I never mention the copious quantities of Shiraz (usually 'Jam Shed') I wash my victuals down with, kinda took that as a 'given' :D
Having visited Shiraz in Iran, it was disappointing to find that the wine is no longer made there (not surprising given that alcohol is haram in Moslem society).
Even so, if you like a good shiraz, I can recommend:

22 mins left on cooking time. Then it will be removed from bag, dried and then flash seared on hob.
Having it with some creamy mash and a Diane sauce.

Cut really easy and required little chew. The fat that was around edge mostly was falling off and just removed it.

Duchy's originals Shortbread rounds are rather good.
thats my Campbells meat order in for the festive season..:eek: pies, steaks etc.. no poultry this year..im going sous vide beef and pie and mash lol

best shortbread ive ever tasted was M&S's coconut shortbread.. absolutely amazing stuff.. i expect they still make it although it sold quite fast. if i was ever in one of their shops again that would be my first stop.

Mackerel fillets, with tomato/coriander sauce, purple sprouting brocoli, sweet potatoes. Followed by apple crumble, possibly the easiest and nicest dessert one can make, and a big bar of chocolate, healthy followed by sugar OD, if I ain't drinking wine I need to binge on something!

Pushing the boat out for a midweek dinner tonight, as it was such a beautiful sunny winters day, that left me hankering for some winter flavours, so it's pheasant breast with 'vineyard' sauce (grapes, sugar, game stock, herbs), celeriac puree, roasties, and whatever greens I have in. Plus a cheap but drinkable bottle of red I used for the sauce, which I'll try not to finish.

Unfortunately I loath all forms of fowl. My biggest dislike is turkey, and because of that, when I lived with my parents we would always have roast beef at Christmas. I have tried to like fowl having tried: turkey; chicken; goose; patrtridge; pheasant; puffin; quail, and ostrich. I haven't tried swan, but I doubt I would like it. I quite liked ostrich (which has a more 'meaty' taste), but it is difficult to rear them here in the UK.
If I did want to try something exotic for Christmas, it would be venison, which I like very much.

Penne with a cheese (Red Leicester) sauce infused with flaked tuna fish. On top was a 6 minute boiled egg, with red pepper, corgettes, brocolli and green beans.

Feather cut steak with a fresh tomato & tarragon sauce, saute pots, green beans. Couldn't resist a bottle of red, if only I could drink one or two glasses then stop. Xmas day might be pheasant or guinea fowl, or perhaps a beef steak on the bone cut, very expensive though, while pheasants are only a fiver!
Roast pork loin in the air fryer.
Slight burning on parts, as I left it too long but it tastes fab.
Just let it rest.

Smoked haddock is one of my favourite fish meals. As a child I would only eat smoked haddock; now my piscatorial tastes have branched out somewhat.

Macédoine, a West African vegetable salad that can be eaten hot or cold; consisting of potato, carrot, peas, sweetcorn, avocado, hard-boiled eggs, and tuna fish. Our version here is a little different from the traditional recipe.

Do you know how difficult it is to procure Bomba rice? When using Arborio rice in a paella I just use less stock.
(Actually I regard paella and risotto as largely synonymous: paella being a the same as risotto but with the addition of sea food. :D)

Gotta say that was banging, ended up using tarragon rather than thyme, a good choice. I found some cranberry sauce as well in my back up cupboard, good, as if I went to the shop I likely would have bought a bottle!

churned this this morning, and it came out wonderfully... the 2 days chilling in fridge, both thickened it well and reduced churning by 50%..

I've invented a new omelette, and it is most excellent. Courgette, red chill and garlic. The coriander garnish is essential, loads of it too. I used to make a bacon and courgette omelette, but this is better.

yup, good advice.. needs to be thoughly cooked through but not overcooked.. getting eggs at moment is difficult tho... good ol' brexit, it gives so much :D
Yes - ommelettes should be cooked, not runny, but not overcooked so they turn out like a piece of 'Dunlopillo'.
We are not having any problems in buying eggs, but the shortage is due to bird flu here in the UK, and the subsequent culling of infected stock. But I'm sure Brexit hasn't helped.

