Cheating and lazy special tonight...

Bought Focaccia mix tarted up with a bit of olive and rosemary, to accompany..

A one-tray roasting of chicken snd veg with a Mediterranean flavour (or Moroccan even). Chop up all your veggies to roughly the same size. (Prevook potato in microwave to save time snd make sure it cooks). Coat with harissa, salt and pepper, olive oil and whatever herb takes your fancy.

Stick it in the oven at 180 for about 40 mins.

Tuck in and mop up the juices with the Focaccia.

Wasn’t a bad meal for practically zero effort (I have a crippling back injury at moment, standing minutes are limited).

This was juicy enough me, there was plenty more juice in the pan. Veggies tasted fab, so did the chicken thighs. Tasty, warm, comfort food.

Toss in toasted sesame oil when serving naked like that for some added flavour. Well, at least try and see if you like:)

Managed to get my shit together enough to make some sourdough yesterday so I’ve made some sourdough rolls for no particular reason.

Also making Carnitas - Mexican dish of Boneless Shoulder of Pork, rubbed with salt, pepper, oregano and cumin and then slow cooked with onion, garlic, jalapeño and the juice of two oranges.

This dish is a gift that keeps on giving....

Once cooked for about eight hours, the pork is shredded with two forks then cooked (on one side only) in a hot frying pan or griddle.

What you end up with is tender, marinated pork, crisp on one side and soft and chewy on the other.
Perfect for stuffing into tacos or anything else that takes your fancy.

I have tried making French bread a few times but it has never been good.

It seems very hard to do well. Just look on YouTube - most efforts I would mark as a fail aesthetically.

One 75% 25% white over wholemeal for me, and the opposite for my parents..

Pissed as a newt and a Global may result in a loss of digits and other parts. Be careful!

Was going to do leak & potato soup but I had a ham I had baked that wasn't getting eaten.

So sweated some leaks, carrots and onion in butter them made a roux and added chicken stock, garlic and milk. Folded in some parmesan, ham and heaps of black pepper. Added rosti on top and baked for 50 minutes.

Very good. Not something I'd usually do.

These are the meatballs going to be cooked in a tomato sauce.

Pork, breadcrumbs, pecorino, red pesto, Italian salami with fennel, fresh basil, egg, salt and black pepper. Rolled in fine semolina then baked.

Thanks guys! I hasten to add it was for more than one person [emoji4]. The only naughty bits in it were chorizo, the rest was onion, red and green pepper, tomatoes from the garden, chipotle in adobo and eggs.

Yeah, I think the principle is quite a common one, not just in Hispanic cooking. The only thing that made mine Mexican was the inclusion of Chipotle in Adobo and a tablespoon of Masa Harina to thicken things up before serving. Have seen similar things with Middle Eastern ingredients too. [emoji4]

If so top job, I remember being impressed with the chap in there actually knowing which particular cows the individual joints came from. I used to use the little shop quite often when my mum lived in Manningtree, she really liked shopping there.

I have a new mission set by a Deli in Clifton, Bristol. I need to beat their onion bahjis. Because they are incredible. Best I have tasted in my life.

If I can beat them I will count it as a serious achievement;)

On a cheap pizza tray from Asda and in an electric oven at 200C (which wasn't really hot enough).

Excellent then.

Suggest you use YouTube and try cooking in a pan after some study. You can get a cast iron pan friggin' hot so the base comes out much closer to a pizza oven.

BTW I went on a pizza quest a while back. Then I gave up. Doing so saved me at least £500 on a pizza oven, though you can make them obviously.

Very nice, but I am not happy with the amount of spice used. More next time, particularly in the heat department.

Texture is great.

I copied this without the fresh coriander. She definitely doesn't like spicy bahjis.

Haha, I do at the moment as I can’t drive snd therefore have to work from home anyway. Can’t really fo much of anything but lie down or stand up and cook for now as I’m still waiting for appointment with specialist for my back/stump.

It’s just a mix of 5 & 7% fat Turkey Mince with added Smoked Paprika, Garlic Powder and Salt and Black Pepper. Used the Sausage Stuffing attachment on my Kitchenaid (haven’t use it for ages) to fill some Hog Casing I bought online.

A Bigham's ham hock, chicken and leek pie with mash and a leek/courgette sauté.

Made a gravy with a chicken stock cube, curry power and cornflour, which was good will make again.

That pie I would say was below par for Bigham's.

I’ve been using these guys for fish recently on a few recommendations as I'm cutting down on the amount of red meat I consume.
If one signs up to their mailing list, they’ll let you know when they’ve been out and then will deliver one of their catch of the day fish boxes for £25. They also do a veg box from local produce.
There’s no guarantee what you’ll get as that’s out of their hands, but I’ve tried some stuff I wouldn’t have usually bought and its been great.
I’m quite a fan of skate wings for example, which is something I’d never thought of buying.

Hee hee. I think you could still have your side tbh. The amount of chutney in these is just enough so they don’t feel too ‘dry’ if you see what I mean? The sweet note just balances things a bit better I think.

Denby "Greenwich" they belonged to my "in laws", part of an offer or something years ago? they have lasted really well and are great for everyday use.

I am quite fussy about which fish I eat (real aversion to bones, following childhood experience!), so Cod,Haddock, Salmon, Monkfish are all great imo. Plaice is great if well filleted.
Monkfish are strange looking, but meat is boneless, firm texture and very slightly sweet. Well worth getting.

Can you guys help me figure out how to roast vegetables well? They always turn out horrible for me... following online instructions has gone no where for me.

