Portabello with dark soy, Worcestershire, garlic, tomato, spring onion, mature cheddar and liberal amounts of pepper.
Ray wing and capers, lemon juice, butter and olive oil.
Might seem and odd combo but that meal was magic. See what I did there?:D

Looks nice, dude. Sort of 'posh pub grub', done well. I like it:)
Marco.
Cheers. I fried those Old Spot sausages for ages but they just refused to brown. Damn fine meat in them, though.
Not really weather appropriate but was in the mood.
I usually make a far more complex gravy with loads of ingredients but kept that one simple. A much lighter affair that was really very nice indeed.
Gloucestershire Old Spot is the best pork you can buy! It's what our local butcher stocks. If you can get some chops or joints for roasting dude, you'll love it:)
Anyway, tonight's scran... Homemade Chicken Parmigiana (pan-fried breast of chicken in homemade breadcrumbs, on a bed of spaghetti with a homemade fresh tomato and basil sauce, sprinkled with some fresh parsley):

Went down well with the accompanying bottle of Chianti Ruffino Riserva, which Del and I shared:cheers:
Marco.
Is that the chicken on the top left of the shot?
Does look very good, though more cheese would be where I'd go.
Yup, there are two large bits of chicken breast, top left and bottom right, although that one is covered by sauce. You can make it with more cheese, but it makes the dish heavier and more filling, and I wanted something lighter but still tasty:)
Oh, and if you mean grated cheese, yes, but I don't like too much of it, as all you taste then is salty Parmesan, and I like to taste the chicken and fresh tomato sauce (which I mopped up with some crusty bread).
Marco.

Made it for my guest (cousin's daughter who has an internship at a PR company up town), she doesn't seem to eat a great deal. Don't know whether that's a reflection on my cooking or because she's watching her weight?
Lol - I was going to comment on the rather 'mean' (for you) portion size, but decided not to... All is now clear!:D

Okay I will endeavour to snap Shona's M&T's
But the downfall of being caught filming Shona's secret recipe, is similar to being caught red handed with a daldoo up me arse, whilst watching Flog It.
:lolsign:
Btw, mince & tatties, done right, as I've no doubt Shona does, is a thing to behold!:)
Marco.
Phily cheese steak.
Had to have a go. Fed up with Americans going on about how great they are.
For this according to the American cheese steak bosses you need a soft cheap roll. 45p from Sainsbury's.
And some really shitty cheese. Really you need cheese whizz. But only Asda sell it over here as it is owned by Walmart. So I had to use processed cheese slices.
Provalone is also acceptable for another variant. Couldn't find any.
I used 30 day ribeye for the meat. Freeze it for 45 minutes to allow you to chop it up small. Fry with an onion.
Is it any good? Cheese whizz would make it more moist but actually it is pretty good. Next time I am in Asda I will get some.

Anyway the turbot is a delusios fish. But attention is needed if eating the skin.

Water, flour, salt. Nothing else. As simple as it gets.
From the sourdough culture I posted above.
If you don't use commercial yeast you get:
1) A much crunchier crust.
2) No need to add oil.

Water, flour, salt. Nothing else. As simple as it gets.
From the sourdough culture I posted above.
If you don't use commercial yeast you get:
1) A much crunchier crust.
2) No need to add oil.
3) Improved texture.
4) Better flavour.

Mmmm a very nice looking loaf of bread.....I'll wager it tasted (past tense of course, I'd have eaten it all in one sitting) sublime...I hope it was spread with real butter...I wouldn't have put anything else on it....
French butter, ham hock and Chaource cheese saw quite a lot of it off...
Here's the sourdough fermentation just prior to baking.

& that gammon looks delicious. Having been out for a largish lunch I thought I might make do with a sandwich tonight but your pic has made me hungry.
The local butcher has been selling huge ham hocks for £2.99. Sometimes roasted, sometimes boiled. It is outstanding value once you cut past the fat, of which there is usually loads. Even so, there's loads of meat in them too!
The hock you see was a boiled one. Very nice indeed.

