Good stuff, matey...:) Do you ever make a nice vinaigrette for your salads, or some other kind of dressing?

One thing I can't really go is a plate of 'dry leaves' or just plain sliced tomato or cucumber, as I find it a little bland and unadventurous, particularly as the quality of bog-standard tomatoes here (because of the lack of sun) is quite poor, therefore they lack sweetness and flavour, so generally I find that they need a little 'perking up'.

It's the first thing you notice when eating salads abroad, as unlike so often in the UK, they're always (in some way) nicely dressed and seasoned!:cool:

Oh, and a dollop of salad cream or mayo doesn't really cut it....:D Chilli-infused extra-virgin olive oil is a nice simple one (which you can keep inside a bottle to infuse), or even a splash of balsamic vinegar, which works particularly well with tomatoes.

The salad was tossed in the juice of a fresh lime and an equal amount of extra virgin olive oil with freshly ground sea salt & black pepper. I always take the seeds out of the cucumber as I find that makes the salad too 'wet'.

I also like to add chopped up pickled green chillies for added piquancy but didn't have any on this occasion :(

Nice one, mate. Good stuff. Bland salads are one of my pet hates. Probably my favourite simple salad is a good Greek one, as I love Feta cheese and Kalamata olives, plus I like how they also infuse theirs with herbs and lots of fresh lemon!:)

But my favourite salad is probably a really good Niçoise or Caesar one. Are you a fan?:cool:

Have to admit salads aren't my 'go to' dish on a menu, I'm tolerating them at the moment as I'm trying to lose some weight (lost 9 pounds since I was repatriated on 20th March).

I've had a Caesar salad with chicken and that was ok but is Nicoise the fishy one? Haven't tried that. Do like a greek salad with plenty of feta.

Lol - you have given the impression that salads aren't normally your 'bag'...:eyebrows: I know you're a meaty boy, lol.

For me, it's a weather thing. My diet is largely governed by seasons, so during the spring/summer, when the weather is warmer, and I'm generally eating outside 'al fresco', nice fresh salads hit the spot! Conversely, during the winter, a nice hearty stew or soups, steak pie, etc, hits the spot. I can't really 'go' heavy or stodgy food, during the warm weather.

Also seasonality comes into the equation, in terms of the quality of produce (meat veg, fish or salads) available at the prevailing time, so I tend to buy what's nice that's in season:)

Yes Niçoise is with tuna and anchovies, plus other things, such as hard-boiled eggs, croutons, green beans and black olives. Done well, it's gorgeous.

Appalling.

On govt furlough pittance as I am freelance and they hate freelancers.

BUT just got a 4K UST projector to play with. So not too bad. And a 100 inch ALR screen. Music Blu Rays are gonna be cooooool.

Lol! Cheers! It’s a treasure trove of hidden delights Grant & Marco. The quesadilla is stuffed with...
Sauteed potato with the addition of red onion, garlic, chipotle in adobo, chorizo and a handful of grated Mature Cheddar and Mozzarella. Burp! (The Mango Salsa offsets it all really nicely).

Today's lunch, all frozen fishy things from Lidl (and very high quality for supermarket food)...

From the left, Tempura King Prawns with a sweet chilli dip, Scallops in a Pea and Prosecco sauce, and best of all from their current Spanish week promotion, from 'Sol Mar', Gambas al Ajillo con Verduras (garlic king prawns with vegetables), mainly peppers, and which was lovely and garlic-y!:)

Served with some crusty French stick, to mop up the sauce, and a small pot of wild rice and red pepper salad, washed down with nice chilled bottle of Château Métairie du Razès Corbières Rosé, from Lidl:

Thanks Marco. All made from scratch using the last of my strong flour and semolina. No chance of pizza oven here but planning on making one at the house when moved in permanently. This was done as a quickie in the oven.

Tried doing a sourdough one a little while ago but it was a lot of effort tbh.

This was just a quick and easy way of making the most of the mushrooms and some mozzarella that needed using up.

We’re joining the social distancing afternoon tea party at 4pm, which we’ll now be baking and making for, so decided to go for a Bank holiday brunch this morning.

Thanks Jon - they were amazing, first time effort (mum fried them though, 160 C oil not a good idea with kids!) The scones and Victoria sponge were fab too, she did brilliantly.

