Sea Bass with Tamarind & Chilli sauce. All made from scratch. Accompanying Thai stir-fry veg and some plain rice.

It’s a pretty well established combo really Marco.

Works well with the fish and doesn’t overpower it.

First had it in a Pan-Asian Street Food place in Liverpool (Tiger Rock Hawker), and it was a big favourite. Decided I would give it a go after that.

Tamarind and a paste made from fresh chilli, coriander root, shallot, fish sauce, garlic, ginger and palm sugar.

It’s a lovely combination.

Noted, Tony. I've not had that combo before. With fish, we tend to do more mediterranean or British dishes with it, than Asian, so will give that a go sometime!:)

Same here, Robin. In any Chinese takeaway we order I always get salt & pepper ribs (with extra chill)! Used to always get BBQ or Peking/Cantonese/OK sauce-type ones, but these days prefer something drier and hotter, plus less messy! However, the Korean pork ribs I had tonight surpassed anything I've had from a Chinese takeaway.

Lol.. Bet it would be good!

No problem getting good ribs here. The butchers generally always have them. We bought a 'sheet' of them for £6, and that was only half portion, so what I had tonight cost £3. You wouldn't have needed any teeth either, as the meat just fell of the bone (cooked slowly in the oven, on a low heat for 2 hours).

Slow-cooked Welsh lamb shank with Harissa, on a bed of homemade Moroccan couscous (with butter, raisins ,sautéed.onions, garlic, red peppers and peas), and finished off with some fresh mint:

Some people might regard braising a sirloin steak as being a bit of a waste but it was how I fancied it & after an hour of simmering in a thick stock with onion, shallots, tomato puree & ketchup, Italian herbs, Lea & Perrins, a touch of soy & a generous grind of black pepper it was delicious & melted in the mouth :)

Ah I see... You're probably a bit like me and *really fussy* about what goes into sausages, and which is why I generally buy them from a reliable butcher, whom you know uses quality ingredients. In that respect, a high meat content, for me, is mandatory.

Cheap, mass-produced sausages, of unknown provenance, can be full of all kinds of shit - entrails, gristle and other types of fat, plus bulked out with rusk, and taste absolutely disgusting! I remember a friend biting into one and he pulled out from his teeth what turned out to be a vein!:spew::spew:

Now *that* is enough to put you off sausages for life!! So that's why I only buy top-quality ones, and where I know what's gone into them:exactly:

They also have to be cooked right and browned off nicely, so pink, peely-wally, anaemic looking things are also a BIG no-no!

To be fair though, does it matter which bit of a dead animal you eat? Granted, most people wouldn't chose to eat an eyeball, but if it is all minced up and tastes good, I don't have an issue. Same with picking your species - what's the difference between eating a pig and a dog? :scratch:

Sausages are something I try not to have too often. When I do, it’s usually either from a butcher or source I trust.

Back in the day, I used to make my own, 2 parts pork shoulder to one part pork belly, with whatever seasoning preferred. I’d get the sausage skin from the butchers where I bought the meat (once I convinced them they weren’t losing any business) [emoji13].

Try to keep it to the occasional use these days, maybe weekend breakfast now and again or as ‘cheat meatballs’ with pasta or pizza.

Lol... Well, for starters, they'll likely taste very different! Plus, pigs are bred for human consumption, dogs aren't.

In terms of the bit in bold though, we couldn't be further apart! I'm very fussy about the quality of the food I eat, and I like to know where it's been sourced [a big thing if you're a proper foodie or a decent chef], as it's all about provenance.

That's also why I much prefer eating LOCAL produce, as opposed to stuff that's had to travel for miles, sometimes even from abroad, as it always much fresher and generally better/tastier. So, unlike you dahling, I'm rather fussy about what I swallow!:D;)

Sure, but it does if you know the butcher well, from buying his produce often [count me in], and thus what goes into his sausages. Therefore, in my case I know that the 80% (or whatever) meat content is GOOD meat!

