i love gammon joints but im useless at cooking them.
For the past couple of weeks or so, we have been living off salads (photos to follow), but the temperature has dropped and the weather turning a little autumnal.
So tonight we had baked salmon filets with boiled potatoes, carrots and steamed brocolli, red onion, sweetcorn niblets and petit pois. A little sauce hollandaise on the side.

(According to my partner who knows about these things, the mango had been picked too early - so wasn't quite ripened to perfection.)

https://media.tanners-wines.co.uk/media/catalog/product/cache/bbbfe41170c1e84fdc1bc8bebd143f94/c/r/cr504_1.jpg
Gold medal winner 2020, Vinales Internationales, Concours Oenologues de France.
Château Beauvillage lies in the tiny Médoc hamlet of Couquèques, close to the Gironde estuary and the Atlantic, both of which help to moderate the climate. The property was founded in 1925 by the grandfather of the current owner, who passed his love of the land and wine to his sons Christian and Claude. Today it's run by the third generation, Valérie Bugada Jean and her husband, Eric, who firmly believe in sustainable viticulture. Their 24 hectares of 35 year old vines have a high percentage of Merlot for the Médoc, but the clay, limestone and gravel soils are well suited to this grape, while 10 hectares of Cabernet also grow well, providing crunchy cassis notes and structure.

Is that your lunch? You really do spoil yourself! I had two slices of toast with strawberry jam on :(
But this last three weeks we've been getting supplies from a company called Gousto (which advertise on TV a lot). And they're really good! Bit pricey, at least they will be when the 'introductory offers' end.
Today's tea is called "sticky ginger lean minced beef with sesame noodles". They aren't reday meals, rather all the measured out ingredients with a how to make it recipe card. Every one of their meals so far has been excellent (we've had about 15 so far). And I'm a picky bugger.

an 'open' vegetable omelette with potatoes, carrots, green beans, brocolli, baby tomatoes, sweetcorn and garden peas. Essentially a way of using up leftovers. :)
Fresh strawberries for desert.
Was making up some stew and onions this morning. Had just set the foodi to sear for 5 minutes before I pressure cooked it and someone came in and knocked it out of head. Doh
So it was burned to bottom of pan lol. Anyway I poured water over and left it to ease it off. Fortunately it lifted well and although the onions and stock were burnt the meat was salvaged after pressurising it. Made fresh stock in another pan and thickened it is with backup bisto.

Lost me touch when it comes to pasta sauce it would seem, all the usual ingredients - vine tomatoes, garlic, puree, italian herbs etc. but it just didn't 'gel', oh well filled a hole.
chicken thigh casserole. thighs, peppers, onions carrots and potatoes cooked in chicken stock, and manzanilla sherry, herbs etc..

Ox cheek stew, cooked in red wine, tin of tomatoes, rosemary, and the usual....added some start anise, and dried orange peel, not bad, but not perfect. Next time I'll try a different wine, and may be fresh tomatoes. Ox cheek is a great cut though, only £8 for a kilo, cook it slow, comes up very tender, lovely.
Roast beef,(cut was salmon cut) seared in foodi with olive oil then pressure cooked in port and sherry plus beef stock. Then left to sit in juices
It's come out lovely. Gravy CV will be reduced and thickened tomorrow . Beef tastes devine.

Had a period in the pressure side of foodi then 6hrs on the slow cook setting and then just keep warm til I got up. 2 bits on top I cut off side.

Looks good Grant but would that constitute a 'well done' steak or with that amount of pressure cooking would it be 'nuked'? :eyebrows:;)

yes its well done, but in a falling apart way yet full of flavour too. its a good way to do steak that isnt fillet if you like it tender.
i might add it was an oldish steak and another reason i cooked it that way:D

What does it do?
it circulates hot water at a at the precise temp you wish for as long as you require it, to cook food in a water bath. food is in a bag, preferably a vacuum sealed one kept under the water level. you can use a large pan or in my case a vide bath. its a great way to cook meat; steaks especially. they just need a quick sear at end to brown them.
its how most restaurants cook steaks.
Italian ham, Napoli salami, and Spanish chorizo pizza - with steamed tender stem broccoli. baby sweetcorn and green beans.
Lemon coulis and limocello mousse for desert.

I never mention the copious quantities of Shiraz (usually 'Jam Shed') I wash my victuals down with, kinda took that as a 'given' :D

Haha, yes sir, tbh I'm trying to stay off it these days, so much better without it personally, but well, I'm not really succeeding, so here's to being drunk.