Lol.... All three were superb, mate! Don't normally 'do' desserts/puds, but Del had made some for my uncle, who was visiting and loves them, and those were left over:)
Rabbit casserole was also great - very satisfying and tasty.
Marco.
Bling Marco? She can afford better.:D
Lol, just caught this... Bling can be expensive, not just tat, and it's obvious that with your sister, the former applies. She also looks a good cook.:)
In terms of the table decoration, it's lovely if you like that look, but no disrespect dude, it's really not our thing. We like antique/vintage/retro stuff, and the country/rustic look. Don't do modern, which is why we live in a Victorian lodge house, not (what looks like) a penthouse suite in Dubai:D;)
It's very nouveau riche, '5-star Hilton', including the pool, which looks lovely [but would be better if it were located in a warm country, where no doubt it would be appreciated more], although again not really our scene. I had this conversation with Kevin (CageyH) when he was here, and posted pics of his (equally lovely) pool in his house in the South of France.
Neither Del or I are swimmers, or folks who lounge around pools or the beach. We prefer the countryside and mountains and hills... Just different strokes for different folks! Nice place to go though for a meal or a chill out - lucky boy:respect:
Marco.
And an OK swimming pool...
Nice one, did you go for a pre nosebag dip?
She became a multi-millionaire by buying and selling high priced ladies fashion and home interior items.
So while her tastes don't align with yours, she got filthy stinking rich by aligning with the taste of a lot of people.
I am amazed how successful she has been. I just see her as my sister. I think she must transform into something else in the workplace LOL.
Yups... She's obviously done very well for herself, and good luck to her. I always respect people who are able to make a success of something that they're passionate about:)

Nice one, did you go for a pre nosebag dip?It was 33 degrees C in the pool. Actually a bit hot for proper swimming but most people just want to take a dip and mess around, which that is a good temp for.
Was up til 5am with nieces and boyfriends somehow.
Outside Richmond Park. Planes fly over every minute scary low though they do move the flight path every few hours.
Even with the aircraft, some houses in the road fetch £10 million. Madness.

We've been viewing properties locally, sometimes accompanied by one or other of my other halves grandchildren. Most don't live there much, Marco. They own properties all over the world and just stop off once in a while.
Most houses in the road have been flattened and rebuilt and have basements with swimming pools and gyms etc.

Does that also apply to your sister?
I've never understood the obsession with owning swimming pools, especially in the UK, where it's cold and rainy most of the time. Fair enough in the likes of the south of France.
Plus, and I'm not saying that this applies to your sister [so please don't take it that way], but too often pools are simply the rather vulgar 'badge' of the aspiring (upper) middle-classes/footballer's wives set, as if owing a pool somehow means that one has 'arrived'...
It can also smack of having plenty of money but not much imagination of how to spend it..... Kind of like what dimwitted chav Lottery winners always do: buy a big house with a big pool (and a 'flash' car)! Oh FFS...:D:rofl:
I'd far rather have a proper, stone built [tastefully stocked] wine cellar, or a games room with a full-sized snooker table, or mini-real cinema, complete with full-sized screen and seats, than a swimming pool. I guess it's just what you're into:)
Marco.
Move north, mate. That's where the value for money is - well away from the overcrowded and congested rat race darn sarf! £10m for London houses? I wouldn't live there if you PAID me £10m to do so....:nono:

My cousin lives in Livingston (near Edinburgh, not far from Grant) & before I met my current lady friend I'd considered moving up there, there was a bungalow up for sale next door to his for about a quarter of what my current house was worth at the time but I just couldn't put up with the weather up there. I recall attending a dog show with my previous partner (who was judging) in May. I was wearing 2 fleeces & a coat & I was still cold!
In any case we need to stay local as her three girls all live in Essex with the grandchildren. If it was purely my choice I'd move to Norfolk where my Dad's family came from.
I'd move to where Marco is. Gets good mix of weather and it's quite quiet, yet close enough to everything u need. Here is sa.me bar weather

No worries, mate. Just pulling your leg, really. However, I do know what you mean about the weather up there, as the comments from Grant on the weather thread reveal... There's a happy medium, though. Somewhere in the north of England (lakes), or the south west (Cornwall) would be nice, but I know you need to be near family:)
I just couldn't live in the south of England where there's so much overcrowding and congestion, as I'm too used to being largely divorced from the masses!
Marco.

