you to cut into it before they leave the table to ensure you’re happy.

Talking of medium rare steaks - we were recently in Lyon, France, a city that claims to the epicentre of French gastronomy and I had a steak cooked à point:

https://i.postimg.cc/Xv5kZvtb/024.jpg

(Technically this is slightly rarer than 'medium-rare', as we understand the term, but done more than 'rare' (saignant).)

This was followed by the richest, most chocolaty pudding I have ever tasted, and the whole was washed down with a local red Rhône (which IMO was served too cold, but is the way the French prefer it).

Looks overdone to me not medium rare especially as the French cut their steaks quite thin?

Barry
25-09-2024, 10:44
It was about 1cm thick. The photo is a bit deceptive, when you cut into it it was quite pink.

Pigmy Pony
25-09-2024, 14:31
I gave up on steaks when eating out long ago. Too often over cooked (I like medium rare) or so much fat that if you dropped it on the floor it would bounce back up onto your plate.

Jimbo
25-09-2024, 15:02
I mostly cook them myself to be sure although I did have a very good one at COTE restaurant recently.

Barry
25-09-2024, 16:49
Probably the best way, that way you can be assured it will be done to your taste.

I don't eat steak at home as much as I would like. The problem is I like mine medium rare, whereas my partner likes hers well done. Arranging for the two to be ready at the same time is difficult.

Ummm! That cheese cake looks tempting.

A guest house in Calais where we stayed for a night earlier this year ruined cheesecake for me.

The hosts (lovely couple) made dinner, and we were the only guests, so it was all quite intimate. One course was a cheesecake she made herself, and it wasn't sweet, but rather savoury, as in some kind of French cheese with some garlic included I think. Tasted to me like it could have started as a liquid from the bottom of a wheely bin, condensed down till solid and spread onto a bed of broken digestives. I got through it quickly by not chewing and washing down with copious amounts of wine. That course really made my eyes water with all the gagging.

I will go back to cheesecake at some point but it will have to be covered with lots of blackcurrants.

Barry

This year I eat the most disgusting thing I have ever tried. I have travelled all over the world, and like to try local dishes. This means that I have tried some odd things and sometimes they are not to my taste and wouldn't eat them again: for example the tortoise I eat in Laos, or Yak in Tibet. But the most disgusting was Anduoillettes I eat in Lyon earlier this year.

Andouillettes is regarded as a local delicacy in Lyon, so I wanted to try it. Big mistake! Imagine if you will a sausage of large diameter stuffed with offal and served in some non-descript sauce. The sausage skin is made from intestine, so was tough and chewy (remember before the discovery of latex, condoms were made from animal intestine), and the filling was indescribable. It truly was the most disgusting thing I have ever eaten. Never again!

To add insult to injury, I asked for a glass of the local wine. This was served too cold, it was tasteless, but is the way the French like to drink it. All in all, it was a bit of a disaster.

I did take a photo of the meal, but I don't think you would like to see it.

Roy - how do you get accents on your words? I wouldn't mind knowing...

Barry
28-09-2024, 16:12
If you are using the keyboard on a smartphone, when you choose a letter, let your finger stay on that letter for a moment where a second menu will open up giving you all the accented version of that letter. Now without lifting your finger off the pad, move it to the accented letter you want, then lift your finger.

It sounds complicated, and indeed needs a little practice, but I managed to do it with relative ease.

We had a selection of starters to share; Cheddar Bites, Cornflake Chicken, mushrooms and Calamari.

I reckon I could eat that twice :) Where's the recipe come from?

It's from Sarah Rossi's book "What's For Dinner? - Fuss-free Family Food in 30 Minutes" - and it's really easy - put your choice of pasta on the stove to cook, meanwhile cut some chicken breasts into small pieces, and fry in some oil from a jar of sun-dried tomatoes. Chop around 150g of the tomatoes into small pieces, add to the cooked chicken with about 100g of spinach and a large tub of garlic and herb cream cheese, stir in a few spoonfuls of the pasta water until you have a nice smooth sauce, then drain and add the pasts once cooked with 100g of grated Parmesan and enjoy!

Sarah goes by the online moniker of "Taming Twins" and as a busy mum has some great recipes that are quick and easy.

Super easy and very tasty, plus a meal the whole family will eat so I only have to cook one dish.

Basically chicken, sun dried tomatoes from a jar chopped up, baby spinach, garlic and herb cream cheese and grated Parmesan, a ladle of the pasta water to make the sauce silky and then mix with the drained pasta, e voila.

