I think the lighting is obviously very good where Geoff's taking pictures, plus he's using a good camera, and those (aside from his culinary/presentational skills) are the reasons why his pictures are consistently of a high standard.

Actually, I'm using an ancient Canon Ixus 100is mini-compact that cost me £18 off ebay, the lighting is just the kitchen flourescent tube. The images look crap when I first take them, but I then edit them with 'Faststone Image Viewer', only takes a jiffy. To be honest, the images are not sharp. I'll dig out a better camera sometime. :)
I am a reasonably well trained photographer though. Too lazy these days for any serious stuff.
Well, just because the camera didn't cost you much, doesn't mean it's not good!;)
I know next to hee-haw about cameras, but I know that Canon's often have good lenses. Plus, your experience in photography will also certainly help, as that explains why your pictures are always nicely framed. You'll know what I mean by that. The fact that you take time to do things right, even though it doesn't take you long, also has to be applauded.
And of course, the 'tidying up' you do with the aforementioned software will defo help, not to mention the most important thing is that you clearly know how to cook good simple British food!:cool:

A continued attempt to get 'beach ready' for next week. I've lost almost a stone so I'm now more walrus than whale.
I've had to buy new shorts & today I discovered that the cabin baggage that was ok last year is now 4cm to big so I've had to buy new luggage as well (thanks Virgin) :rolleyes:

I do love toast and marmalade for breakfast, nice Seville orange or lime. Tesco didn't have the Roses lime marmalade I usually buy so they sent their own brand as a substitute. Had this. Brown miso and soy broth with smoked mackeral, Pak choi etc.
It is about 50% better with buckwheat soba noodles which I thought I had some left. Didn't so used egg. Still brill.

1st night in Barbados, on the menu (amongst other stuff) jerk pork (matron), honey roasted sweet potatoes, some amazing slaw & salads, rice & peas & a lamb curry. Should have tried the salt fish, maybe when it’s on again.

Surprisingly short really (about 30 mins), as I used the big saute pan, so I expect the wide surface area helps it reduce quicker. Also, adding a heaped teaspoon of the ricotta forte just lifts everything, giving that unique tangy but comforting flavour. Had to be the Orecchiette really, to complete the homage to the Salento region. :-)

I've had that award winning M&S pie a number of times. Trust me the Pieminister pie I posted is better. Quite a bit better. If you see it buy it.
You need a little luck with the meat they use in pies. It can vary quite a bit in the same brand of pie.
The ms one was good. At least the meat was just that. As good a pie that way as I've had without Making it. I do make nice pies myself and puddings

I had a Timex (I think) divers watch when I was about 7? Don’t know what happened to that, I recall the bezel coming off?
My collection lacks an Omega, I like the 45mm Planet Oceans.
The Casio is an ‘illuminator’ with a ten year battery life which probably means it’ll outlast me.

Yup, on this occasion a chilled Portuguese Alentejo, from our local Portuguese deli (£6 a bottle), which is also where the clams came from. Top-notch ingredients, all imported from Portugal, and cheap as chips!:cheers:
And the fresh parsley was from our own herb garden. Sauce was mopped up with some crusty Italian bread!:D

Cheers, mate. The shells hold the sauce nicely, which was made from white wine (the stuff I had for lunch), a little butter, plenty of extra-virgin olive oil, and lots of fresh chopped garlic and green chillies, so you can sook it all up - no dribbles on my t-shirt either!:eyebrows:

Recipe? Curious to try it.
Whatever you want really, I think it’s the principle rather than the recipe for this one.
In this case I had a leftover roast Harissa Chicken carcass. I made a stock with that and a red onion, 3 cloves of garlic and a piece of root ginger.
When that was smelling good, I took out the veg, stripped the carcass, added the meat and additional bits of chicken already leftover, added more cauliflower, carrot, peas, sweetcorn and cavolo nero.
Added a bit of good chicken stock to bolster the flavour then let it cook for an hour or so.
Added some broken up spaghetti ten minutes before serving it up. Season to taste.

I always find carcass made chicken stock not that great by itself so I agree adding a chicken stock cube will liven it up.
Next time I do a roast I will do this after.

I added baby pak choi to make it more interesting.

Made three litres of chicken stock and some strange chicken, egg & rice based dish from it.
Nori seaweed is possibly very dodgy given it comes from Japanese waters. I wonder what checks they have out there. Toasted black sesame is really nice.
Stock started and finished shots. Tonnes of miso and soy in it. Looked much better at the start! Tastes great, though.

They were very good, the guitarist had obviously been to the George Benson school of plucking & the young lady had a great voice, she shone when covering Sade & who knew Adele’s stuff would work with a reggae vibe.
Nice one... There are few better pleasures in life than being in convivial surroundings, with good company, enjoying a lovely meal and a few drinks, whilst listening to some quality live music!:cool:

The three of us were trying to eat a lunch for 6. And going to work after that... It was a very tasty mistake.
Last night's Kimchee & chicken ramen.
I basically ruined it by using a chilli oil that was far hotter than expected. The chillis you see in there are very mild. The oil was killer.
I don't mind hot but this was crazy.

