Stuffed Shells

One of my favorites, I used a Manicotti recipe, spooning the cheese stuffing into jumbo shells is much easier, covered with homemade meat sauce, baked in the oven. Always a crowd pleaser.

Healthy and unhealthy

Had some of my home-made veg soup. In the oven are a Lidl large steak pie, Lidl chips, and a few jacket potatoes. Some left over Brussel sprouts and cabbage to heat up.

Will have above with some gravy and a bit of English mustard.

Just pigged a Dr Oetker family size mushroom pizza, with added cheese, sliced mushrooms and baby plum tomatoes, plus a side helping of baked beans ('cos I had half a tin in the fridge that needed using :))

Very tasty and I'm pretty full. Didn't bother with a photo, as I didn't actually make anything, just cooked it.

I had to eat it all in one go, as I'm the only one here and I don't eat cold pizza.

Ok, didn't have time to have a proper lunch earlier (as I was working in the garden), so tonight's 'tea' became dinner:

https://imagizer.imageshack.com/v2/xq90/922/W4RUgU.jpg

14-day aged sirloin steak (from locally sourced Welsh beef), in a demi-glace sauce with parsley-coated mushrooms, served medium rare, with fresh green beans, peas, and chunky chips coated in Pommes-Frites Würzsalz [a special salt for chips, from Germany, which contains chili, paprika and curry powder], see here:

Leftovers from lunch. Doesn’t look like much but there’s quite a bit hiding in there.

Chicken thighs with roast veg. Spicy roast potatoes, mashed sweet potato and carrot and green beans sauteed in butter and garlic with parmesan. All with some lovely chicken gravy.

Big flavours going on today.

Marco.

My, that does look appetizing, I’ve always been a meat and potatoes man.

I take great care in the way I stack my toppings on the pizza. And the red stuff is just canned, diced tomatoes, drained. I put the onions under the cheese, so they cook down soft and don’t get burnt, and the green peppers on top for looks. Lately I just brown ground beef and spread on top. The most important part, is a clove or garlic about the size of your thumb, minced into the sauce. And yes, it’s an Americanized pizza. An Italian friend of mine always ordered a,”Cheese Pie”, he frowns upon all the toppings.

One thing I see is portion size. Everyone in America eats too much! The meals most of you display is about half the size of what I see here in the states. And that’s why Americans are so fat! I’m a good 15lbs overweight myself.

In bleak comparison, Lidl chicken and bacon pie, shredded Savoy cabbage with chilli flakes, chips and gravy.

Not bad at all really.

Some fruit to follow, grapes and a tangerine.

My kitchen, unheated, before doing the food was at 4.2 Deg. C. I wonder if this is a record!

Man that looks great, we have a proper home cook in the AoS house. How do you make those fondant potatoes?

Just get a decent spud (Maris Piper etc). Turn it into a puck by taking a slice off top and bottom, then peel it and put a 45 degree chamfer on the top and bottom edges.

Heat about 150g of butter in a deep sided frying pan until foaming then place the ‘pucks’ in the butter for about 5 minutes each side until nicely browned.

In the meantime, make up some Chicken Stock (enough to cover 3/4 up the sides of the potato).

When the potato is browned, add the chicken stock - be careful, it will get a bit lively at first!!

Then add a smashed clove of garlic and a couple of sprigs of fresh rosemary. Turn the heat down a little and let the stock cook into the potatoes until soft.

Then enjoy [emoji4]

Sounds lush!!
Tonight we were short of spuds so I grabbed a bag of Macaroni , and boiled it. Put 6 slices of finely chopped bacon with an onion and popped it in the oven for 20 mins to brown it!
Made a white sauce with some yellow mustard and a packet of Lidl cheese sauce mix and a chunk of old cheese :eyebrows:
Mixed it all together
Macaroni cheese with a topping of red fox grated and celery salt thyme!
With a tin of chopped tomatoes

I always make an unholy mess when I'm making poached eggs so I decided to cheat from now on, got myself a nice little egg-poacher in Morrisons for £8. Will get a lot of use out of it though as it can double as a perfect little non-stick frying pan for cooking Spanish Tortilla in. I actually went in looking for a new little frying pan and ended up killing two birds with one stone. Result! [emoji4][emoji106]

Boil potatoes, slice, then fry with onion and lardons, then in an oven dish with reblochon layers and cream. Green beans and a couple of sausages with it, that was the only way there would be any left for another day. Could be a windy evening.

All you need now Grant is a mini deep fryer for the occasional portion of chips. I'm thinking of getting one, as there's only me here most of the time, saves using a large quantity of oil.

Well I said I'd get one. A mini deep fryer for individual portions of chips.

http://i68.tinypic.com/ild16a.jpg

I went into Wilko (Wilkinsons) today for some dog food and spotted this one on display.

It takes 0.9 litres of oil. Cooks really quickly and I got perfect chips. Well pleased. Only £17 too.

Sea Bass with a bit of Lime & Chilli, Pinto Beans with veg.

Soaked the beans overnight and cooked them in chicken stock with an Arbol chilli.

Then sweated chorizo in a pan with some olive oil and added onion, celery, courgette, tomato and coriander..then the beans.

Sea Bass was ‘cooked’ in fresh lime juice before adding some olive oil, s&p and a pinch of dried guajillo chilli & garlic. Then just crisped the skin up in a dry frying pan.

Fish looks great, Tony. Very nicely cooked

We had our first barbecue of the year today, as it's been lovely, sunny and spring-like all day... I had some oak-smoked salmon in chilli and lime, with a fresh rocket salad, to start, followed by Harissa-marinated lamb cutlets, nicely charred on the barby, served with a tomato and red pepper couscous, and some green beans tossed in garlic and fresh lemon juice. It was excellent :)

Forgot to take a pic, though!

Nice BBQ! Love fish cooked on bbq.

I saw the blue sky up there earlier when I was Facetiming my sister (who is visiting mum on The Wirral). Not so lucky here but it’s still very Spring-like.

We're lucky on the outskirts of Wrexham town centre to have such nice green areas just minutes away from our house:

I like to cover and rest rice for 10 minutes once it has cooked, makes for lighter and fluffier rice.

...when I tip my pan sideways and no water drips down I know it’s ready to rest. Usually it’s about 1cm water level above the washed rice, cooked for 10 mins for white, 15 or more for brown.

Just back from Lidl and Asda, it's busy out there. Quick lunch, some leftover home-made soup, ham tomato and chutney sandwich, was lovely now some fruit and a cuppa.

Cutney was home-made yesterday, Mango, peach, apple, onion, raisns, chilli, cloves, ginger, garlic, mixed spice, cinnamon, cumin, salt, pepper, soft dark brown sugar, wine vinegar. Got about five jars, it will keep for a bit.