Sadly, Marco is not yet around to admonish me for my “Italian” dish this evening. Firstly he would tell me that Meatballs and Spaghetti is not Italian. (He’d be right.) Then he would tell me that my Marinara sauce shouldn’t contain mushrooms (right again.) And of course it should be served in a bowl not on a plate as no Italian would use a spoon with pasta. I am sure there are more errors! But it tasted great!

https://goodfruitguide.co.uk/wp-content/uploads/Orange-Navel-ZA-DSC_0017-cr-sq-400x400-2.jpg

Navels are one of the four groups of sweet oranges, particularly known for their superior eating quality. The distinguishing feature of a Navel orange is the small secondary fruit embedded at the stylar-end of the main fruit. In general, Navels are medium to large oranges with a smooth, deep orange skin which is quite easy to remove. They are virtually seedless, and the flesh is finely textured, juicy and quite soft. Levels of sweetness are very good, with an acid balance that emphasises sweet rather than tang, giving an eating experience that is rarely surpassed by other oranges.

Navels probably originated in China from where they found their way to Portugal and then to Brazil in the 18th/19th century. In 1870, Navels were sent from Bahia, Brazil to the United States Department of Agriculture, Washington DC for propagation, and henceforth became known as the Washington Navel. The majority of production around the world is that of the Bahia or Washington Navel, although the newer selections are becoming very widespread.

They sound really nice Barry, I really must try them. Up to now the only oranges I can deal with are the Satsuma types. I'm just hoping they're not imported from the US, I plan to avoid buying from over there.

Apart from TV/streaming services, can't do anything about that.

Early in the year navel oranges come Spain. At other times they will probably come from Morocco or maybe from Peru.

They are not particularly cheap, as being seedless they have to be grafted by hand to propagate which is labour intensive. But being seedless and very juicy, a single orange is sufficient for dessert.

My local greengrocer sells them at 60p a piece.

I don't think that's bad, I would have expected at least that. Next time I'm near any fruit I'll look out for them.

We're off to Rome a week tomorrow for 7 nights - last time we were in Italy my son managed to have pizza every day at least once - I suspect it will be the same this trip! He's a chip off the old block. If I ever get sentenced to death and have a last meal request, it would probably be pizza. In my single years between wives I had pizza for Christmas dinner...

It looks like the trick is to freeze the garlic/herb butter once you have made it, then slit pockets in the chicken breast and push the frozen discs of butter inside. It doesn't look too hard at all, actually. Will add to the list of recipes to try!

That too looks good to me. Nothing wrong with "quick and easy", as long as you don't eat such meals everyday. It always annoys me that a meal which might take an hour or more to cook, is polished off in twenty minutes. Even worse if it has taken three to four hours to prepare!

BTW the 1916 Clarendelle is still perfectly drinkable, but ideally ought to be drunk up by the end of the year.

Tonight’s dinner, at a local Restaurant to the hotel, L’aquila d’oro. We had a “Mixed Cutting Board” for 4 which I forgot to photograph - various Italian meats and mozzarella. Then I had a Roman pizza with Gorgonzola, radishes and walnuts - nothing like we make pizza and delicious!

Umm - looks good! I could eat that, except the Yorkshire puddings.

+1 but you’re wrong on Yorkshire puddings. ;)

Tired of the same old at my local bakery I made my own vic sponge today and it was banging, so easy.

Aye, easy for you Mike, I once had a go at making one, you could have rebuilt the Berlin wall with it  The time and effort you put in to looking after yourself is admirable, if it were left to me I'd be living on beans on toast.

Honestly I couldn't believe how easy it was, and they charge £5.75 at my local cafe (per slice) for some mass produced crap with additives which tastes awful. This was just 300g butter, 200g sugar, flour, and 4 eggs, and a bit of jam. I get so pissed off with bad food/service in cafes, I should open one, anyone with their phone on speaker gets the taser treatment!

No i-deer where this combination came from in my head - venison sausages with Greek salad (plus some of yesterday’s crunchy salad.) cooked a bit too long, probably only needed 15 minutes in the oven rather than 20 but still tasty.

Venison sausages - lovely, the only sausages along with wild boar I will eat.

Venison is a particularly healthy meat owing to it being very low in cholesterol.

Sue is out with one of her friends tonight so I said to the kids they could have anything they wanted for dinner. Their choice - BBQ pork ribs, with loaded potato skins and corn on the cob. Adding the peas was my genius idea!

I love corn on the cob, but always have it as a starter. It can only be eaten with the fingers, especially if it has melted butter on it. A finger bowl is mandatory.

Very civilised! I tried a finger bowl once, tasted awful. But then Irn Bru isn't what it was, so I really should try new things.

Should have left this bugger in for longer, I guess the cocoa makes it more moist? Still ok to use though, perhaps not as a sandwich cake.

Ribeye steak, boiled potatoes, carrot, red pepper and green beans.

A bowl of museli with sliced banana for dessert.

All washed down with a couple of glasses of a 2020 Château Mondeau, Bordeaux. 13% ABV. Double Gold medal winner 2022.

Oops! I've just been told by my partner, the cut of beef was T-bone steak. An easy enough mistake to make.

I have steak envy, regardless of the cut, sounds great Barry.
