Guinea fowl with wild mushrooms cooked in red wine and chicken stock, its rather nice.Mashed potato and cavelo nero on the side makes for hearty autumn dinner, alongside a bottle of beau.

Does look a nice kebab Grant, sometimes you just can’t beat a mucky takeaway! I would have had to have at least a handful of chips at home, although of course 30 years ago on the way home from a club at 2am I would just have had the kebab, woken up in someone’s garden several hours later with congealed lamb fat on my shoes and trousers, and chilli sauce on my shirt!

We take it in turns to choose Saturday night dinner - this week was my choice so we had fillet steak with all the trimmings, I decided rather too late to top mine with some of Mrs Temple’s Binham Blue - one of my favourite blue cheeses, from Norfolk. Tamzin handled the after dinner coffees! (No marshmallows were harmed in the production of said beverages!)

Feeling lazy today, so went out to our favourite local pizzeria.

Lightly beechwood-smoked spicy salami, organic tomato, mozzarella, caramelised red onion, chilli oil and fresh basil pizza. With a roasted butternut squash, grilled artichoke, roasted baby tomatoes, goat's cheese, roasted walnut and mixed leaf salad on the side.

Glass of Tenuta Normanno; a Sicilian wine using exclusively Nero d'Avola grape. 12.5% ABV.

Gonna make a Tikka, well I've part made it.
Think I will make a sausage pasta tomorrow.

Cooked up first in oil in fry pan then moved to the air frier to finish them off.

Using up some leftovers - so a bit of an intercontinental "mash up":

Spirali pasta (Italy), Falafels (Middle East), roasted grape tomatoes and onions, with green beans and brocolli spiced up with ginger and chilli (West African).

Washed down with a glass of 2020 Gallo Family rosé. White Zinfandel grape, 8% ABV (California, USA)

A Braeburn apple for dessert (UK)

Cooked a big bit of roast beef in the foodi on pressure. 70 mins on high and then 35 mins slow release. I used a Greek politico marinade as the sauce to cool it in. They impart a superb flavour. Just add a packet to a little hottish water and it'll thin down as its a paste.
Meat is superbly tender and tasty.

Vegetarian night - Fliss made a Pithivier (beetroot, onion, garlic, lentils, butternut squash, cashew nuts and spinach in puff pastry) very tasty.
I plan to have some cold tomorrow with Feta and tomato salad :)

Not sure how long they’ve been running it, but it could easily still be in the 1960’s - they only take cash, for example! (It was only after COVID hit that they stopped using newspaper for the outer wrapping!) One guy I was talking to in the queue does a 38 mile round trip as he says they are the best in Suffolk. Certainly the best we’ve found so far, and only an 11 mile round trip for me!

Seems to be the way restaurants serve it these days &, to be fair, the fish wasn't 'dripping in grease'. Should have made do with the Happy Haddock in the High Street but fancied wine with it.

Honestly don’t remember ever eating a burger not in a bun with all the trimmings, which is of course why I’m such a lard ass! Rarely have HP sauce on anything which is actually strange because I really like it! Anyway, looked a good dinner. :thumbsup:

a bit like myself. if i make it, i cant be bothered with all the palaver etc, but i do like scoffing lean and tender roast beef too and am inclined to pick at it until it is no more:D
oddly im finding this more and more that once ive went to trouble of making a nice meal from sratch, i cant be arsed eating it :scratch:

I know what you mean. When I lived on my own dinner virtually every night was a ham sandwich and a bottle of red. :lol: girlfriend at the time said if I died she would get me a coffin made that looked like a sandwich! I might have to join you in a dram later, I know it’s a “school night” but been one of those non-stop days. :)

Lot of work for a week night, but on the plus side all four of us had the same (I nearly always end up having to cook three different dinners, one for each of the kids and one for me and my wife.) Anyway, chilli con carne tacos, cheated with the salsa and sour cream and chive dips but for some reason I really love making guacamole from scratch. There was a lot of leftovers for lunches. :)

