Did you use a flash to take that? If so, shame, as it makes your lovely crema look horribly synthetic! Or if not, there's something not quite right with the lighting. Compare that with the previous shot, mate.
Whatever you do to make your crema look lovely and brown and rich, in terms of lighting/use of flash/camera angle or whatever, is what you need to do *every* time you photograph your coffee:)

Lack of natural light and no overhead. Should have taken it in kitchen really. It's the Italian blend I'm using Quite nice it is and gives just enough crema. Might end up keeping this as a staple
After saying that the crema is slightly browner than orange but fine in my book. Ive got a kilo of stuff so be ok for a while lol
No worries, mate. Hope you haven't taken it the wrong way... It's just that most of the time your coffees look sensational, and for me it's a shame when the photographic/lighting arrangements spoil that effect:)

I've had it happen to me before mate, when photographing food... Lack of natural light and/or flashes strip the warmth from the look of what you're photographing, and make it appear somewhat insipid.

Well I have to say I'm underwhelmed by two of the three Coffee Compass roasts so far, the Brazilian (Brazil Ecoagricola) and Costa Rican (Costa Rica Don Alfonso). Both are quite light roasts and not bursting with flavour, the Costa Rican is very smooth with very little acidity, so it's a pleasant easy drinking coffee but it lacks the punch of a good Columbian bean. I have one more to go, an Espresso blend so hopefully that'll have more flavour, but I won't be buying either of the first two again.

Yes agree, they've had two weeks now but they may improve with a little more resting. I can't complain really as they were an offer, 20 quid for 1.5kg isn't bad, maybe they were inundated with orders and paid a bit less attention to the roasting?

I am familiar with that Tesco Columbian you like.
So try Taylor's of Harrogate Cacao Superior Columbian. It is rich and gooey and not at all bitter. I keep seeing it in Sainsbury's for £3.50 but usually it is £4.50.
Their Praline one is good to very good sometimes.
For £3.50 I think it beats the Tesco jobbie by a long shot. But for what you have said try the Cacao.

I'm just finishing off my Brazil Sao Marco from Rave today and tried it with 2 mins brew time instead of the usual 1 min. Your previous words on the subject must have seeped into my subconscious as I'm very happy with the results. Delicious at 1 min but the extra brew time really suits as you get more depth without killing off any of the subtle notes which often happens. It's an exceptional coffee. I really look forward to buying it in beans and grinding my own in the near future ...

Interestingly there were oodles of their other beans there, but seems there had been a run on the Cacao Superior Columbian, which I took as a good sign . . . maybe someone else has been reading this thread?
Anyhoots, I really like them, I'll have to do a Pepsi challenge with the Tesco beans, but these might just pip them and could become my new go-to bean. Top man :thumbsup:

There is quite a bit of buggering about you can do with an Aeropress to improve the end product, but brew times and water temperature can be key if you can't change much else. I tried all sorts of combinations, till I got what I liked and is part of the reason I like to stick to a consistently good bean, as everytime you change you have to go through the whole trial and error process again. Bit like fecking HiFi and I can't be arsed with buggering about with that once I'm happy either, I just want to play music.
I might just try those Rave Sao Marco beans though.

You get the idea tho. Nice the way the milk combines with the crema. It's a lot to do with the way you pour the milk
Yup, defo get the idea, and also agree about much depends on how you pour the milk, as indeed I've discovered myself. Plus, frothing never comes as good as it does with brand new, fresh milk.

I like constant change I guess. But I do return to certain supermarket coffees quite a bit. It is just so much cheaper than the mail order companies and some of it really is quite drinkable. An awful lot of crap on the supermarket shelves though. You need some degree of wisdom.

Good looking grinder. Using a sage smart myself now as my neck was stopping me using my beloved hand grinder.
I am skeptical if I am really going to achieve anything by buying one. I have a pretty good Ascaso burr grinder and the only reason I am going for this is the relatives are contributing to an Xmas present for me in cash via my wife.
Can't really think of much else I want, though this will cost me, too. Its better than getting an unwanted load of junk for Xmas, though.

I view it as a bit of a £400 grinder in a £400 coat but looks do matter to a fair extent when it's sat next to a stunning looking machine.

Had a house full of visitors this weekend, and did something fun: made a big pot of Neopolitan flip pot coffee (strong brew, like moka pot); let it cool and poured it into an ice cube tray and froze it; dropped one frozen coffee ice cube into each of a bunch of low-ball glasses and poured in a good shot of Baileys. As the ice cube slowly melts it infuses the Baileys with the coffee... Delicious! Everyone loved it. We nearly emptied a 1.5 litre bottle of Baileys doling these out.
Tried it last night again, but with Sambuca...also delicious!
Anyone with a moka pot could easily do this too, but I used the flip pot as it makes a big batch of strong brew in one go.
Let me know if you try it. Enjoy!

