Marco.
Funny been eating a bit of fried chicken recently.
Emporer Justinius method.
Get two chicken breasts. Pound flat to tenderise. Liberally salt and pepper and press it into the breast. Coat with plain flour, dip in beaten egg and dump into the stuff in the photo. Press it in.
Shallow fry in groundnut oil until it looks nicely brown. It will be cooked when the crust looks golden.
I find this superior to any spice mixes I have tried in the crumb. Maybe that's just me but the wife loves it too.
Use groundnut as it doesn't stink and tastes wonderfully clean.
Unfortunately chicken breasts vary. We had some Duchy breasts we paid a fortune for recently and they were just tough shite. But when it's good fried chicken done well IS amazing.

Yeah sounds good, Justers, and Panko are great breadcrumbs, so that would be a good thing to use for Del's recipe:)
Breast of chicken doesn't do it for me though with fried chicken - ya need BONES and wings to sook on!:D Even, on the rare occasions I have a KFC, it's always the 'Original recipe chicken' I go for, never breast, but each to his or her own:cool:

Marco.I think non-breast needs deep frying which is more hassle.
Nice, tenderised, big breasts on the other hand, do not...;)
I can't stand deep fryers with oil kept between frying. They just smell vile. Even a pan with a basket isn't nice between frys.
Good with roasted new potatoes with rosemary and a small green salad. Just like Carluccio's do.

Yeah I agree, but breast wouldn't interest me at all southern fried (not even big ones, lol), so for me that'd be a non-starter.
Del doesn't use a deep-fat fryer though (as we don't own one for all the reasons you've said), just shallow-fries the chicken in a wide pan. If the fat's hot enough and the breadcrumb mix is right (sticks to the meat), you get the lovely crispy, golden-coloured results as shown in the picture earlier:)

you cannae whack a nice breast or two..
Weel... This is wot I prefer using chicken breast for... Some Shnitzel, enjoyed earlier for lunch, with a nicely dressed side-salad (using lettuce from our garden), with sliced red onions, black olives and asparagus tips:

Got some fresh pineapple for later, soaked in Malibu, and which will be served with a blob dairy vanilla ice-cream!

It certainly produces better results than the oven.
Left them in just a smidge too long but they but they were fine. Looking forward to experimenting with it.

I like a good dessert/pudding, done well, but can rarely manage one after a meal, as I find it too filling, so usually appreciate it more, on its own afterwards. Got some fresh pineapple for later, which has been soaked in Malibu liqueur, and will be served with a dollop of clotted cream!:D

Cinnamon Palmier - a little treat with coffee this afternoon.

Wow - those cinnamon palmier look FAB, Tony! As does the rest of your cooking, as usual:)
Afternoon coffee and cake is very civilised indeed, and also rather European... As such it thoroughly meets with my approval!
Marco.
Ok, today's lunch... To start, a small portion of fresh tortellini, filled with spinach and ricotta, served with Del's homemade tomato sauce, topped with fresh basil leaves and sprinkled with Parmigiano Reggiano DOG:
https://imagizer.imageshack.com/v2/1024x768q90/922/ZA8isi.jpg
Followed by double Welsh-lamb cutlets (from a local farm) infused with fresh herbs from our garden, garlic and extra-virgin olive oil, cooked on the charcoal BBQ and topped with a dollop of homemade mint sauce (using fresh mint from our garden):
https://imagizer.imageshack.com/v2/1024x768q90/922/knUDdE.jpg
Served with herby-roast potatoes:

...steamed, buttered fresh asparagus (from a farm down the road), green beans, mangetout and other seasonal veg:

...and some fresh baked fennel in milk and cream, with a touch of butter, topped with fresh fennel from our garden:

Lots of nice veg and pots, as Del's veggie! 'View from the plate', as it were....