The last thing I tried was cooking at 250, but to get them soft at all it'd take untold hours. At 1.5-2 hours I called it and turned up the temp and then they got dried out. When I try the normal like 375-425 they get shriveled before they seem done... :scratch:

could par boil them first i guess. thats what i do with potatoes. boil for about 4/5 mins.. then drain and put into a tray with hot oil.. then turn them and baste them regularly. other veg i guess could be adapted too. but there are plenty better cooks here than me

Do you mean root vegetables? if so no real idea apart from parsnips- only take about 30/40 minutes at 190c (I tend to arrange them around a roasting chicken, as they get coated in oil/juices that way).

Otherwise we do tomato/sweet peppers/mushrooms/onion drizzled with olive oil and cloves of garlic for about half an hour at 200c, bit of a grind of black pepper and keep an eye on them. spoon hot olive oil infused with the garlic (from the baking tray) about half way through. We also put a few sprigs of Rosemary in, but don't eat them.

I still remember nagging my brother the first time I heated up a tin of tomato soup "is it ready yet?" (I think I was about 5 or 6). He gave me the best bit of advice I ever had about cooking - when you think it is ready to eat, it probably is:)

I saw a tip from Nadia ,the Indian lady on BBC.
She had a jar of sun dried tomatoes , and she put some of the oil (maybe a tablespoon or so ,into a bag with some herbs ,salt and pepper ,and some sweet chilli sauce ,(I use Mango chutney ) and threw the carrots chunks and potatoes parsnips or whatever , and massaged it in ,then tipped them out on a tray and roasted them at 160-170 for a hour or 2 ,checking they dont dry out !

Yes, root vegetables primarily. But I often throw some onion in too.

I think the par boil makes a lot of sense. The best roasted carrots I ever had where soft all the way through, but no where near mush... a restaurant in town makes those. And aside from that the closest consistency I can think of is in dishes are that fairly wet.

This was using up leftover pasta (Rigatoni) and other bits in the fridge.

Haven’t got a ‘cooked’ photo but it was bloody yum.

A variation on Pasta Alla Siciliana Al Forno,
Rigatoni with oven roasted aubergine and vegetarian meatballs in a tomato sauce, with added parmesan, black olives and mozzarella.

Baked in the oven for about 30 mins.

Actually yesterday's. Had spare tempura batter so marinaded chicken in soy, garlic and ginger then dumped it in the batter. That's after I made the onion rings.

Love tempura, so though the chicken was good+ I just think only tempura would have been better.

Good stuff... Burgers are funny in that the 'posh' ones can sometimes be disappointing, and the cheaper ones [but not the really shite variety] can be better and surprisingly good.

For me, it's all about the meat content, versus what else is inside, to 'bulk' them out (plus thickness) - and crucially getting that balance right! And from there, how they're cooked.

I'm not into 'rare' or even pinkish burgers [different with steaks] - I like them well cooked all the way through (but still nice and juicy), and also beautifully seared/caramelised on the outside:cool:

Plus, I also prefer mine on buns, with salad and relish, rather than just on a plate.

From around the middle of August? I guess as most food tends to have a darker hue it would stand out more on a lighter coloured background, I was using black plates (generally) before.

Ooh, don't remind me, must get back to the chemist for some more of that ointment, that was a sore one.

Nice, although I'm a brown sauce guy, or no sauce, and instead a fried egg on top, so that when biting into the bread the yolk squirts out and coats the bacon - lurvely!:D

Decided to cook that bacon.

So first a hot bath to get rid of all the white proteins etc. Then cook on stock til stock all but gone. So think of it as a big open sausage roll, with lovely light flaky, buttery pastry, but full of nicer and healthier stuff than sausage meat!;)

They were both lovely, although pic-wise, I should've taken a few shots of the flans sliced on a plate, as with both being close-ups, you can't really see what the pastry looked like.

Wagamama Sweet & Sour beef recipe from Ways With Noodles. I added mushrooms and used a lot more fresh garlic and ginger than prescribed. Made with nicely marbled sirloin steak.

The unchopped coriander pile was excellent just eaten by itself between mouthfuls.

One of the best things I have eaten in a long while.

Followed by Darjeeling with milk and sweet stuff:D

Haha no, I’ve been cooking since the age of about 12 though. Always had a keen interest in different cuisines such as Italian and Japanese.

Through the years I’ve picked up lots of useful advice and influences from my sister’s side (her hubby is Italian and she’s lived in Switzerland/France most of her life), and my friend Rob (who’s family and food culture is Basque), we’ve cooked side-by-side and shared ideas over the years.

I’ve read a lot of cookbooks over the years too, but generally do my own thing these days, picking up ideas from the internet and putting my own twist on things sometimes.

My own preferences are for ‘peasant food’ (the Italian “cucina povera”) as these tend to maximise taste and minimise waste; tried and tested through the years and free from needless extravagance and effort.

I just love food really, I suspect some of that is due to growing up and being around people who love food as well.

I’m definitely live to eat rather than eat to live [emoji4]

Made a Salmon and Spinach Pie tonight. Started with some pancetta and mixed veg, Salmon, Baby Leaf Spinach and a quick homemade white roux with flat leaf parsley, English mustard powder and Cheddar cheese.

Didn’t get a plated shot but there’s loads left so maybe next plateful. [emoji4]

The sad fact is, I don’t have any custard, enough milk to make any, or even better in this case, any ice-cream. I’m outraged! [emoji30][emoji13]

Will have to get some ice-cream tomorrow.

Well baked Cumberland sausages, King Eddie mash, Dijon and peas.

Looks average but that gravy and the sausages were A.

Used to have a dog called Dijon. Here he is on the right at a dog show coincidentally in France (Chatel-Guyon) a lifetime ago.
