Today's lunch: haddock and parsley fishcake with two side salads, one consisting of onion, cabbage, cucumber tomato and fresh dill, and the other, green beans, soy beans, peas and new potatoes, with fresh mint, chilli and olive oil:

Will get a sourdough culture on the go now it is warm.

Some of the scran and booze we enjoyed yesterday... First up, a trio of steamed fresh king-scallops, in their shells (sourced from our local fishmonger), served with different accompaniments, with the main flavours being fresh ginger, garlic, coriander and spring onions:

We made up for it though, yesterday, as what you didn't see were the Vodka Martini cocktails, Sauvignon Blanc, which went with the scallops, and later the dessert wines and liqueurs, followed by coffee and petit fours... :eyebrows:

Yeah, a lot of it was prepped on Saturday (the 'donkey work' done), but of course stuff like the scallops had to be steamed fresh on the day. It was fab, and most importantly, my 86-year old dad loved it!:cool:

I’m good thanks. Sounds like you were all well oiled then, quite right after your abstinence!

I admire the way you treat your dad and it sounds like he’s good company and appreciative too.

My wife cooked a great meal on Friday night for my brother and his wife for his 50th birthday (also going out for a family breakfast tomorrow to celebrate, looking forward to that!). We don’t do the fancy fayre that you guys do (which looks so awesome) as I guess we never grew up with it but we had roast loin of pork, stuffing, mashed and roast potatoes done in goose fat, proper steeped peas, carrots, gravy, whole onions cooked in with the meat and a peach melba fresh cream roulade, raspberry ripple Italian ice cream and Victoria sponge birthday cake, all home made. Yum...making myself hungry now!

Here's a quick photo of the Victoria sponge cake. It's double layer, each layer is around 2" thick with a good dollop of Tiptree seedless raspberry jam and a thick layer of vanilla butter cream in the middle so about 4 1/2 to 5" deep. Wouldn't like to think how many calories are in it.

Glad to hear you're well, mate. Yeah, not that we're big drinkers, but you always appreciate a few glasses of wine when you've been off it for so long! And now with the lovely weather we're having, I can enjoy a nice cold beer after I've been out in the garden all day:)

In terms of my dad, we've always been very close (as I was with my mum), as indeed most Italian families are. After all, our parents worked hard to look after use when we were young, so it's only right that we return the gesture when it's our job to do the looking after. He's brilliant for his age, and loves his gardening, going out for walks and stuff, and at the moment totally self-sufficient. He lives in his own house, 2 mins away from us.

That meal sounds fab, and also right up my street! Good home-cooking like that is hard to beat. We don't always have "fancy fayre", but will push the boat out on Sundays, as that was always traditionally the day where we enjoyed something really nice, and especially on special occasions, such as Easter, Christmas, etc, or when we have friends or family round, who usually return the compliment.

Hope your brother had a nice birthday, which I'm sure he did. Not big on cakes myself, but that one looks top notch! I could happily have a nice slice of it as part of an afternoon tea!:cool:

Not at all, that looks rather nice! Glad you don't waste stuff either, as it's sacrilege throwing good food away. We've got plenty of leftovers from yesterday, which will do us for lunch! I'm going to do some more cocktails later though, as Del really enjoyed them yesterday, and she's been working hard!:)

Today's lunch al fresco, as we're still enjoying the fine weather over the Easter holidays. First up, the booze... A nice chilled Côtes de Provence Rosé, with a classic Negroni cocktail I'd mixed first, which we enjoyed as an apéritif:

Followed by a selection of Chorizo sausages (sourced from our local Portuguese deli) and fresh Boerewors sausage, from the butcher, all cooked on the charcoal BBQ and served with a small home-made potato and spring onion salad, and bowl of dressed salad leaves, plus sliced red onion, green olives, feta cheese, green beans and fresh asparagus, with some hot sauces/mustard on the side:

Ok, we tried to enjoy another 'al fresco' lunch yesterday, but it was rained off!:D

We managed the starter, which I shared with Del, as it was vegan... Home-made rice-paper vegetable spring rolls (containing baby sweetcorn, asparagus, rice vermicelli noodles, beansprouts, spring onion and coriander), served with two dips: one with fresh chilli, Shaoxing rice wine, ginger, garlic, sugar, coriander), and the other just some Kikkoman light soy sauce:

The main course was enjoyed indoors, which was free-range chicken (cooked on the BBQ), marinated in various herbs and spices, including harissa, za'atar (middle-eastern herb), fresh lime juice, chilli, garlic, and served with stir-fried egg noodles, with baby sweetcorn, pak choi, beansprouts, soy sauce and sesame oil:

Panceta though. Supermarket panceta is usually pretty awful. Hard to find decent panceta round here without going into Bristol.

Therefore, the old wives tale 'cooking wine' thing (use any old shite, as it doesn't matter) has always been bollox. Golden rule: if you wouldn't drink it, don't cook with it!! :exactly:

Anyway, the beef should be lovely when it's done. Just don't overcook it;)

Love it! Can’t beat the unbearable aroma of good food in the house. I used to do a 24 hour Aromatic Shoulder of Pork recipe around Christmas, almost made it impossible to sleep. [emoji23]

Well, Justers, all I can say is that is the POLAR OPPOSITE of my experience with Lidl (or Aldi), and you know my standards and how fussy I am about the quality of the food I eat!;)

Mince isn't something I have much of (although I like it), but when I do, would always buy it fresh from a butcher. Supermarket mince, from anywhere, will always be shit in comparison.