And washed down with a rather lovely bottle of claret:

Nice... I can confidently say that's the most authentic/closest to homemade looking Italian pasta, but which isn't homemade, I've ever seen:)
Marco.
P.S Roy-boy, yer chicken looked really good!
I don't often photograph Del's meals, as she's veggie, so what she eats often doesn't look particularly spectacular, but I thought the salad she had today with walnuts, dressed with a homemade fresh mustard vinaigrette, looked rather appetising:

Nice mate, but watch all those carbs!;)
Best to try and vary your diet a bit.... And get out to the shops again (instead of just buying stuff online) to facilitate it. The physical exercise involved, and benefit to your mental well-being, coupled with having access to a wider variety of healthy foods, would benefit you greatly:cool:
Don't just settle for becoming a recluse or a prisoner within the same four walls. As you know, all said with the greatest of respect and affection.

ive not recovered from the first time. That was the last of the fridge ones from there, and had to be eaten today.
Okies, mate. Not recovered from the first time in what way exactly - physically, mentally or both?
I just think it's very important for you to get back to the same mentality you had towards shopping before this pandemic, otherwise it'll impact negatively on your overall well-being. I'm only mentioning it because I care and want to see you thrive, rather than the opposite!:)
Marco.
Ok, lunch today... To start a simple Salad de Tomates (from a recipe by Raymond Blanc), using fresh vine tomatoes, topped with chopped shallots and fresh basil leaves, cracked black pepper, and a homemade classic vinaigrette:
https://imagizer.imageshack.com/v2/1024x768q90/922/RkFxdn.jpg
https://imagizer.imageshack.com/v2/1024x768q90/922/y2DQ0T.jpg
Followed by a small piece of fillet steak, from our local butcher, cooked on the charcoal grill and topped with a fresh-herb butter (essentially herbs de Provence with a touch of chilli), all from our garden, and served with some creamy garlic mushrooms and 'Petit Pois Provençal':
https://imagizer.imageshack.com/v2/1024x768q90/924/g7c4Qs.jpg
https://imagizer.imageshack.com/v2/1024x768q90/923/YiyqKJ.jpg
The steak was fab, but a loving close-up is called for, of the also (rather delicious) veggie accompaniments:

One of the advantages of lockdown is Del being at home, so she can cook like that... She's been enjoying it too, as she can also eat fresh, home-cooked food (whilst we're spending more time together), relaxing and enjoying a few glasses of vino, instead of her eating some processed shite at work from the staff canteen!!
Marco.
freezer refilled by donald russell, full to the very top... a dozen or so soups, some spags and some fish and potato sides. great as i was out of soups

looks to be fine. one of my favs.. salt is just visible as the fish is nice n dry.
So, I laid my hands on some fresh yeast the other day.
So I have made some yeast balls with it and freeze them.
You take a ball out when you need one and hopefully it lives from suspended animation. Doesn't always work but usually does.
Use double the flour to the yeast and just flake it together like pastry. Then pour it into a bit of cling film and scrunch up. Then seal in a zip lock in freezer.

I've only ever had Lorne sausage once when a friend made stovies for me. Bloody lovely, lots of butter and white pepper.

Going to try my hand at cooking a small pork loin joint in the Ninja from frozen today.
I've done a few in the Foodi (not frozen) and they've turned out perfect, with fabulous cracking. I just used the grill at the end for that.
Can either air fry or pressure cook the meat, although i preferred pressure cooking it.
Might do another today.
Yeah, i sear the sides then pressure cook for about 40 mins. Then air crisp it.. NOT FROM FROZEN , JOINT WISE THO.. it might work but id be tempted to defrost in microwave first
Foodi pork (from frozen). This was a rind free joint unfortunately. Pressure cooked it first, dried it a little, oiled it up then browned it with air crisper.

last time i had a pie there was a lot of gravy left but not this time, and i wanted to try cooking the roll
Ah I see... I'd just use the potatoes to mop up any gravy:)
I'm having steak pie with mash tonight, and always pour lashings of lovely gravy over the mash... Has to be done!:D
Do you like mashed potato? I don't mean packet cack, of course. I don't see you eating it much.
Marco.
sometimes yeah, but for one its a bit trickier to do.. the packet stuff is easier tbh...not as good tho.. i get good stuff from the states so its better than normal
Yeah, I get for you why it'd be trickier, but there's *nothing* to beat homemade mash. Packet stuff, no matter how 'good', always tastes processed in comparison, plus Del always makes it with fresh butter and touch of cream:)
Marco.

You can't always mop up all the gravy with mash, so a roll becomes essential for the elusive bits..:trust:

Agreed - that looks fab. Obviously I’d have added some chicken as vegetarianism is against my principles.