I don't eat sausages often either (tonight's were the first in about 3 months), but when I do, I like nice ones, and served as pictured!:)

Oh I know, which I why I never eat them! Here, it's free-range or nothing, plus the taste is in a different league.

It wouldn't take much for me to turn veggie, as I love all sorts of fresh veg, and Del knows how to cook it really well, plus I love pasta, rice and salads, all fish and some seafood. The only thing I'd *really* miss is lamb cutlets and pork ribs, plus certain chicken dishes. I've never been a big beef lover.

However I could easily give up meat for, say, six weeks, as I do with alcohol during Lent! That wouldn't bother me in the slightest:)

Naughty, and also lazy boy! :spank::D;) In your circumstances (as you have enough mouths to feed), you should be buying (whole) free-range chickens. Not only more ethical, but cheaper than anything that's been portioned (as you always pay extra for that).

I agree, and as we will be this weekend, I'll be getting a whole chicken for the Sunday roast from the village farm shop, but in the week I generally cook with chicken breasts twice a week, so it would be both time consuming and likely a lot of waste to buy whole birds. Looks like there's a country butcher a couple of villages away, and I have heard good things about them so will check out what they do. But definitely an early New Year's resolution that I am only buying locally sourced and properly free range meat and poultry from now on!

Well, I obviously knew about general conditions and them being raised in sheds, but I'd never seen anything about the chicks, and how they are so badly handled/discarded. Poor little buggers.

On the subject of sausages again..these were pretty decent Lincolnshire ones..with added cheese and pickle. Having a couple with chips and beans as a guilty pleasure.

I’ve been trying to be a good boy and go swimming at least three days a week before work to keep things under control though.

I’m in the pool at 6:30am for a 20 minute session that sets me up for the day. It’s a lot harder getting up in the dark to do it though. [emoji4]

That’s a shame. [emoji853] it’s a bit easier for me as the pool is in the building, I just put trunks and a t-shirt on, get in the lift down to the pool, have a swim, then get back in the lift and get showered/changed back in the flat.

It was meant be a decent celebratory meal, but unfortunately a little too much booze was imbibed as the results rolled in early today (so much so i was falling over at lunchtime) so the butter and parsley sauce was forgotten and possibly other stuffs.
The idea was lobster tail with smoked paprika, lime and a smattering of garlic with a Savoy cabbage parcel filled with strong cheddar, smoked bacon and mash, along with Celeadine sautéed spud chunks, honey roast parsnips and something else i’ve forgotten.
Tasted good though.

We were at London Bridge today near The Shard and fancied having lunch at somewhere special. So thought we would try one of restaurants situated within the Shard. Bad idea - to get in you have to go through an airport style security search, staffed by scowling, unhelpful, if not rude, personnel, followed by aloof, unsmiling maitre d's at all of the restaurants themselves. Not surprisingly we went elsewhere to eat.

As it was freezing cold, we started with French Onion Soup followed by Cassoulet de Toulouse, finishing with Tarte Au Citron.

Fair enough, mate. We're very different in that respect. I like roast chicken breast to have a crispy, nicely browned skin on, be very well seasoned with salt and pepper, infused with fresh garlic and herbs, nice and moist, and served piping hot with a lovely rich, tasty gravy - so pretty much the complete opposite!:D

Oh, and from a whole chicken, the breast meat is my least favourite. Give me a nice juicy leg or thigh, and some meat on the bone, any day!;)

There is no excuse for such rudeness. They'd *try* that once with me, and after I'd given them a slap for their snobby impudence and lack of manners, that's the last they'd see of me!! Plus, I'd be on Tripadvisor like a shot to tell the whole world of my dreadful experience, and it would be worded in such a way so as to do MAXIMUM damage to their business!

