Hanger steak is sometimes called butchers steak as they kept it for themselves... It hangs from the diaphragm of the cow along the plate, or lower belly. Because this muscle does very little work, it's extremely tender and packed with beef flavor.

lovely steak. i had bought 4 but think they are all gone. good value.

a pukka microwave steak pie and mash(microwaved too) a little basic but these pies are quite good.. hold their shape and taste better than many expensive ones.

It's not as thoughtless as it might appear. My partner is not an enthusiastic wine drinker, and will normally just have a small amount to keep me company, but will quite often just settle for water. A glass is alway provided in case she does want to drink some wine.

It wasn't as good as it looked, an experiment with the ninja foodi that didn't quite work out.

I seem to have put on half a stone and that's without calories from alcohol as I haven't been drinking, too many chocs & bespoke very rich cakes, nice though :D

got a marinaded(injected) joint of brisket in. used this with thyme and garlic stock added to thin it a little.

Plus, as you know, I like my gravies and sauces (don't really like 'dry' meat), which compliment and enhance the flavour of the meat itself. All that needs now mate, is some nice roasties and veg, with lashing of your lovely (hot) gravy poured over the top...

yup, the gravy juice can be thickened as and when. it keeps better this way and freezes better if i decide to freeze any.

It was a quick belly filling exercise, I'd been feeling off colour all day and hadn't eaten since last night. There were four eggs but only three and half fitted on the plate, other half was consumed directly from the frying pan. Oh and I feel much better :)

Well it looks like I ordered the catering size by accident.
It's huge. That will keep a hundred Italians going for life doh.

Took a nice bit of fresh salmon out of freezer and am sous vide cooking it.
This is Loch Duart salmon. Best farmed stuff by a mile. This is used in the top restaurants and supplied by Campbell's.

Tomato and pepper sauce(lloyd grossman) the old india herbs, meatballs i had in freezer i cooked before xmas and a little rough grated lactose free cheddar. Pasta was Di Ceccio tortiglioni cooked and coated in olive oil and sprinkled with rough ground black pepper.

Thanks, I actually washed it with boiling water after it finished cooking as it was quite starchy, it was basmati.

I went through a real infatuation with Japanese food from my late teens and early twenties.

There was very little by way of resources available then, I used to have to get on a train from Liverpool to either Manchester or London to find Japanese shops with ingredients like Kombu and Katsuobushi.

It’s fantastic that we can get ingredients now to try out pretty much anything that interests us.

I had been watching a lot of YT videos on Japanese ramen restaurants. Perplexed by their pork based stocks, I had to try something from "the source".

To a large extent I am surprised. I was expecting something far more spicy. This isn't that. It's just a very high quality pork bone stock, reduced by a lot.

The key is to know how much water to add as there are no decipherable instructions. I think I added about 15% too much water at a guess.

I wish such quality stocks were made here. There's nothing as good in the supermarkets I have found. Knorr liquid stocks are a joke by comparison.

I have 9 sachets left. It's not cheap and took about 6 weeks to arrive! About £1.50 per sachet.

I made the recipe for the ramen up with what I had on hand. For some reason I would say spring onions in this was wrong. Also, coriander would be, too.

Used shoulder of pork and it was bloody lovely.
Marinated for about 36 hours

Loads left over to use up.



Bet that was delicious, could eat the lot in one sitting though ;)

Roasted pork shoulder in tonkatsu sauce.

Seaweed, poached egg, ramen noodles, fried chestnut mushrooms, toasted black sesame, sesame oil, soy sauce, fresh chilli, spring onions etc etc.

Comfort Food Olympics Contender!

Pork, Cheese & Pickle Plait

500g 5% Fat Minced Pork
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Fresh Black Pepper
1 tsp Salt
1 tsp Mixed Herbs
2oz Diced Mature Cheddar
1 Tbsp Branston Pickle
¼ tsp freshly grated Nutmeg
Handful of breadcrumbs

Wrap it in Puff Pastry
Brush it with egg.

Stick it in the oven at 200C (180 fan) for 30 mins.

Serve it with chips, baked beans and Brown Sauce if you want to be a true Olympian [emoji4]

Oh yeah, he likes a ramen. Bought packs of noodles from the online chinese supermarket to top up the spend and get free postage ;). I usually just use plain egg noodles and add my own flavourings. These were quite spicy, better than vic for clearing your nose.