If I were to add meat, and keep the dish authentic, in the Tuscan tradition, it would be some wild boar.
Marco.
Marco,
You veggie?
is it your choice to be vegetarian?
Serious question, as your more than familiar with the brown sausage n sauce.
Lol - what made you think I was veggie? :D
You not been payin' propa attention here, boy!:spank::eyebrows:

Del's veggie, so my meals always contain plenty of fresh veg. I also love *good* [read as fresh, tasty and homemade] veggie food. Even when I have pasta, I prefer a tomato sauce to a meat one.
I love pretty much all veg, and so am quite happy to eat it, and nice salads. Probably 2-3 of my weekly meals are veggie:)
Marco.

I know it's just a ready meal, but keep it as AUTHENTIC as possible!
Chapatis are fantastic things, done well, as they have a lovely 'burned charcoal' flavour, when done in a proper Tandoor. Poppadoms are ALL about what dips you have with them - the spicier the better!

I'll give you chapatis, but with Indian mint sauce or lime pickle though, mango chutney's like marmalade.

not into those... i could have steamed some petit pois and carrots but decided there was plenty there. lemon on the fish and some hp low salt
Not really a Scottish thing either is it, Granty? At least, when I lived in Scotland there wasn't much love for mushy peas... Even going back to when my old man had chippies, he didn't sell mushy peas, and wasn't asked for them either.
It's a bit like the fish situation, where down here cod is (sadly) the fish of choice in chip shops, whereas (IMO, the much superior haddock), or whiting, is served in Scotland:)
Marco.

wife always preferred marrowfat or processed peas. I like garden ones, especially raw
Yeah, you know what I mean though, unless things have changed since I was last up, you don't really see mushy peas in Scottish chippies... Yes or no?
Personally, I don't 'do' tinned peas or indeed, sweetcorn aside (and occasionally Puy lentils), any tinned veg. So usually only good quality frozen peas, or fresh if they're in season and decent. Quite enjoy de-podding them! Then steam/boil them and serve simply with some melted butter [and I mean BUTTER, not marge shite] and freshly-ground black pepper on top... Noice:)
Marco.

Personally, I don't 'do' tinned peas, or sweetcorn aside, any tinned veg. So usually only good quality frozen peas, or fresh if they're in season and any good. Quite enjoy de-podding them! Then serve them simply with some melted butter [and I mean BUTTER, not marge shite) on top.
Marco.
trad chippies, no.. some of the more mixed ones that do pizza, kebabs etc often carry mushy peas.. a few pubs do them now too
Yeah, that's what I thought. I wouldn't touch the latter [plastic kebab and pizza shops] with a bargepole. Defo not my thing.
Marco.
Soup again.. Thick chicken..
Well thick enough to get turned into soup anyways.. [emoji23] https://uploads.tapatalk-cdn.com/20200616/67bd90caaa30e5fc3a2cec4e611341b0.jpg

Lovely stuff guys! Glad to see everyone eating quality nosh!
Did a nice Pulled Brisket Chilli the other day. Slow cooked for about 7 hours with a bunch of quality chillies used (Ancho, Guajillo and Chipotles in Adobo) together with some lovely additions like pimenton and 90% dark chocolate. Needed some fresh guacamole to temper the heat.

Today’s fare for a gloriously hot day...
Some Chorizo Tortilla with garlic prawns and a little tomato and avocado salad.

Great looking food & good photography. Do you use the spicy chorizo or just the normal variety?

Thanks. Occurred to me after I'd put it in the oven that this would have been an ideal dish to cook in the Ninja. Next time.

Took a flyer at Jalapeño snd Cheddar Sourdough this morning.
Pretty pleased apart from a bit of a disaster getting it out of the banneton (will use an oiled bowl next time).
I’m not gonna lie, it tastes bloody good. [emoji13]

Cheesy fries yum!
Carp is not a common UK dish - I tried it once (baked I recall) and it was horrid - fishy cotton wool - but perhaps fried works better...?
I'm with Roy though, the Cheesy chips look good!

Just cooked a full English for brunch - Father’s day but also Billy’s 8th Birthday, and he does love a fry up!

Fried is delicious to my taste at least.
But the majority of this restaurant visitors choose the carp as well. There is a fishpond so the carp is fresh.
And the chips are real and fresh, not frozen. Really tasty.