Marco.Blood juices were running but meat was cooked too. It browns up in the sauce. The overnight soak makes it extra render and super juicy.
Some of the sauce will become gravy. Just reduce it and add a little arrowroot

The Parma ham was cut with an electric slicer, from a solid piece (bought from a deli). That makes a difference, as unlike supermarket-bought Parma ham, a) the ham tastes of something to start with (rather than cardboard), and b) you can slice it thicker, so that it doesn't all shrivel up in the oven.

Surprised it didn't come out darker. I hit it with 240 Deg C for 25 mins lid on and 35 mins lid off.

Mind you I glazed it with milk to get the poppy seeds to stick. So maybe that's it. Never used poppy seeds before.

It was Chocolate and apricot Diplomat with dark chocolate sauce and chocolate ice-cream. It was the end of a superb lunch we had at a local pub.

The other dessert was Apple and almond Frangipani with Malted milk Ice cream.

Ok today's lunch chez-moi, al fresco, in sunny Wrexham... Starter was as follows (self-explanatory due to picture of packaging below):

These fish cakes from Aldi are highly recommended, and are among the best shop-bought ones I've tasted! However, what really made the dish was Del's partnering homemade salsa, which consisted of red onion, fresh garlic, chilli, fresh tomatoes, red and green peppers, balsamic vinegar and paprika puree. Gorgeous, and there's one left over for tomorrow's lunch!:)

Since the BBQ had been lit, we also decided to cook a spatchcock'd free-range chicken for tomorrow night's tea, which had been marinated in various fresh herbs and spices, so this is it:

Today's meal was complimented by a rather nice bottle of Portuguese red wine, which I picked up from Aldi (only £7), but which was absolutely delicious and complemented the steak beautifully:

Us Europeans have a strict rule: only one type of carb is served with meals at any given time [so if there's chips, there's no bread, if there's rice or pasta, there's no chips - you get the idea], and butter (on bread) isn't seen past breakfast time, until again the following morning.

I like green beans, snap peas a lot. a bit of spinich too if cooked right. salad, na!, thats for rabbits.. tomatos are great, especially home grown....I miss my greenhouse a lot... peppers too are delish, also carrots.. Usually steam veg to keep the nutrients in and they are sweeter too.
Fruit is usually rasps strawberries melon mango pineapple...are my favs.

Nah, not at all. That's probably because you've never had a really good one! Unfortunately, the UK is about the worst place for salads...

A few bits of limp lettuce, soggy cucumber and watery, tasteless tomato (because it's not been properly ripened by the sun, so is more acidic than sweet], devoid of any dressing, does not make a salad. I could do you some that would blow your mind... Remember too, that a 'salad' doesn't need to consist of lettuce!;)

And at this time of the year, salads compliment barbecued meats really well. Done right, you don't know what you're missing!:ner:

In terms of veg, what about broccoli? Try it stir-fried with garlic, ginger and soy sauce, or asparagus. Both are extremely good for you:)

Absolutely, and the quality of the lettuce itself has a big impact on the taste... The reason why the majority of lettuce sold in supermarket tastes of hee-haw, is because it's DEAD. You need to choose the LIVING varieties, which are still growing and packed full of nutrients, and therefore tastes of something!

This is what we buy from supermarkets (but prefer to get similar from a greengrocer or farm market): https://www.sainsburys.co.uk/shop/gb/groceries/sainsburys-living-salads

And this is what REAL lettuce leaves look like, and what REAL salads are about: https://www.livingsalads.co.uk/

Those are the only leaves worth eating [not the shite sold in bags], and seasoned properly with some rock salt and freshly ground black pepper, then liberally drizzled with extra-virgin olive oil and white or red wine vinegar [cider vinegar is a fav of mine], all tossed together, tastes simply wonderful.

I wouldn't touch salad cream with a bargepole. Good quality mayo [not low-calorie shit] or sour cream is the way to go, if you want a creamy hit.

I'm having some of those leaves today for lunch, prepared as outlined, with the chargrilled chicken I showed earlier. It's another cracking day here, weather wise, so it'll be the perfect outdoor lunch later:)

Lol... No, of course not. I'm talking about on bread. In most parts of Europe, butter (on bread) is a breakfast thing only. At all other times, bread is eaten without it, usually on its own or rubbed with some garlic and sprinkled with a bit of olive oil and salt.

Next time you're having lunch in a restaurant in Italy, try asking for some butter, along with the bread that accompanies their pasta dishes, and see the looks you get!!:eek::nono:

But then, we don't eat 'UK sliced loaf', sold here in supermarkets, which is an affront to REAL bread [instead ciabatta, baguette , or some other form of locally-sourced thick crusty bread], so there is no need to butter it, in order to make it worthwhile eating:eyebrows:;)

Went off it myself. Don't mind a bit in with cauliflower cheese, but otherwise no.

Same for sweetcorn too. the only time I eat it now is with a salad.
