Today's lunch - just a simple tuna, red onion and Borlotti bean salad, drizzled with extra-virgin olive oil and balsamic vinegar, with bread on the side to mop up the juice!

Ah righty... New one on me, mate. Borlotti beans are very common for me, as they're Italian, and tuna and Borlotti beans is a classic Italian dish. I've been eating it since the 70s!:)

Ok, for tea... Some Aberdeen Angus beef burgers (from Lidl), chargrilled on the BBQ, with Monteray Jack cheese, spicy homemade relish and fried onions, gherkins, lettuce and tomato, in brioche buns, served with a few chips:

Extraordinary quality and value from Lidl.... [Yes, I keep harping on about just how good some of their products are, especially anything from their 'Deluxe' range, and such great value, for GOOD reason. Hopefully one day it'll sink in!;)]

Totally agree with you Marco....the Lidl and Aldi deluxe ranges are brilliant. I had one of the best Cheddar cheeses from Aldi and I've tried a few.
Try the packs of chicken thighs in the chilled isle, £2.65 for between 6-8, gorgous.

Looks nice. Cottage pie though is just one of those things I'm not massively keen on, and so rarely eat. Yours looks great, though!:)

However, it's not really the weather for pies. For me, that's winter food. In this warm weather (currently 22C here), I'm more into nice salads/cold meats and lighter, less stodgy foods:cool:

No, but I've been enjoying loads of different salads recently, and the chicken schnitzel dish is really light and tasty! When it's 20C+, the last thing I feel for is some hot meat-filled pie, as nice as that can be...

No, they're hard boiled eggs. The Bavarian ham (which was very thinly sliced) & grated cheese both wanted using so I slung them on.

The bowl contains pasta, red onion, red & yellow peppers, vine tomatoes, cucumber & celery, dressed with extra virgin olive oil, fresh lime juice & freshly ground black pepper & rock salt.

Yeah, mine too... I got into the Italian version initially (Milanese - see here: http://resourcefulcook.com/recipes/view/mc9cq-chicken-alla-milanese), when my mum made it in the house, then had out in restaurants, and which is often served along with some spaghetti in a tomato sauce. I'm sure you've had that before:)

That's lovely, but there's something even nicer about the (simpler) Austrian version, which just hits the spot, and of course where veal, not chicken, is used traditionally.

The key is in using *very* finely ground fresh breadcrumbs, as that's what sticks to the meat best (using flour and egg yolk), along with a good frying pan-full of fresh oil (I like rapeseed, as it adds a slightly lighter touch than veg oil), and crucially, clarified butter, for frying. About 70/30 in favour of butter. The oil is simply to stop the butter from burning.

The use of clarified butter is *absolutely essential* for generating the right flavour/richness and 'puffing up' the coating mixture (also giving the finished dish more of an attractive golden appearance), which should be very well seasoned and contain a goodly dose of paprika!

Then serve either with some lovely creamy/buttery mashed potatoes, or fresh-egg noodles (spätzle), and as a nice added touch, a fried egg (with a runny yolk) goes really well on top! Takes no more than 30 mins to do:cool:

However, I'm a nightmare when I go out to restaurants (as is Del), as we have high standards, simply because we're used to eating well at home, so when something's not right, it just gets sent back, and we order something else from the menu that they should be able to get right. We also have a low tolerance threshold for shoddy service or ill-mannered/moody staff, and frequently won't pay (or ask for a discount) if something really wasn't right.

Receiving an apology is fine up to a point, but hitting them in the pocket is usually a much more effective way of 'encouraging' them to do better next time!

And we usually always give places a second chance, unless the experience was particularly dreadful. Brits though, are traditionally not very good at complaining. I should add, however, that we also regularly give compliments if the food is good, or exceptionally so, therefore it cuts both ways. If you're willing to criticise, then when it's deserved you should also be willing to praise!

Our pet hate though is when dishes are put on menus, under a certain description (so we picture in our mids what they should be like), and then arrive nothing like how they were described!:doh: Perhaps your average 'Joe Bloggs' wouldn't know the difference, and/or would put up with something clearly incorrect or inferior, but we do - and so don't!:nono:

That's why when we go out to eat we're fussy about where we go, as the standard of food must be at least as good as we enjoy at home, or hopefully better, otherwise there's no point and we're simply wasting money...

