Found some lamb stew pieces in freezer so I pressure cooked for 30mins in red wine stock with a few spices and herbs.

I love how so many people here make amazing food at home.
We have been hitting drive through windows every day for the last 5 years due to Conner's sports .
Now for the last 3 weeks every single meal has been cooked at home.
Yesterday we got some New England cod and made fish and chips ,the only time Americans call French fries chips!
She got the fish perfect , crunchy on the outside and flaky and moist on the inside.
The fries where a little rushed but they where still good.

I know this is going to seem weird but I like horse radish on my fish and tomato,garlic chili sauce on my fries. Not a big fan of Tater sauce but I like vinegar on both some times.
I had a cup of iced tea (Tetlys with Ribina Black Current juice added to sweeten it ) it was really good.

It may look a mess but don’t judge me until you’ve tried it. Stale bread chunks, Basil, Tomato (lots), Red Onion, Garlic, S&P, Red Wine Vinegar (Red is best, trust me), Good Olive Oil (lots) and whatever else you want to add (in this case leftover Chorizo and Chicken). Gets better as the flavours infuse at room temperature.

Pretty much fully baked, but not crispy and browned on the outside... wrapping in foil helps here.

So at least an hour and more depending on size.

Today I turned 54 , Nosheen and Conner got up really early and made me a Birthday cake , The little white Rat on top is my little buddy Tee Anna.
They are all great little girls but Tee is a little special because she has had a complete hysterectomy and 2 very large tumors removed and she is just the sweetest rat . She runs to the cage door when you come in the room and loves attention. She is a little social butterfly. All 4 come to their names when called as you can see when Nosheen sounded off their names Chunga,Pumpkin,Bitie ,Tee!
BTW: They are all litter box trained , they don't slip up unless they are out for over an hour with out going back to the cage to use their litter box. We don't let them run for more than 30 min . with out bring them to the box.
They run to her Tee is a little slow as she has just had a 1/4 pound tumor removed a month ago. She has so much spirit for having been through so much at 1 year old in May.
I felt so blessed before cake we had chicken Parmesan and spaghetti for dinner. All cooked from what we have at home.

A very happy birthday to you young man. Rats are lovely and make excellent pets. Where I used to live there was a guy who took his white rat out with him, she used to sit on his shoulder and loved being petted by passers by. It's very sad they suffer from so many tumours but I think yours have the best friend they could have.

Just a simple sourdough of starter, flour, salt and water. I think the key thing is technique and process.

I use a Dutch Oven (following advice of my betters on this forum) and it works great for me).

Cheers - I have been trying a rye sourdough recently, the Leven is very active, but have become disheartened as to get the inside of the loaf cooked the outside gets overdone.
I have been wondering if just straight rye is just a bit heavy (it does make delicious toast though:))

Haven't dipped in her for a while, chaps... Wow, some awesome examples of cooking! Highlights for me being Tony's homemade bread-inspired creations, and also his warm potato salad, but I'd happily eat anything that's been shown on these last few pages.

It's just great to see at this testing time that (where possible) folks are still making the effort to eat well, and most importantly, enjoy themselves! :clap:

Roy-boy, just a wee tip (only if it matters to you, though), are you really a fan of that 'mint sauce' in jars? At least that's what it looks like, judging by the glaze/sheen, on your (otherwise) lovely lamb dish?:)

If not, and you're just using it for convenience, or even if you are, you can defo do better by making your own - and it's a piece of piss to do!

Even now with some food being hard to find in supermarkets, there is no shortage of fresh herbs, so grab a pack of fresh mint leaves, chop them up finely and pop them into a jar (one you still have a lid for) along with some cider vinegar (or any other vinegar available, but I find that cider imparts the nicest flavour), add a little sugar to taste, and allow all the ingredients to infuse for an hour or so.

Then before serving, pop the lid on the jar and shake thoroughly, almost like you're using a cocktail shaker, and then just spoon the contents over your lamb. Trust me, that'll taste SO much nicer (and fresher) than that gloopy green glue in a jar, posing as 'mint sauce'!:spew:;)

What's more, whatever's left will keep in the fridge for ages (although it's best to use it up in one serving, and keep making it fresh).

Del spatchcocked a chicken yesterday, which had been marinating in herbs, garlic and spices overnight, and cooked it on the BBQ (when there's only two of you, you have to make the most of it when it's lit), so will be having some of that today cold with more salads, oh and of course some vino... In fact, as it's such a lovely afternoon, we'll probably crack open a chilled bottle of bubbly!:cheers:

Anyway, ours is looking ok for this time of year until the plants start to grow and create some colour....

There isn’t one at the flat, just a car park. There’s a park/woods at the back so it’s fine for walking but no area where we could have a bbq. Unfortunately, I have to work as we are part of supply chain for key medical/lab equipment manufacture. I’m mostly working from home but have to go in at least a few hours a week for ‘hand-on’ stuff. Would be nice to be in the house on the Wirral but happened to be down here when lockdown occurred.

No, missed that, thanks. I had some fresh mint in a tub, don't know what happened to it but, as I recall, it's easy enough to grow (must have been if I had some!). Good with new potatoes as well.

Yeah, and it grows in pots really easily, plus you have a garden, so there's really no excuse!;)

Mc Vities are the best, very versatile too. A nice, strong Cheddar cheese on a digestive is very tasty.

I moved house a few weeks ago, it was vert stressful and pretty much everything that could go wrong did go wrong. In the past I was diagnosed with an eating disorder, I would sometimes stop eating, sometimes for days and then have serious problems digesting anything when I started eating again. This went on for a long time and has damaged my digestive system, the upshot being that I have to be very careful to eat a good diet at regular times. I'm mainly over this but after the house move I had a bit of a setback and had issues with food again. I'm on the mend now although I don't eat much (you'd never believe this if you saw me lol) and seeing and reading about the food you guys have really helps me to enjoy food again. Thanks chaps and keep posting.