Yup, that's why I like it. Nice quiet suburb of Wrexham (Acton/Garden Village), with as many shops as I need on my doorstep, 10-min drive to beautiful rural Welsh countryside, 40 mins to some stunning coastlines. 20 mins from (lovely historical) Chester, 40 mins from Liverpool, and not much more from Manchester. And virtually no traffic issues locally to speak of. ZERO stress.
And as you say, the climate (for Wales) is pretty decent, as you'll see from my reports on the weather thread... Spent most of today out in the sunshine in our garden, first working, then enjoying a relaxed lunch, without hearing a peep from anyone!:)
The houses are mostly very nice round here, and it's virtually always very quiet: https://www.google.com/search?q=acton/garden+village+wrexham&source=lnms&tbm=isch&sa=X&ved=0ahUKEwjioKjKkI3kAhXSURUIHXhHBHIQ_AUIEygD&biw=1309&bih=656#imgrc=_
The majority of my neighbours are OAPs and/or retired folks, or well-behaved young families with kids.
Marco.

Yes, local roads are a pain in the a**e through rush hour but being retired I don't travel at these times. Got my over 60 free oyster now anyway so I can get buses everywhere (they're every 7 minutes from virtually outside my front door). Valid on trains to so i can go into town for free , the C2C service gets you to Fenchurch Street in about 20 minutes. Our last trip in was to see 9 to 5 at The Savoy theatre. Had a decent lunch in Prezzos (2 for 1 with a Taste card) saw a great show and had a few sherbets before heading home.
Quite right to make use of your bus pass, dude, especially where you are. I've got a few years to go, to qualify! Although, I'm not big on using public transport. No need to round here, as there's not much traffic, and it's nice to be able to come and go as you please, without having to stick to someone else's timetable:)
Marco.
I couldn't get on/off a bus alas. I could get a pass but no point
I like buses, other half calls me a

And Grant buses round here can lower themselves to kerb level to accommodate people with walkers, scooters etc.

They don't here. Even if bus has it. Same with trains now. They won't wait for you to sit either. And I couldn't walk or stand with bus in motion so would never get off.. Lol

Lol... I love driving (nice cars) too much! My granddad's last car was a Lancia Beta, at the ripe old age of 88, and my dad's still driving (from Wrexham to Glasgow) himself, at the age of 86, so driving is in our blood. I'd only over use a bus or train if there was no other option, or it was the sensible thing to do, say when in a large city (which I don't frequent very often).
Marco.
Should qualify things to say I'm on meds that knock me for six sometimes (I have to time when I drive) & my driving licence is reviewed every three years :(
Enjoy driving too, but struggle to sit for a long time and then can't walk when I get out.
Used to do over 400mls a day some days for years.
Company car would go round clock 2 or 3 times in its 3/4 year life. It was like triggers broom in the end. [emoji23]

Ah, no worries Roy, sorry to hear that. Luckily [touch wood] I'm blessed with good health, so take no tablets or meds and am almost never ill. All the red wine I drink must flush out my system!:D

Lol... When I was a salesman with a company car, and also at the height of my own art/framing business, I used to drive a similar mileage. Would think nothing of finishing work at 7pm in, say, Dundee (having already driven 100s of miles that day selling and delivering stuff in that area), then drive home to Glasgow, and do the same thing again next day at 8am, sometimes 6 days a week.
Thank fuck though, I no longer have to do that!