Nothing worse (well I guess there is) than going to a restaurant and thinking "we do better at home". We do complain but make it clear we are not moaning at the staff, it's not usually their fault. We do complain but make it clear we are not moaning at the staff, it's not usually their fault. If a meal is naff, they are dead to me, I won't go again as I don't believe a good restaurant can have a bad day.

Well, the staff aren't cooking the food, so you can't blame them for that, but they're taking the orders and serving it, so I at least expect a friendly smile and overall pleasant demeanour. That's one of the reasons why we avoid large (city centre) establishments or chains, as the (often foreign) staff are usually on 'buttons an hour', and grumpy as hell! Not the relaxing, enjoyable experience we're looking for when we're dining out.

On the contrary, it's usually the opposite in small, family-run places, out with of large towns or cities, where owners often employ people from the local community, and who usually take great pride in their jobs and couldn't be more obliging or friendlier. The food also tends to be much better there too, so those are the types of places we tend to target, and are rarely disappointed:)

I disagree though on your statement that good restaurants can't have a bad day. At the end of the day, they're run by humans, and we can all have a bad day, sometimes for unpredictable reasons outside of our control. Remember that restaurants, just like any other business, rely on staff (kitchen and waiting) and suppliers, so if any part of that 'chain' breaks down, there's bound to be some sort of knock-on effect.

No, in my experience you often get to know more about a restaurant (or any business), and particularly the owner or manager, when assessing how they deal with complaints! If they deal with it well, and successfully address the issues caused from them having an off day, and make up for it by being much better, or faultless, next time, then they'll continue getting our business. That's why we generally always give second chances, as no-one is perfect!

And we've made some good friends/built up good relationships with restaurants over the years, and subsequently enjoyed superb food and service from them, by adopting that attitude:cool:

Because they're *so* thick, they resolutely refuse to cook right through to the middle, even on a red-hot BBQ, so best to press down and flatten them a bit (as that guy did), during the cooking process, as that will both speed things up and ensure that the meat is cooked all the way through:)

Surprised a man of your calibre hasn't heard of/was aware of white asparagus. It's a totally different animal to the green stuff, and considered by many [including me] as superior... Beautifully 'buttery' and creamy, and just gorgeous, lightly steamed and drizzled with butter and freshly-ground black pepper. Needed used up, so that's why we had it:)

It sounds like your barbecue is too hot - ‘low and slow’ for a thick chunk of loveliness like this!

That comes under the same sin as serving meat straight from the oven and not letting it rest for a while. Unless of course one wants to eat something with the consistency of shoe leather.

The skin on corn-fed chickens tends to be a little oilier than usual, and that combined with the rendered down fat from the Parma ham it was wrapped and roasted in, is the reason for the appearance of the gravy. Nothing to do with the meat not having been allowed to rest. It was as succulent as a very succulent thing, and falling off the bone:)

The other thing to bear in mind is that *that* is how Italians traditionally cook roast chicken: stuffed/infused with LOADS of fresh garlic and fresh herbs (particularly thyme and rosemary), rubbed with/marinated in olive oil, and highly seasoned - and crucially served with a rich (reduced down) gravy, made from a little beef stock (to add extra flavour and colour) along with the chicken's own natural juices, including from the skin, as it's all about maximising FLAVOUR....

No dry, peely-wally slices of nondescript breast meat [such as you could be eating cardboard, it would almost be as tasteless], covered in Bisto!:eyebrows:;) Anyway, it was gorgeous.

All the pics I've shown of the roast chicken dish, Jon, have displayed the gravy it was served with, and yes deliberately made that way, in the (Tuscan) Italian tradition.

If you were to visit the home of any Italian family, from Tuscany or around that area, for Sunday lunch, and roast chicken was being served, that's how it would look, although there would likely be less gravy, as I'm a bit of a sauce/gravy nut!:D

I HATE any kind of bland or boring food, lacking in flavour, as I've always been used to cooking with lots of herbs, garlic and/or spices, as we've always had them in our garden or bought them - going WAY back, and subsequently enjoyed eating really TASTY food. A lot of British cooking/food, IME, can be rather bland in comparison, and for me lacking in seasoning/flavour - ultimately though it's just what you're used to:)

The only difference with today's pics was that I skimmed off more of the 'oil' (still packed full of natural chicken flavour) from the gravy, so that more of the darker colour showed from the reduced-down stock, again all packed full of flavour from all the ingredients it was made with.