Sometimes really spicy is just the job. Be wary of anything with Carolina Reaper chillis in, they are ridiculously hot.

always feel too much heat destroys flavour, and your taste buds, and can hide bad food too. i cant take as hot as i did(was never close to vindaloo tho). tikka the way i make it is fine for me now; its a little warmer than normal but not much. I like the flavours to come through.
I remember once eating a very hot pizza down in a American grill in Blackpool many years ago and i hit some chillis that froze my brain for 20 mins:eek:

That is/was the whole point. The hotter the climate, the quicker meat will spoil so the spicier the food has to be to disguise the putrefaction. That was before people had access to fridges.

In the Indian subcontinent the curries get hotter as you go south. They are quite mild in the north and in Nepal, but are positively 'radio active' in Kerala and in Sri Lanka.

Like you I can't eat hot curries; never could - only Tikka Masala or Biryanis for me.

Used to really enjoy a donner with loads of salad but the quality of the 'mystery meat' took a dive about a year ago round here. I keep trying them again hoping things might have improved but they don't, the last one I bought went straight in the bin, smelt of drains when I unwrapped it, very appetising :spew:

most of ones i tried in england/wales were awful tbh, but that was years ago. a shop in darlington was good tho. many good doner shops here, the best is probably the 4 in 1 in bathgate. although the chip shop, valentes is good too, armadale i think.

Oxtail stew, trying to perfect it, any tips? I use less carrots as it makes it too sweet, more onion as it brings out meaty flavour, a single star anise - a tip from a chef recipe I read, pretty basic really, lowish heat - 3 hours, I think first off making a tasty beef stock is important, but not that easy, as butchers don;t realyl sell beef bones, only marrow bones, which don;t have enough meat scraps on them to make a tasty stock. Made 3 times now, last one had the best flavour, but too much fat, hard really with this cut, its only a freaking tail! Yet its still about £10 - £15 a kilo.

Buy or make up some nice beef stock. Add wine, herbs and veg. Chopped oxtail, maybe tomatoes and salt n pepper. Celery maybe. Whatever you fancy cook it long and slow. Stock you can buy or even use good quality cubes.

Yeh used a stick or two, have to be careful with carrots as they make it too sweet. Just trying to perfect making beef stock today, not quite as straight forward as it sounds. Trying to get beef bones is the hardest bit.

Beef shin today, with copious amounts of small onions left whole, cinnamon, red wine, no carrot or celery, see how it tastes tomorrow. Found a butcher in Brighton where all the beef on display was nice and dark, well marbled, they have beef bones too, though I had to buy some chuck steak to add some meat to it, as bones alone don;t yield enough flavour, this stock can end up being quite expensive. I fancy pigs trotters next chinese style.

Umm - looks good. I also like (ham or bacon) carbonara, though some can find it 'cloying'. But no matter - and a nice 'earthy' rioja is perfect IMO. :)

thats way i did it when i was younger. i even cooked turkey early, sliced it up and refroze it ready to be heated up in stock on big day. it was much juicier that way too. also less work on big day.
i will be having a ready meal on my own this year. daughter might bring me a platful tho later on, so i might get a turkey meal yet:eyebrows:

Got a turkey crown for those that want it, don't like it much myself, peppered beef joint & a nice big loin of pork with loads of crackling on (which will be my main meat of choice). There'll also be plenty of pigs in blankets as the youngsters seem to prefer them over 'proper' meat :)

I use full sized cumberland sausages and wrap them in unsmoked back bacon, there'll be 36 this year.

Tonight's meal was a Bouillon of smoked pork, potato, pasta, onion, ginger and orange, with carrot, green beans and brocolli.

A couple of satsumas for dessert. Washed down with a glass of Gallo White Zinfandel Rosé.