Returning to the subject of 'nicely set' dining tables [ones I would enjoy sitting at having a meal], this is my idea of such... Either this:
https://imagizer.imageshack.com/v2/1024x768q90/923/s7xnYi.jpg
Only with full claret jugs!;)
Or something rather less lavish, more practical and country/rustic in style:
https://imagizer.imageshack.com/v2/xq90/922/yyO3Qr.jpg
Or more likely this, which is a toned-down, less ostentatious (arguably more tasteful) version of the first one:

No bling in sight. For me, that's just lovely, and the height of good taste!
Marco.
What was the Vin D'Orange like - can you describe the taste? Not had it before:)
Is it really orangey?
Marco.https://www.thegoodlifefrance.com/vin-dorange-recipe-provence/
Just looked at three recipes and they differ a lot.
However, that bottle was amazing. I am definitely going to try making some.
It's just delicious. No other way to describe it. And yes, very orangey.
Sounds awesome, dude. I did some research too, and found a few recipes, so might also give it a go:)
Marco.
Does that also apply to your sister?
No not to my sister but it does for both existing immediate neighbours.
Cool stuff, and good luck to them. However, if I had that type of money, I wouldn't want a house in London. Paris or Rome, perhaps [more likely Venice], but defo not London. Just not my scene...
In any case, we're not really city people, so any expensive properties we owned would either be in the countryside or a remote coastal region [if applicable] of one of our favourite countries, such as Italy, France, Austria, Switzerland, Luxembourg, New Zealand, Finland, India or South Africa.
Marco.
Paris smells of piss as street urination is common.
Rome is full of Italian police trying to impress Italian women.
Haha (and not untrue)... Do you want me to tell you what London is full of?:D:eyebrows:
Marco [simply couldn't live in the city that houses Westmonster and the Royal Family of war criminals and pedophiles].
London has been invaded by stealth. It isn't part of England anymore.

I enjoy it in small doses, abusive dining in Wong Kei, a mooch round Camden early on before the tourists arrive, a west end show. And where else am I going to get my exotic watches serviced?

Lol - does that joint still exist?
It was one of the first places Del took me to in Chinatown when we first met [late 80s], and she was working in London (Victoria). Great food, but terrible attitude from arrogant staff! In reality, there are better and more authentic places to eat Chinese food in London's Chinatown. minus the bad attitude.
Marco.
Lol - does that joint still exist?
It does, they had toned things down a little when I was last there (thinking about it that could well have been 3 to 4 years ago).

Number 1 - Way too bling, unless you do actually live in 1860.
Number 2 - Too rustic
Number 3 - Spot on!
Then again, we have a hot tub in the garden, so maybe my sense of taste is a bit skewed...
;)
Haha... Hot-tubs are cool, and a damn sight more practical in the UK than swimming pools!:eyebrows:
Anyway, as an established man of refinement and taste, I knew you'd agree with my final choice;)
It's certainly what I'd have in my own house.

well..You polish off the outer layers...and start climbing.....
Aye, that'll be it!:D
Marco.
Dismantle the table inwards through the courses maybe
Looking at the types of food, laid out on each 'layer', I'd suggest that the starting point was in the centre, and you'd work outwards from there...
Would love to be at a banquet like that, though!
Marco.
Yesterday chicken korma and veg with rice
Today a gigantic fry up.. something i found in freezer. Did my best to scoff it but was too much

Only thing is, where's the broon sauce?:D

Great place to eat,one of my favs.
Some awesome foodie pics recently, guys! Your peppered mackerel in particular Jim, looked great - superb pic:)
Tonight's dinner, enjoyed once again in the lovely Wrexham sunshine, of homemade spicy Chinese pork kebabs, cooked on our charcoal BBQ, and served with homemade vegetarian Singapore noodles. Thought Del was doing some salads, but I'm glad she didn't, as the noodles were SUPERB and arguably even better than the kebabs, which themselves were excellent:

Cheers, mate. It went surprisingly well with all the spicy food!:)
Marco.
Were they Singapore noodles?
Looks excellent nice table and chairs too.
Hi Justers, yup, but veggie ones without the pork or prawns, still bloody lurvely, though!:)
Marco.
Singapore noodles are a long time fave of mine.
Sainsbury's sell just the spiced noodles fresh for very little wonga.
M&S do an OK complete meal with prawns and chicken.