Chicken noodles, made with chicken stock and meat from yesterdays roast chicken. It was rather nice, I reduce it ALOT to an almost sticky consistency, garlic ginger, fresh chiili, cori, soy, honey.

mine was 1 chopped potato, 1 chopped onion, a small tin of carrots(mashed roughly), garlic, herbs, seasoning, cheese powder and chicken stock. trick to good soup is good stock

It was very nice. A bit over spicy perhaps and beans could have done with a bit more cooking.
Just made an egg ice cream custard. Cooling in a bath of water before going into fridge. Make it tomorrow or Saturday. It's thickening nicely already and still warm.

it means heat/hot or yes, spiced up. horseradish is another one can be used..chilli too obviously but mustard and horseradish are often used
white pudding is similar to a mealie pudding(which mine was closer to) or even skirlie.. white is often bound with egg so it holds its shape whereas mealie would just be water; its also similar to black minus blood i guess. mostly oatmeal, fat, onions, spices etc... down cornwall way they would be called Hog's or Groats pudding.its a scots/irish dish now. most of england probably dont get them

usually called mealie puddings. tesco sell them here in packs of 2. maybe not down there.
you can make skirlie yourself tho.. i make mine differently. instead of pan frying i bowl steam it. ie, make it up in a bowl, and fit a lid like tinfoil and sit it in a pan of water with a loose lid, simmer for 2 / 3 hrs depending on amount etc. checking occasionally to see its right consistency. i use beef suet, and oatmeal, chopped onion, a splash of stock or water if needed.. lots of salt n pepper to taste.. a bit of butter. its pretty easy once you get it right. start it off in micro and stir till it looks a nice consistency.. the cook. when cold it goes like concrete but softens easily in micro or oven.

you can make skirlie yourself tho.. i make mine differently. instead of pan frying i bowl steam it. ie, make it up in a bowl, and fit a lid like tinfoil and sit it in a pan of water with a loose lid, simmer for 2 / 3 hrs depending on amount etc. checking occasionally to see its right consistency. i use beef suet, and oatmeal, chopped onion, a splash of stock or water if needed.. lots of salt n pepper to taste.. a bit of butter. its pretty easy once you get it right. start it off in micro and stir till it looks a nice consistency.. the cook. when cold it goes like concrete but softens easily in micro or oven.
a sort of oatmeal stuffing and good with most meals especially chicken/turkey

if you prefer it less rough later you can use fine oatmeal but its inclined to get a bit mushy imo. my daughter always asks me to make it for her at xmas time its an old family recipe. i pur about 1/2 to 2/3 inch of oats, then a covering og onion and then covering of beef suet(atora), salt and pepper, then repeat to 3/4 up the top of bowl. top with butter/marg and heat for a couple of mins in micro. stir it up and see if its right texture.. slightly damp all over without being damp damp lol.. adjust with extra suet or oats until you think its ok.. you can also add a little stock if it seems dry.

yes you can, if they are oven chips they already have some oil on them and will cook just fine. wont take as long as raw chips tho ... depends on thickness but with a heated up fryer, i guess 8/10 mins for thicker ones easy to test by opening and stealing one lol. save a fair bit on fuel

I've just started a low sugar/carb diet, as my blood sugar was rising to almost diabetic levels. And starting to really enjoy the new dishes I'm eating. Basically try to reduce carbs as much as possible, so that's bread, spuds, rice, all flour products. You don't have to cut them out completely, so I'm aiming for one or two small portions a day, which for me usually means a sandwich or quiche for lunch, and then a small cake with my coffee. Last night had roast chicken on a bed of fennel, with some veg, tonight, radicchio sauteed with walnuts/feta, balsamic, and a couple of tuna steaks, rare, really nice, and I don't feel bloated after eating either. Have an omelette for breakfast every day. Basically the Atkins diet, I think it works very well, two weeks in and I'm feeling good.
I'm classed as Type 2 diabetic.
I just watch the amount of fat and sugar in my diet. Eat plenty of slow release carbohydrates (rice, pasta, potatoes and bread), stopped taking sugar in tea and coffee, and eat plenty of green vegetables.
My blood sugar levels are that of a non-diabetic.

Good that your blood sugar is back within normal, but I heard that pasta, pots,rice and bread, are high in carbs and not good for diabetes. I'm heavily reducing those types of carb myself, even porridge. I do still have a daily sandwich or quiche though, sometimes one slice of toast in the morning for breakfast, after omelette or whatever. I can eat a fair amount of protein/veg and not feel bloated, it's carbs what do that.