A couple of hints:
- don't make the frozen cubes too big, as they will only be half-melted before the Baileys has been downed, requiring a top-up....quick way to drain the bottle :cool:
- to avoid Justin's wide-awake drunk syndrome, make it with decaf...I used some inexpensive pre-ground decaf espresso from our local Italian grocer...tasted great.
PS -- that Merlyn looks like good stuff! Did a search, but not to be found in these parts. I guess I have to come to Wales if I want a taste :)

The Rocket is quiet.
The Ascaso to the right in the pic is very decent TBH. Very solid grinder substantial aluminium chassis and not expensive. Been fine for years.
The Rocket is a lot nicer, though. But then it bloody well should be.

The Fausto grinder is made by Conti Valerio for Rocket. I have to say the build quality is noticeably superior to the Rocket Giotto to the left of it.

supposed to be a 54mm basket but thats the outer diameter not inner. im guessing a 51/52 would be needed

Had Finca beans from Rave. They were quite nice. I have got myself in a rut now and using their Italian blend, which i really like

Considering the light to medium roast the flavour is surprising. This sort of taste usually comes from a darker roast.

It does, yes Justin... Not a bad machine, and auto self flushes with cold water to control temp etc. Steam wand is excellent.

It is better at consistent dosing i.e. I can get almost exactly 18g in the portafilter in one timed grind. But that really isn't that critical +/- 10% is alright I reckon for my purposes.
Strange though it may sound I am happy with it. Tis a nice thing:)
never weigh mine. i know how much i want in it and its now timed.. think its about 14/15 secs grind time. comes out slightly warm compared to the manual one but not excessively.
14.6 secs into a non pressurised double portafilter. a 27 sec pour usually

Shots around 30-40 secs. Some times 50. Too long many would say. Super fine mousetail style. I tend to go slower rather than quicker. Seem to get a better result that way.

my basket is double so probably more than 18g in it. i did have it finer and had a pour like yours, but it was a bit dark and over extracted for me
Mine is double.
Don't forget I am using a double shot into a thermos full of milk most of the time. I need a strong shot.

It looks like you get way more crema using one of these. However, I believe you get way more aeration as after the shot is poured you are left with around the same amount of crema after you let it settle.

It is fine. It is very consistent and much more finely tunable than the Ascaso without guessing where you need to set the grind fineness when changing coffee. So getting it right is much quicker.
The bottomless takes more coffee. So I need to set the single grind time to match the bottomless, and the double to the ordinary pf.
I virtually never use the single shot pf I have.

Very nice Justin, Grinder looks the biz too. You need to set the grind so that when you make an expresso it takes 20 seconds to run through to produce 30ml coffee then you know the grind is the correct size.

That Giotto looks familiar :). We have one too. Wonderful machine. Ours looks a lot older than yours, pushing 14 years now but still going strong. Needs the odd repair but bombproof machine. Your grinder is a heck of lot more high tech than ours...nice! Ours is a basic Macap, on-off switch and that's it.
My brother had that same Ascaso as yours, but could never get good results from it. He eventually traded up to a Macap.

Have you looked at pics of the innards of similar machines compared to the layout of the Giotto? Others are a holy mess of wires and tubes and pipes; but the Giotto is clean, tidy, spare, neatly laid out...beautifully designed.
I was tempted to convert ours to PID but the tech at our local shop (John at Faema Toronto - great guy) talked me out of it. Can't recall what his reasons were, but he made a convincing argument as to why it wouldn't work. So I have to live with the crappy pressurestat.

OK, you were right - it's delicious! Used it for our Sunday morning lattes, and didn't tell my wife..."Mmmmm! Yum! What's in this?!".

Um...correct me if I'm wrong, but I believe ECM and Rocket are the same company(?). Name changed to the latter quite a few years back already.
Ours is an ECM Giotto, 2005 model. It's now known as a Rocket Giotto...same machine, with some updated parts.

Hmmm...interesting. Your Synchronika is not shown on Rocket's site, but pops up at ECM.de, a German firm in Heidelberg. This is all new to me...I thought ECM just changed their name to Rocket and carried on. I will check it out....curious now...

I learned a little from a quick web search.... The original ECM, Milano, seems to have declared bankruptcy in 2010. After that it looks like Rocket bought their technology, machine designs, and possibly the whole factory (not sure on this), and carried on making the traditional designs - Giotto, Cellini, etc. ECM Germany seems to have secured the rights to the name, ECM, and started (or was already) making similar types of machines. I don't know the details, and could be wrong on a point or two, but what is clear is that my machine (2005 Giotto) was not made by the German ECM, but rather by the original ECM Milan.
To confuse things more, I think the ECM are designed in Germany and made in Milan.
Either way, they are all good machines, but things like the stainless boilers swung it for me.

So right, Marco. Eye-opening, for sure, to have (finally) tasted milk the way it should be. This will be for weekends only, though, as it costs 4 times more than regular milk :(
But...my wife is friends with a few local dairy farmers in the area (long time team mates in a sports club here), and she is going to ask if they'd be willing to let us have some :). We already get our eggs from them, so this might be doable. Never occurred to us to ask before (doh! :doh:). Hope this works out.