No pics as I don't have my camera with me, but I have posted pics of similar a few pages back

I really am not that fond of a roast. Well, actually that's not true thinking about it, I'm not fond of vegetables, other than sprouts... Pigs in Blankets are the absolute bomb, as is proper stuffing balls with sausage meat, turkey ok but I prefer chicken. We too have 10 this year, will be fun. Except I'll probably be pissed on sherry by 11am prepping the sprouts...

It's a great British Sunday tradition to be served up with a plate of food the size of the Matterhorn, my Mum (bless her) had no concept of 'portion control' and that's also true of my partner (although I have trained her to tone it down a bit). You felt like a competitive eater sometimes...

I quite fancied having goose for Christmas lunch - I have never eaten it, so I thought it was about time that I tried :)

I went to put in my order at our local butcher but unfortunately there seems to be a shortage of goose. He is going to try but I have asked for a turkey crown if he can't get the goose. I am getting quite excited about getting in supplies - hunter gatherer ?
At the moment: goose or turkey crown, Suffolk dry cure bacon, pork chipolata sausages, Venison and herb sausages, smoked ham for cooking Christmas Eve

Going to look for a decent Pinot Noir to go with the lunch, pitty Marco's not about to give a recommendation (hope he's well).
Home brew plum porter, lager and "Yorkshire ale" in the log cabin - nicely chilled at the moment :)
Black Bomber cheddar on order from butcher, just want to get some Brie, Compte and possibly a Stichleton Blue.

Apart from fresh vegetables (and nuts for youngest daughters nut roast), job is almost done and stuff any lockdowns :)

That has always put me off; but I'm in my sixties and just thought "to Hell with it" about time that I gave it a go.

Funny thing is, people always talk about turkey being too dry but Fliss has always managed to make it quite palatable :drool:

Reheat turkey sliced in stock in oven on day and it will be super tender and juicy with good flavour.
I and my mother before have been doing it this way for 70 odd years. Daughter does it now.
You can do sausage meat this way too. Steam it in a bowl for a few hrs. You'll get rid of the worst of fat, then when cold slice it up.
Certainly makes Xmas day a lot easier.

Agreed - but then I'm not that keen on roast chicken either (unless it is cold and with a salad). Actually, come to think of it, having tried most game and other bird: pheasant, plover, partridge, turkey, quail, pigeon and puffin, I'd much rather eat red meat. The only exception is ostrich which I do like.

Went to the National Trust site at Sutton Hoo today for a walk with the dog and my first opportunity to climb the new viewing platform which was finally opened after COVID disruption in September. Very impressive view of the burial ground one way and then the opposite way a view of Woodbridge. Booked us in to The Wilford Bridge which we have only been to once before for a quick lunch and was very good.

I had their Christmas Chicken Burger - chicken breast with pigs in blankets, melted Brie and cranberry sauce. And, of course Barry, chips! It was as fabulous as it sounds, really nice.

My kids are eternally grateful for you introducing me to the Ninja Foodi, Grant!

But it’s about all I use it for, apart from the odd garlic lemon and rosemary chicken which is so quick and awesome. So I have asked Santa that if I am on the nice list this year he could bring me a Ninja Foodi recipe book for Christmas. :)

Sounds good Barry. I managed to make a decent pate, but my plans for 'Guinea fowl filo pastry and honey vinaigrette' fell apart as I realised I'd left it too late as there was fair bit of prep involved, including deboning the Guinea fowl. So I just lopped off a breast. gonna pan fry it with marsala and shooms, cream. Try making the elaborate original dish for boxing day!

Thanks Grant & Barry. When I went to cook today I found the honey glazed parsnips I’d left in the oven and forgotten to serve! :doh:

The wine was really really good - I think Tesco, normally £20 but this week was a “Clubcard Price” at £15 - I’ll be going back for more, that’s for sure.

Tonight was leftovers and random things from the fridge - Southern fried chicken, the obligatory bubble & squeak and a stuffed mushroom. Was “interesting” I guess, and avoided food going in the bin which is one of my pet hates.