It's not meant to to look in any way smooth or 'refined', like a jus or traditional gravy:cool:

Home made pizza night for the family tonight in lieu of being able to get a takeaway. Here’s the kids constructing theirs:

Here’s mine pre-oven. Bread maker used to do the dough, then pasata, grated mozzarella, shredded chorizo and salami, spinach, olives, red onions, mushrooms crumbled Bingham Blue cheese, oregano, black pepper and Parmesan.

The end result? A “heart attack on a plate” but honestly one of the best pizzas I have ever had, and that includes dozens if not hundreds in Italy over the years! Absolutely “mouthgasmic” if I do say so myself. :)

Tamzin is 12 this year, so a “tweenager” I think the expression is. Billy is almost 8 and no longer a little boy. They have both helped me build a composter today, so first introduction to hammers and power tools! :eek: (will post separately on that.). And yep, making a mess is definitely their forte, tidying up not so much! Olives of any description work on a pizza for me!

Ah, the Makro thing is interesting - not been there for years, but always found they did some good stuff. Booker is nearer us now, and I have a card, but again not been there in years.

For me, with bacon, you need a bit of fat content. If it's too lean, it becomes dry and tough, and you end with something not dissimilar in texture to cardboard!:doh:

Yours has streaks of fat in it, (and is lean in the right places), which have crisped up nicely, and *that* is what produces the flavour! Eggs are epic, as usual. One thing I always have with a cooked brekky though is some sautéed mushrooms, plus I prefer fresh (grilled) tomatoes or vine ones, to tinned.

Anyway, no doubt you'll be concocting something interesting for this evening's repast!:cool:

Had some chicken wraps for lunch and made the tortillas from scratch, which to be honest wasn’t exactly hard.
I did have to trim them a bit as my rolling pin game isn’t that strong.
Very satisfying considering the short time taken to make them, and i reckon kids would love to have a bash at knocking up a few together..

They are called Alpine fries.... you can buy em frozen.. a fluffed fry in outside and crispy on outside. all natural and taste nice.. 8 mins in foodi from frozen.

Lol - that's where we differ then, as I *detest* either. I simply don't 'do' offal, of any description. The very thought of it mate, as they say in Glesga: gies me the boak!:D

Not my finest work, but after some afternoon drinking i tried a four strand challah, but with organic seeded flour from Shipton mill, which is by far the best i’ve ever used and some.

It was brushed with egg wash before baking and doused in butter afterwards.
You can see that the butter has soaked through the crust to create…

Anything but dry, but i fcuked up the egg wash by not adding some water, hence why it looks like one could throw it at a horse and render it unconscious.
Practise makes perfect and all that.

To be fair, it’s turned out bloody delish. The crust is crisp and the crumb is moist and tasty. Might actually do it this way more often. [emoji13]

Some great cooking here, guys... In particular, Tony, your tortillas look great! We don't tend to do Mexican food much, but LOVE it (and it's great for Del being a veggie), so must have a crack at it again:)

Anyway, today's lunch was Del's homemade spinach and ricotta crespelle, with homemade tomato sauce, sprinkled with freshly grated parmesan:

The it's transferred.. Sauce is sieved and thickened.

Absolutely fab.. Tender as a tender thing. Full on flavour

Hardly surprising, as don't really want to touch fresh food at the moment, I've been living largely on delivered frozen, dry or canned stuff for months. There's no way I'm going round shops. If others feel salad and the like are safe, let them eat it :)!

Sure, but neither has the opposite been proven. I'm perfectly happy though that there is no (or very negligible) danger, given the observing of the measures I've outlined.

It's understandable mate, given your health issues, that you're being extra cautious, but for the rest of us, we have to get some enjoyment from life [and eating well for us is a vital in that respect], as the lockdown has taken away so many of the simple pleasures we would normally enjoy:)

When you're not used to effectively living like a recluse, and shock horror, having a social life, this lockdown is a rather BIG culture shock!!

Gloucester 'old spot' pork chop, from our local butcher (marinated beforehand in garlic, fresh rosemary, thyme and lemon juice), then chargrilled on the BBQ, with Applewood wood chips, to add an extra depth of flavour, served with a duo of fresh salads (one, grated celeriac and carrot with mayo, and the other, wild rice with red peppers, peas and sweetcorn):