Today I popped into town for a funeral.
This entails parking in Sainsburys (its free !!)
Shot in afterwards to snap up a few reduced items !!
Lambs kidneys from 2.70 to 1 35 !!
Bargain !! Amongst other things , so off to my saucepan at home bit of a fry in butter and thicken the milk I added (after frying ) , with a spoon of cornflour (Worcs sauce , fish sauce ,salt and pepper !!)
On seeded bread toast - Yum Yum and lashings of Yorkshire Tea :cool:

Yeah the ta-ta sauce was great. Looks a bit more on the pic than it actually was. Plus, it was much lighter than anything you get in a jar, which for me is always too 'fatty tasting', sharp and 'vinegary', so you could eat more of it, and I also used some to dress the leaves ['Living Baby Leaf Lettuce' from Sainsbury's, btw]:)
Having the steak around 4pm, with a nice bottle of Chianti Riserva DOCG, so will post pics of that then.

Apart from a wee niggle. Those roasties could do with a good fluff after a par boil and a longer roast for extra crunchiness. At least for my taste.

Lol - no worries... I don't like them too crunchy though, and neither does Del.
We don't par-boil our roast potatoes, as we prefer eating smaller, bite-sized chunks, than half-slices of potato (as is more common with roasties), which of course you would need to par-boil, otherwise they'd be rock hard. Smaller chunks also infuse better in herbs (freshly-chopped rosemary), olive oil, garlic and rock salt, which are the Italian/mediterranean flavours we like.
These were nice and fluffy inside, with a firm but not too crunchy outer. Perfect:)

On the subject of roasties, this is my preferred method..
Bring potatoes in cold water to the boil.
Drain water from pan.
Add a couple of tablespoons of fine semolina mixed with mustard powder and salt n pepper to the pan.
Put the lid on and give the pan a good shake to cover the potatoes and fluff them up.
Empty the pan out into a roasting tray that has been given a generous costing of cold olive oil.
Make sure the spuds are given a good coating.
Pop into hot oven.

It depends on how busy we are, but if I have been busy doing something, Happy willl cook and visa versa.
Specifically, I did the baked gammon, and Happy did the steaks (since our visit to Italy, Happy has become quite taken with T-bone steaks!).
Ah, no worries. I approve of such teamwork!:)
Is that a T-bone then in the pic? Hard to tell under the sauce... IMO, sirloin or fillet is a better cut of beef for doing steak au poivre.
If Happy enjoyed the 'Bistecca alla Fiorentina' she had in Italy, then the T-bone needs to be infused with lots of fresh garlic, rosemary and olive oil, rubbed in and left to marinate for an hour or so, then simply chargrilled, ideally using a BBQ, but a good, well-seasoned (searing hot) cast-iron griddle pan can be nearly as good.

I like a varied diet, so rarely have the same type of food twice in a row. In that respect one night I could have steak pie and mash, and the next a Thai curry, then the next day lasagne, then fish and chips, etc... I get bored with the same flavours, no matter how nice those flavours are:)

To be fair though, the ketchup completely breaks down on cooking and adds a lovely sweetness and moisture (Matron!).

half the battle on food with me is someone making it for me. thats a thrill.. i so rarely get anything made for me... Was speaking to an old chum from my childhood yesterday. he came to visit re my brother.

Lol - I totally understand that, and sympathise. I'm lucky that I get arguably even better than my mum's home-cooking. I get Del's - every day! My mum was a really good cook, although almost exclusively with traditional Italian food, whereas Del can turn her hand to pretty much anything:)

How to completely fuck up a meal by drinking too much and not paying attention!
I spent quite a while making (from scratch) the coating for the rack of lamb (fresh chives, rosemary, garlic, parsley and olive oil)..

and the same with the mini Gratin dauphinois, like getting the cream, milk, nutmeg, seasoning etc balance correct, which imo i did and was perfect, but..
I took my eye off the ball with the red wine jus and it ended up looking like a murder scene..
I know taste comes first, but it was fucking annoying to screw it up at the last minute..

When it comes to 'ready meals', the Tesco branded ones are pretty good IMO. Just be aware of the amount of salt, sugar and saturated fat they contain. It's the often excessive content of the latter which make them unhealthy, and a poor part of a balanced diet.
The occasional use, for convenience and expediency, is perfectly accceptable.

Salmon steaks, rubbed with pink Himalayan salt, a little paprika and cumin and oven baked. Served with boiled potatoes, green beans, asparagus, leeks and brocolli, and an onion, ginger, tomatoe and leek compot.
Sorry no pics - anyway they wouldn't have told you how it tasted. ;)
