Funny been eating a bit of fried chicken recently.

Emporer Justinius method.

Get two chicken breasts. Pound flat to tenderise. Liberally salt and pepper and press it into the breast. Coat with plain flour, dip in beaten egg and dump into the stuff in the photo. Press it in.

Shallow fry in groundnut oil until it looks nicely brown. It will be cooked when the crust looks golden.

I find this superior to any spice mixes I have tried in the crumb. Maybe that's just me but the wife loves it too.

Use groundnut as it doesn't stink and tastes wonderfully clean.

Unfortunately chicken breasts vary. We had some Duchy breasts we paid a fortune for recently and they were just tough shite. But when it's good fried chicken done well IS amazing.

Breast of chicken doesn't do it for me though with fried chicken - ya need BONES and wings to sook on!:D Even, on the rare occasions I have a KFC, it's always the 'Original recipe chicken' I go for, never breast, but each to his or her own:cool:

I just think it's very important for you to get back to the same mentality you had towards shopping before this pandemic, otherwise it'll impact negatively on your overall well-being. I'm only mentioning it because I care and want to see you thrive, rather than the opposite!:)

Ok, lunch today... To start a simple Salad de Tomates (from a recipe by Raymond Blanc), using fresh vine tomatoes, topped with chopped shallots and fresh basil leaves, cracked black pepper, and a homemade classic vinaigrette:

Followed by a small piece of fillet steak, from our local butcher, cooked on the charcoal grill and topped with a fresh-herb butter (essentially herbs de Provence with a touch of chilli), all from our garden, and served with some creamy garlic mushrooms and 'Petit Pois Provençal':

So, I laid my hands on some fresh yeast the other day.

So I have made some yeast balls with it and freeze them.
You take a ball out when you need one and hopefully it lives from suspended animation. Doesn't always work but usually does.
Use double the flour to the yeast and just flake it together like pastry. Then pour it into a bit of cling film and scrunch up. Then seal in a zip lock in freezer.

I've done a few in the Foodi (not frozen) and they've turned out perfect, with fabulous cracking. I just used the grill at the end for that.
Can either air fry or pressure cook the meat, although i preferred pressure cooking it.
Might do another today.

Yeah, i sear the sides then pressure cook for about 40 mins. Then air crisp it.. NOT FROM FROZEN , JOINT WISE THO.. it might work but id be tempted to defrost in microwave first

Foodi pork (from frozen). This was a rind free joint unfortunately. Pressure cooked it first, dried it a little, oiled it up then browned it with air crisper.

i tried russells mash recently.. it was good and made with cream and butter, but was just a bit sloppy. i like mine firm :eyebrows:

Del's veggie, so my meals always contain plenty of fresh veg. I also love *good* [read as fresh, tasty and homemade] veggie food. Even when I have pasta, I prefer a tomato sauce to a meat one.

I love pretty much all veg, and so am quite happy to eat it, and nice salads. Probably 2-3 of my weekly meals are veggie:)

Chapatis are fantastic things, done well, as they have a lovely 'burned charcoal' flavour, when done in a proper Tandoor. Poppadoms are ALL about what dips you have with them - the spicier the better!

russell's soups are all very good although they all need a little hot water in as they are too thick for my taste... almost like a goulash lol. i just pump some water out of the coffee machine.. from the noozle:D

Not really a Scottish thing either is it, Granty? At least, when I lived in Scotland there wasn't much love for mushy peas... Even going back to when my old man had chippies, he didn't sell mushy peas, and wasn't asked for them either.

It's a bit like the fish situation, where down here cod is (sadly) the fish of choice in chip shops, whereas (IMO, the much superior haddock), or whiting, is served in Scotland:)

Personally, I don't 'do' tinned peas or indeed, sweetcorn aside (and occasionally Puy lentils), any tinned veg. So usually only good quality frozen peas, or fresh if they're in season and decent. Quite enjoy de-podding them! Then steam/boil them and serve simply with some melted butter [and I mean BUTTER, not marge shite] and freshly-ground black pepper on top... Noice:)

trad chippies, no.. some of the more mixed ones that do pizza, kebabs etc often carry mushy peas.. a few pubs do them now too

Did a nice Pulled Brisket Chilli the other day. Slow cooked for about 7 hours with a bunch of quality chillies used (Ancho, Guajillo and Chipotles in Adobo) together with some lovely additions like pimenton and 90% dark chocolate. Needed some fresh guacamole to temper the heat.

Fried is delicious to my taste at least.
But the majority of this restaurant visitors choose the carp as well. There is a fishpond so the carp is fresh.
And the chips are real and fresh, not frozen. Really tasty.