Bangers look good, Guy. Venison, done well, is one of my favourite meats. I too would've enjoyed them. My only criticism would be that as venison, by nature, is very lean, it can make sausages made from it a little dry, and I can see that from the pics.

Not in an unpleasant way though, but it's often the case with 'artisan' sausages, with a high-meat content, which is why cheaper ones are usually juicier (although rarely tastier), simply because of the higher fat and water content!;)

Ok, had this for lunch today, but as an 'arty' shot, and to showcase the chicken, I decided not to 'adulterate' the plate with any of its accompaniments [which for the record were steamed fine green beans, caramelised baby carrots with lemon and thyme, and buttery mashed potatoes]...

So here we have pan-fried (initially to colour the meat), then oven-roasted, Poulet de Bresse, boned out and stuffed with Portobello mushrooms and Comte cheese, in a sauce of fresh cèpes, white wine and cream, sprinkled with fresh parsley:

The dish was inspired by a meal I enjoyed with Del at a small family-owned restaurant in the Jura mountains of France.

And washed down by, not a French wine, but an Italian one - a Grignolino d'Asti, which is very light in colour for a red wine, but also fruity and flavourful, with just the right amount of acidity, in order to cut through the richness of the cream sauce, yet not overpower the delicate flavour of this finest of poultry:

Yes, you are right about venison being lean/potentially dry (I also grill sausages/bacon - Benecol on the toast, as I tend to store cholesterol quite effectively :().
But the flavour was absolutely fantastic; like you, venison is one of my favourite meats.

Fliss used some of the sausages to add some flavour to turkey mince (along with garlic, red wine, onion and tomato for a basic meat sauce) for a lasagne yesterday evening (no photo's though:lol:) - turned out bloody marvellous.

Not cheap, but it's pretty much the best chicken you'll eat, and a totally different animal from anything found in a supermarket, in terms of texture and flavour, rather like chickens used to taste about 30 years ago, before the intensive farming methods we have now ruined quality (in order to sate our desire for 'cheapest is best'), and when it was eaten as a treat, for the likes of Sunday lunch, not all the time as now, and almost abused like 'junk food'.

With poultry, even more than other meats, you really do get what you pay for - and then it's simply about treating it and preparing it with the respect it deserves. I've always loved nice sauces with all meats, as my mum was a superb cook and very good at them, plus was used to regularly travelling to France, from the early 70s onwards, and sampling the glories of French cuisine - and fortunately Del's even better at them than she was!:)

As for the restaurant - would you come then, lol? Might happen at some point later, so it's still a possible plan, but we'll see what the future holds:cool:

Cheers Grant, it was bloody lovely. Cooked it at s fairly low temperature with foil cover do it cooked the pasta really well. Always make sure it’s quote a liquid sauce and let the pasta cook properly (that’s what my sister taught me, she makes the best lasagne I’ve ever tasted).

Anyway, had this for a simple lunch...

IMO, these are about the best fresh (vacuum-sealed) Tortelloni, available from a UK supermarket, in this case Lidl... Really nice quality pasta and filling, and which can handle a bit of heat (without turning all sloppy), which I find is generally the case with fresh pasta from supermarkets, even the 'poshest' stuff, usually because it's too 'wet'.

In this case served simply with a classic Tuscan fresh sage (from our garden) and butter sauce:

Lol - no worries... The sauce is called 'Burro e salvia' (sage and butter). It's very popular around Tuscany. Classic recipe here: https://www.bigoven.com/recipe/tortellini-burro-e-salvia/194143

It's a sauce that showcases the pasta (which is how it's supposed to be), not the other way round, and which you see so often in supposedly 'Italian' restaurants here, with a plateful of sauce and hardly any pasta, especially with lasagne!:rolleyes:

You have to use the right butter though, not the British kind, as it's too rich, but something like President or Beurre D'Isigny. We use much cheaper stuff (but just as good quality) from our local Polish supermarket. Also, not too much, just a little to coat the pasta and give the sage something to cling to - last thing you want is the pasta to be swimming in butter (fat)!

Continental butter is lighter in colour and texture/less salty, and has a 'nuttier' flavour, which works better in some dishes, the pasta dish above being a case in point:)

Ursula whipped the pan out as well last night and made pancakes - we went with lemon and sugar then Nutella and sliced banana.