Unfortunately, they tasted like junk. Unsurprising. Sure make you think the grinder is great when you first get it, though.

My colleague knocked over and broke my work cafetière just before Christmas, and my sister gave me an Aeropress for Christmas to replace it. It takes a bit of practice to get the technique right and I find the ‘inverted’ method gives much better results but, overall - thumbs up:thumbsup:

Try the above, Jim (Grant or anyone else), just use a touch less ground coffee in your machine than normal, as the flavour of these beans is more intense, (you may also have to adjust the grind a little too, as the beans a little bigger than norm) and I guarantee you won't be disappointed!:cool:

Try the above, Jim (Grant or anyone else), just use a touch less ground coffee in your machine than normal, as the flavour of these beans is more intense, (you may also have to adjust the grind a little too, as the beans a little bigger than norm) and I guarantee you won't be disappointed!:cool:

I don't normally buy blends, have just ordered a 1 KG bag of this on Boss mans recommendation , Better be good or the boys will be round ;)

Lol - 1kg of beans lasts me about 3 months! But then I only drink one large cup of cappuccino a day...
When you guys open bags of beans, and use some to make coffee, do you immediately pour the rest into large airtight containers, or just seal up the bags? I always do the former:)

i used to top mine with inert gas to keep oxygen off them :eyebrows: but the gas became expensive to a point its cheaper tossing whats left of the bag when they dont taste as good.

used the gas with kilner jars. worked well, but if you add up cost, its cheaper buying a big bag and disposing of when its past its best, if you havent drunk it all. reckon a kg lasts about 4/6 weeks depending on usage so not bad value

I only make a small opening in the bag , when I use some I squeeze out the air fold the top over several times then stick it down , Works for me :)

Not really. It might be in France, but in Italy (especially in households) it's served during the morning in a traditional wide-mouthed cup, so folks can dip their thick, crusty bread in!:)

Yes, that's correct. The only difference is that latte is milkier than cappuccino (the ratio of milk to coffee is higher), but in Italian households either would be served with breakfast in a large wide-mouthed cup, such as shown above. The tall latte glass I posted a picture of would only be used in bars and cafes:)
Basically, in poorer households, a milkier coffee would be taken, as milk is cheaper than coffee beans, so making proper cappuccino, which uses more coffee, would be more expensive and considered a luxury.

Not sure I'll ever be enough of a coffee connoisseur to sufficiently care about such details, but who knows?:)
As long as the beans are fresh when I get them (as in not off/past their sell-by date), that's what mainly matters for me.
Like Justers though, it'll be interesting to see what you think of the taste. Those are different from the beans I'm using, but from the same supplier, and if they taste anywhere near as good, you'll not be disappointed.

not bad, but a bit dark. ive mixed it 50/50 with my italian blend and see how that comes out.
Looks nice and rich... What's the blend? Being so dark, I doubt it's pure Arabica. Did you remember to adjust the grind a little and reduce the quantity of coffee that you'd normally use? I find that the flavour/colour you get from Coffee Masters beans is more intense than normal, so you need to use a little less ground coffee per cup.

I've just checked the roasting date on my bag of Coffee Masters Exclusive Master Blend beans, which are pure Arabica... It was 15th December, which I received on 3rd January. So I suspect that you got a rogue batch - maybe getting rid of old stock?
If you order again, I'd message the seller, and mention that you want the beans with the latest roasting date possible. I'll certainly be doing that next time I order, just to make sure I don't get papped off with 2-month old beans!:)

Been enjoying Extract's Dr Strangelove, as per posts above. However, every single one I have made tastes different. Good to very good, but different.
As neat Espresso (no milk) straight out the pack a few days ago it was very nice indeed. I think it is starting to settle down now.
This is the problem with really freshly roasted beans. They really do need time to settle, as I have said before.
It remains to be seen whether the rest of the different coffees from them maintain this sort of standard.

Ah yes, it'll be the Robusta giving it that darkness, and also a touch of acidity. I've had that mix before, from Coffee Masters, and can say with certainty that the Exclusive Master Blend variety (100% Arabica) of theirs is much better!
Main thing is that the 2-month old roasting date you got isn't the norm:)

Just opened my bag of Coffee masters Blend Beans " roasted 23/11/18 " had a first cup , Will need time to adjust to the flavour , Has a slight bitterness , seems to have less creamer ( If thats how you spell it ) , strange smell ?

was 40% the new ones, 60% my old Italian blend.. was better than before. will try a 30/70 split next time just to see. always worth blending beans, even blending blends..lol

Go single origin if you doubt it, Marco. Just read the descriptions to determine which are.

I think you would gain a lot from it.

The best way to see if it is close to their description or not is a neat Espresso shot I reckon.
If it smells like coffee and tastes like coffee chances are it's coffee[emoji23]