Cheers, Tony! Would be interesting to compare recipes... The 'secret ingredient' with ours is the alcohol used, an Italian rum that you can only obtain in Italy, in or around Lucca, and which imparts a lovely rich, kind of caramel flavour:

It’s been a while since I made one but always use good fresh espresso. The Italian rum sounds ace. I generally use Brandy instead of Marsala, just a personal preference. Freshly grated chocolate is another winner [emoji4][emoji106]

I'd never use Marsala, as that's fundamentally wrong. Marsala is for Zabaglione! Amaretto, yes, that works, but you really want some form of strong, dark rum:)

Bit heavy/stodgy for me that, Ian. If I'm going to go for a 'heavy' pud, then I prefer a good sticky-toffee pudding (with a blob of salted-caramel ice-cream on top), but only on its own, not after a big meal, otherwise I prefer something lighter. I'm a big fan of a good crème brûlée:)

it was fruit(a mix of strawberries, raspberries etc.) compote. the waffles were warmed in the toaster, so it melted it a bit.. no i like it both ways tbh.

Nice one, yeah I like compotes, but this is more of a fruit coulis. Like you, I love waffles with ice-cream, but it's just a bit too filling for what I'm wanting on this occasion.

Not big on really soft/runny ice-cream though, although I understand why yours ended up that way. My pet hate is that soft 'Mr Whippy' shite, ice-cream vans sell now, which is processed artificial crap, and has never seen fresh milk/cream and/or a vanilla pod! Don't like the 'soft scoop' stuff sold either in supermarkets, as chemicals are added to facilitate that.

Remember when ice-cream vans used to sell *proper* vanilla ice-cream in 'balls' on top of cones, which was the real McCoy (usually homemade by Italian families running the vans and/or cafes)?:)

Also (while I'm on a rant), I used to really like Colston Basset Stilton until in an anti listeria frenzy, the use of unpasteurised milk was banned by some Stilton trade organisation. I could definitely taste the difference with the pasteurised version.

One company (to my knowledge) still makes Stilton the right way, but can't call it "Stilton" :steam:

they sell self raising & plain flour for £7.19 for 16KG's and 2 Gressingham poussins for £4.29, so it's not all bad.

REAL ice-cream [read as the full-fat variety, made with genuine dairy produce and other high-quality ingredients] isn't cheap or quick to make, which is the reason why that disgusting (in comparison), synthetic tasting, 'Mr Whippy' PISH was invented, as it's quick/cheap and simple to produce/serve to the public - and much more profitable! But REAL ice-cream it isn't:nono:

I don't eat it, mainly on principle, as it's an affront to my sensibilities as a foodie, but also because it doesn't taste anything like REAL ice-cream. And with me it's always a case of either eat the best, or a very good example, of something [whatever it may be] - or NONE of it, if all I can get is something that's vastly inferior to the real deal.

That's the reason why, for example, I only EVER eat BRITISH strawberries *in season*, as at any other time of year they simply don't taste (or even look) like strawberries!:spew:

Yup, it's amazing a) the crap that some folk will eat, and b) the shite that some folk will sell, simply to make a profit!:doh: What happened to caring about the quality of the product you're providing your customers with, and taking a genuine PRIDE in your business?

If I was running a fast-food business, no amount of profit would make me sell substandard cack, as I simply wouldn't enjoy the process. I'd rather provide my customers with a product I knew was genuinely good, and make less money from it, but still enough to sustain a successful business and comfortable living, whilst maintaining an excellent reputation, as experience tells me that kind of business model is more likely to succeed and be more profitable in the long term.

It was always how my parents, grandparents and other members of my family, ran their fast-food establishments successfully for over 40 years!:)

Yup, another of my pet hates when it comes to REAL cheese, similar in principal to what I was discussing before with REAL ice-cream. Quite simply, we've taken our food too far down the road of excessive legislation, for no real constructive purpose other than to pander to fashions/convenience or political agendas, ultimately to the detriment of QUALITY and TASTE.

However, we [not us, but rather the 'undiscerning masses' among the general public] who don't really care what they eat, as long as its plentiful and cheap, also have ourselves to blame for driving down standards, as if we didn't buy some of the nasty processed shite out there, posing as 'food', and insisted on fresher and better quality, even if it meant paying a little more for what we ate, then said shite would be less likely to exist!

Furthermore, it would in turn help drive food standards UP, rather than down - but that will never happen here, as too many folk are fixated solely on CONVENIENCE and PRICE!!:rolleyes:

Corn tortillas cooked in a chipotle salsa with leftover chicken, green beans, black beans and corn. Topped with cheese and hot sauce and baked in the oven. Very moreish.

Absolutely, just leave out the chicken. Another good option is to do a looser, more liquid version in a frying pan and crack in a few eggs for breakfast.

It was an Argentinian Malbec from Aldi at £5.99. I switched over to Aldi a while back now as their selection is always good and rarely disappoints.

Nice one, Tony. As I've said many times in the past, both Aldi and Lidl have some great wines, at bargain prices, if you know what you're looking for! And yes, anything I've had so far from Aldi's "Exquisite Collection" has certainly been worth drinking:)