That kind of shit is one of the reasons why I'm not a fan of socialising in London or any other impersonal big city:rolleyes:

Used Red Palm and Rapeseed oil this time. It cooks well without smoke and the nutrients dont get damaged with the heat. It is slightly red but works well. (Airfrying on this machine is fabulous)

Just a wee idea, if that is you haven't already thought of it yourself... Why not get some small ceramic dishes and make individual mini-lasagnes, which you can freeze and serve up later, rather than one big one, which will dry out if you don't eat it quickly enough?"cool:

Lol, no worries... The most important part of the 'authentic' bit is the layering, and making sure that there's more pasta than sauce, and you've got that spot on. It also looks lovely and moist, and can tell from the look of the meat sauce that it's rich and flavourful. No, top job!:thumbsup:

Ain't that the truth, Dave! No staying power... But particularly they're usually too selfish, so don't get the concept of 'give and take'/compromise, and just cry 'divorce' as soon as the going gets tough or they don't get their own way. Plus, I've been brought up in a family with numerous successful, long-term marriages, so for me it's the norm:)

Hope your good lady and you have a nice 50th, and I wish you long and happy/healthy life together, and so many more anniversaries!:cool:

Nope - over here this year and my sister is hosting so, whilst I will of course volunteer to peel spuds and the like, I'm going to be relaxing for a change! I have been put in charge of cocktails, however, which I I will take very seriously...

We're hosting for New Year, however - two other couples are coming to us from Saturday 28th until Wednesday 1st, which will be a right laugh. There will be walking, golfing, a cinema trip, at least two cocktail bars, three meals out and a day in a local hotel's spa for massages!

Yup., its similar To Skirlie, but our own recipe. imo its much better too. Easy to make and can be reheated. Even easier in the ninja foodi lol. 17 mins instead of 2 hrs on stove.

Now, I quite like turkey, *but* for me the breast is, by far, the LEAST interesting bit! Unless we're talking Godawful turkey crowns. Give me some BONES to munch on, man.... Leg, preferably... Always been a leg man;)

Bit late, but this was my Christmas dinner - traditional sea of gravy!

All locally sourced, the turkey from the village farm shop and born bred and prepared a couple of fields away. The best turkey I have ever tasted. Sausage meet for the stuffing and pork for the pigs in blankets came from a couple of villages away. Lovely lunch, and topped off with a mainly Suffolk cheeseboard and Graham’s port which helped send me into a food and drink coma!Looks very similar to my plate of grub tbh. I also had some sprouts done in worsester sauce.. A Jamie Oliver recipe apparently.

Interesting... So you only like the breast parts, when a roast turkey forms the basis of your Xmas lunch? When we had turkey for our Christmas lunch, I always had a leg and a large slice of breast to start (as I liked the contrast of flavours and textures), then if I felt for more, I'd have another slice of breast, and my dad would have the other leg, plus he liked some of the other boney bits, so what was left after that was generally used for curries.

What often put me off turkey legs though, was having to fight through those horrible ossified tendons, to get at the lovely and moist, succulent dark meat. Eventually we got the butcher to remove them first before collecting the bird, and that made a BIG difference to my enjoyment of eating turkey. But then I discovered goose, which quite simply [cooked properly], flavour-wise, knocks turkey into a cocked hat! Plus, it's smaller than most turkeys, so suits us better, as there's less wastage:)

Honestly mate, next year you should give it a go!:cool:

a turkey is too big now so if going that way it would be a crown, or a nice chicken. only had goose once i think, and it wasnt very good; probably the cooks fault. im not even keen on goose fat

I can understand that. All the fat has to be rendered out fully, as otherwise it can be rather greasy. However, if you look at the pics of the geese that Dan and I had, you'll see they've been perfectly cooked and not greasy at all:)

just had some of my son in laws veg soup at this time lol. was fab stuff.. hes the king of tatty and veg soup. even better than mine..lol
i didnt have dinner last night plus i was up and out at back of 7 so deserved it

Got my still on this morning again. Makes lovely purest water I can then add the minerals etc I want to. Bottled up in big glass bottles and kept cool in one of my fridges I keep especially for water.
