Nowt special for us for tea tonight really... Just some cod pieces in home made breadcrumbs (huge bag in the freezer full of them) and the last of the Duke of York 'new' potatoes and sprouting broccoli. Some home grown carrots in there too ;)

They're bloody lovely TBH. Cannot beat spuds and carrots \9or any root veg) straight out of the soil, washed and cooked and on to your plate ;) The carrots are properly earthy; you don't get that from the supermarkets!

First addition to my repertoire was cooked last night: Parmigiana - basically sliced aubergines, mortadela meat, tomatoes, parsley, two kinds of cheese (Pecorino Romano - a hard cheese from sheep - and Parmesan).

Trick I picked up was to coat the slices in egg and flour and fry till a bit crunchy... when I tried this dish before with aubergine slices on their own it went mushy. This held together beautiful and the flavour benefited too.

Good choice! This is one of my personal favourites and was one of the first Puglian dishes I learnt from my sister's mother-in-law in Presicce. These days, I use fine semolina to coat the aubergines before dipping in the egg, makes them extra crunchy! :-)

Reminds me of the time I was visited by my sister and her brood from Motherwell ... I made tempura prawns with various dips, along with katsu curry (coated fried chicken and rice with a curry sauce poured over).

The comment made? "We didn't know we liked Japanese food".

But tomorrow; the whole of the wife's family are around, 12 of us, so it's shin beef stew with a huge pan of steaming buttery mash and home-grown kale and carrots steamed ;) Damson and apple crumble with lashings of vanilla custard to wash it down

I've topped up the red wine stock too; plenty of ale in and a few whisky's for the gents as a digestif ;) :D

Will get pics up tomorrow; I'll be up at 7am getting the stew on so it's in all day! ;)

*All fresh homemade except the Falafel.

Lol...! It looks very good indeed Tom, so top marks::clap:

A couple of points.... Yes, the aubergine should be fried, but only lightly (with a dusting of flour) in a little olive oil, with the aubergine cut no thicker than a centimetre. Personally, I wouldn't use egg, as that tends to make things thicker, and the overall dish heavier, still tasty though!

However, I prefer a slightly lighter touch, so would griddle the aubergine (once dusted with flour and olive oil), in a griddle pan instead, without the use of egg, rather than frying it, as aubergines suck up fat like no-one's business, and I wouldn't want the finished dish to be greasy, then layer it with the tomato and cheese.

It depends on how filling you want to make the dish, in terms of whether it's going to be served on its own, as a main course, or simply as an accompaniment to a meat dish. The addition of Mortadella (two l's, lol) is definitely a Pugliese thing. We wouldn't use it that way in Tuscany (as when the fat's cooked, it makes things oily), although we do enjoy eating it cold, as part of an antipasto.

As ever though, cooking is all about adapting recipes to your own taste, so add whatever you like, if you enjoy it:cool:

I did manage to have a couple of vineyard trips. Mixed case of Negroamaro and Negroamaro Primitivo on its way from Taranto as we speak ... last in Dusseldorf according to DHL. Should arrive Monday or Tuesday. But this bottle was waiting for me in Waitrose when I got home.

Yes the egg + deep fry (actually I shallow fried but outcome much the same) was a concern so I'll give your suggestion a go next time. Yummy though and served as main dish.

Long term plan is to move back up that way Marco, in fact, we looking at buying a ‘stop-gap’ property on the Wirral within the next 6 months hopefully. I’m sure we’ll have the opportunity to hook up on the food and sounds [emoji106][emoji4]

No worries. Try the griddle pan route next time and see what you think, and lose the egg. It won't be quite as rich, but you'll probably taste the aubergine more. Puglia has both some lovely wines and great food, but southern Italian cuisine is quite different from that found in the north, which you'll discover if you ever do the same thing in Tuscany;)

Haven’t decided what yet but the dough is in the fridge and the tomato sauce is cooking as I write.

I’m thinking I may do a lasagne (mainly because I’m too lazy to make anything else) [emoji23]

Went quite well for a first in ages.
Pasta turned out but was probably not best for lasagne, as fresh tends to turn mushy in this dish.

Kallo do a better liquid beef stock I think.

You can freeze stock, you know, so that you have access to it if need be! We freeze ours into ice cubes, which can then easily be defrosted and used when necessary:)

I made a beef goulash soup but I messed it up by using Knorr beef stock, the liquid one. Me no likely that stock. It's edible just not great. The recipe doesn't really call for it.

Kallo do a better liquid beef stock I think.

You can freeze stock, you know, so that you have access to it if need be! We freeze ours into ice cubes, which can then easily be defrosted and used when necessary:)

The trouble is I drop it into a cast iron pot at 240 degrees C. There's not much scope for moving it once in if it lands off balance.

Really need a cast iron skillet that doubles as a pan, so you can put it on the skillet and cover with the upside down pan. Don't need to drop it in then.

Will get one some day.

Can't get a decent fish supper in the soft south. The seem to think a thick lump of cod in soggy batter qualifies.

Not like Lanarkshire where if you ask for a special fish supper you generally get two pieces of lovely haddock in breadcrumbs.

I miss the other stuff you get north of the Border in a chippie as well ... haggis, black pudding, pakora ...

However, I've found one locally, run by a guy from Coatbridge, and he only uses fresh fish, not frozen muck, like most of the bollocks places here do, and the batter is so thin and crispy. He even sells haggis and black pudding!:)

A good idea in the chippy is to ask for a fish they have to cook fresh for you, usually haddock or plaice, always much nicer than some baggy old lump of soggy batter that's been sitting in the warmer.

Yeah, I'm a big lemon chicken fan (done well). The food was much nicer and less than half the price of a takeaway!:)

You can only do it right though, if you buy stuff from a Chinese supermarket, as you can't get the proper ingredients in UK ones. Do you like all ma wee bowls and stuff?:eyebrows:

Salt, maybe some linseeds ... milk or unsweetened almond milk in my case but only after it’s cooked). Nothing sweet should ever go near a plate of porridge! I was at a meditation retreat a while back where it was boiled in milk and then honey added. Utterly foul.

But a touch of salt in porridge is a must; it opens up the flavour of the oats and you cannot taste the salt at all! It's a mere pinch ;)

I'm not Scottish either, but I love porridge, have it every other day for breakfast.

When I was eleven I stayed at a youth hostel at Newlands just outside Keswick with my class from school. At breakfast all the spoilt brats who were used to 'posh' cereals like rice krispies and coco pops wouldn't touch the porridge, so I got seconds and thirds of the stuff every morning. I'd have been fat as a fool if it weren't for all the fell walking.

Then when I was thirteen I stayed at a farm in a place called Skene, just outside Aberdeen. Every morning it was porridge, with salt in it, and no sugar allowed. It was just plain wrong. :(

One of my favourite breakfasts back then was melted Emmental cheese, with baked beans, served over a nice slice of crusty Italian bread. In fact, I must relive that experience again sometime soon!:)

I love my grub, as you can probably tell from this thread, but I'm not sure I could eat as much food as you're currently putting away.

When we go on holiday, we tend to have 'splurges' of big meals, and then switch to salads or sandwiches for a few days, as we quickly get fed up of eating rich food, day in, day out - plus we do a LOT of walking and exercise in between meals. Otherwise, you just feel bloated and uncomfortable:cool:

Looks really good, Roy, and I can see why you'd have gone for something so typically British, after where you've just come back from;)

It's the same with me, returning from a 3-week holiday in France and Italy... As lovely as French and Italian cuisine is, I'm dying for a good Chinese or a curry!!:D

It's been in since 9am at 100ºC; just made the batter for yorkies too; spuds/golden beetroot and swede peeled ready for par boiling and roasting and we're on steamed home-grown kale, cauli and probably some carrots too ;)

From my slow cook over the weekend. Spuds were done using a mandoline to get an even thin slice, like very very thick crisps. Then mixed with garlic oil, salt and pepper, with a few sprigs of rosemary, then into the oven. Kale was steamed, carrots fished out of the slow cooker.

Slow cooking juice was sieved and finished with cornflour and butter to make the gravy.

Got caught in that this morning, luckily made my flight as the taxi driver had picked up on the situation and came in via Ascot/Egham rather than M3/M25 which was a car park the other way but messed up my direction too. According the BA lady I was talking to loads of people missed flights.

Plenty of that left. Freezes well.

Made last night eaten today. Looks crap cold. Tastes great cold. And hot.

Seriously though, 600g beef 400g pork mince plus back bacon is a nice, lighter tasting Bolognese. Red wine, fresh plumb tomatoes blitzed, garlic, basil, coriander,.mushrooms, onions, carrots, beef stock cube, chilli, Worcestershire sauce, black pepper, bay leaves and Grand Padano cheese is about it.

Made a Picnic Loaf with bits that needed using up. For tonights meal and lunch in work tomorrow.

Wheat/Spelt/Rye cob with a filling.

from the bottom up:
Ham
Sundried tomato
Fried (in olive oil) aubergine
Shallot
Roast aubergine
Hard boiled egg
Black olives
Pastrami
Gherkin
Basil leaves
Pecorino cheese
Red Chilli Pepper
A few good glugs of very good Olive Oil
A few glugs of balsamic vinegar

Then wrapped it up and pressed it for an hour and a half.

Home made pea & ham soup with a hot pork pie in the bottom of the bowl ;) :D

A friend of my father’s used to serve up proper Yorkshire pie and peas, and this sounds very similar. Bloody lovely it was, too.