Ok, I was wrong Digestives are good, I got Mc Vities original wheat biscuits, Grant 's suggestion here and they are perfect with tea. Thank you.

There is loads of different bickky variants. The Chocolate coated McVities Digestives are great dunked in scrubber milky coffee. We used to have some trampy salted biscuits over here called 'Ritz' that people got out at christmas to put bits of Cheeze, Pickles etc on, I think you can still buy them..

I moved house a few weeks ago, it was vert stressful and pretty much everything that could go wrong did go wrong. In the past I was diagnosed with an eating disorder, I would sometimes stop eating, sometimes for days and then have serious problems digesting anything when I started eating again. This went on for a long time and has damaged my digestive system, the upshot being that I have to be very careful to eat a good diet at regular times. I'm mainly over this but after the house move I had a bit of a setback and had issues with food again. I'm on the mend now although I don't eat much (you'd never believe this if you saw me lol) and seeing and reading about the food you guys have really helps me to enjoy food again. Thanks chaps and keep posting.

I find the trick with good Yorkshire Pudding is the heat of the Oil before adding the mix. Use high smoke point oils like Sunflower oil.. Those round puds are a bit shite, Best with monster done in a deep roasting tray. I used to make some real aliens that spanned from the middle shelf to the roof of the Oven..

Thanks for the kind thoughts gents, I'm feeling ok and my appetite is slowly returning. It's a very difficult thing to put into words, I really love good, quality food and drink and I'm not too bad with the pots and pans but I just get this "blind spot" with food and can't see past feeling absolutely no interest in it. Seeing the dishes served up on the forum and reading peoples comments along with recommendations for sourcing and preparing ingredients is very inspiring. Even Andre's northern puds sound great to me ( that's how I do them by the way). Once I'm on an even keel I'm going to bake my own bread again, I became quite adept at the glutten free loaf.

What volume of each ingredient do you use Andre or do you just know it's the right mix from the thickness of the batter?

I used to find third of volume egg/milk/flour worked well (with a pinch of salt) but somewhere along the line I lost the knack :(

I used to scoff a giant Pud to myself, but they used to make me a big lad. Years ago when blokes went to work down the pit they could go to the boozer on the way home, then come home, fit the nose bag but never put any weight on. These days Blokes dont know the meaning of real work so its kinda not great noshing all this kind of grub & get away with it..

4oz Plain Flour
3 eggs
½ Pint of low fat milk (skimmed or semi-skimmed)
Pinch of salt

Mix well with whisk.

Set oven on highest.

Tray with about ½ tsp of Lard in each

Make sure the tray is hot as Hades (smoking hot) before quickly adding pudding mix.
Cook on highest setting for about 30 mins or until done.

Lamb kofte, chicken souvlaki and homemade burger (only 3 each of the former as son is fussy and his sausages from the local butcher were already on the go.) My burger was topped with Binham Blue cheese (from Norfolk, and one of my favourite cheeses) and red onion. Could eat it all again now!

Garlic 1/2 , about 8 cloves , Squashed with a wide blade knife then diced
Leak
Savoy cabbage
Parsnip
Carrot
Cauliflower

Then add some Chef's Larder Chilli / garlic / salt flaks ground
Fresh ground black pepper
And a bit more salt , nothing was pre cooked in salt water

LOL no, only at the weekends! You'd be useless at traditional banquet lunches, served in Italy at the likes of Christenings, weddings or First Holy Communions...

You start around midday, and 14 courses later (not big portions, though), from antipasto, to pasta, to roast meats, veg, puds, cakes - everything homemade from scratch, all of it locally sourced, if not from the host's own farm, and umpteen different types of booze (often including wine from the host's own vineyard), you should finish before 7pm!!:eek::D

Chicken Schnitzel (free-range breast of chicken, rolled out flat, then put into flour, beaten egg, and finally pan-fried in clarified butter), served with homemade mashed potato [made with Jersey single cream, butter and whole milk from the dairy], topped with smoked paprika and fresh chives from our garden, accompanied by sweetcorn and a slice of fresh lemon:

You're dead right - chippy suppers were a rare treat when I was a kid, but we always had Tizer with it. And the piss they sell these days is nothing like. This isn't simply nostalgia, the difference is huge :(

I know what you mean, Roy, that plateau is a bugger, relatively easy to stay where you are but losing a bit takes sacrifice, and we're sacrificing a lot at the moment so chips/cheese/crisps/chocolate are a bridge too far!

Today we'll be having Prawn Pil-Pil to start [should look something like this, possibly better:eyebrows: https://www.tamingtwins.com/spanish-pil-pil-prawns-with-garlic-chilli/, followed by some beautiful double Welsh spring lamb cutlets (sourced from a farm locally), cooked to perfection on the charcoal grill, served with fresh spinach, homemade fondant potatoes and other seasonal veg, with homemade mint sauce on the side, made from fresh mint from our herb garden.

Still to decide on wine, but I'm veering towards a classic French Burgundy.

The lamb was gorgeous (the local farm we source it from really is top notch), but the fondant potatoes and creamed spinach also came out really nice!

Anyway, lunch today enjoyed al fresco... Small selection of Italian cured meats and peppers/antipasto, followed by Pappardelle al Ragu (with Del's homemade sauce), sprinkled with some fresh Parmesan [20 months-matured Grana Padano Riserva DOP] from Lidl (best I've tasted outside of Italy) and some fresh parsley:
