New Bialetti Moka pot has arrived. Love these, in between drip coffee and espresso in flavour. Made in Italy since the 1930s... Under £30 on Amazon for this “9 cup” model, which is 2x British mugs. ;)
Am brewing using Lavazza Red today.
Good stuff, Neil. I use a slightly smaller version of the same machine - used right it can produce great results:)
If you'd like a few tips on how to get the most from it, let me know, as I've picked up a few little things along the way... Are you just using it with pre-ground coffee or grinding your own beans? The latter is where it's really at!:cool:

I hand grind using a ceramic burr Hario grinder. It’s excellent (when modified with a fixing to resolve the floating burr issue) and a workout for free... what sort of grind size would you suggest?
I pretty much settled on two clicks anticlockwise from the 'zero' position, but of course it depends on bean size, and also to grind nice and slowly, using even strokes, so as not to 'burn' the beans and create a bitter flavour.
The most important things I've found to do, in terms of getting the best results from the Bialetti, are as follows:
1) Always pre-boil the water for filling the 'tank', rather than using cold water from scratch, in order to prevent, as much as possible, the resulting coffee produced from being 'boiled' for too long under heat. You want the pot sitting on top a hot stove for the minimum amount of time necessary.
2) Get as much (boiling) water into the tank as possible without it bleeding through into the coffee grinds. You want the level to sit *right underneath* the recommended 'nipple point' inside the tank/reservoir.
3) Get as much coffee into the filler as possible, if you want to create a nice 'thick', dark and rich tasting espresso-like coffee, which is what you should be aiming for. Neapolitan Moka pots are designed for producing STRONG coffee. If you don't like strong coffee, or prefer something 'subtler', then use a filter machine or cafetiere coffee pot, with a 'French Press' bean grind.
I've measured the quantity of coffee out in grams, in order to produce the results I like consistently, and do that every time I make some. You get better results with a *slight* amount of tamping/pressing down onto the grains with the blade of a flat knife or spatula, and smoothing off any excess, before popping the filler into the water tank (already filled with boiling water).
Then screw the top of the pot down onto the bottom water tank, *AS TIGHTLY AS POSSIBLE* and begin the heating process on your stove. You want to maximise the amount of pressure that the resulting coffee is produced under.
4) Better to bring the coffee to the boil slowly/gradually, than quickly, therefore always select no higher than a medium heat-setting on your stove. My control goes up to 10, in numerical steps, so I select 5. If you've got the mix right (coffee-to-water ratio, plus grind level), when the coffee begins to slowly 'spurt' into the chamber, it should create a slight froth/crema. If that doesn't happen, you haven't used enough coffee and/or the grind level is too coarse, and the coffee will taste weak.
5) While heating, keep the lid closed on the pot *only* until the point is reached where the first signs of coffee come through into the reservoir/chamber. Once done, lift the lid up for the remainder of the process. This markedly improves flavour, as you don't want liquid steam dripping into the chamber and diluting the coffee, which is what happens if the lid is left closed throughout the heating process.
6) Keep pot on the stove, and onto the heat, *only* until the coffee starts to 'spurt' vigorously into the chamber/reservoir and has filled it up. As *soon* as that happens, lift the pot off of the stove immediately and turn off the heat, then run the base of the pot/water tank under a cold tap, in order to halt the heating process. If you don't do that, the coffee will become overheated and taste bitter.
7) Finally, stir the coffee liquid inside the chamber/reservoir, before pouring into a cup or mug, in order to combine the mixture throughly. This also improves flavour.

Nice one, Neil. Out of interest, what made you go for such a large capacity machine? Do you have a big family who all drink strong coffee? If not, 9 cups is a lot for one (or even two) people to drink in the one go, and for the machine to produce the best results, the filler needs to be full to the max with coffee.

It isn’t as big as you think... it’s 9x Italian / espresso cups. Or 2x regular cups. I think it has around a 550ml capacity.

Okies, cool. That looks great, and pretty much what you want. How did it taste compared with what you're normally used to?:)
However, just looking at the consistency/thickness of the crema, you *may* benefit further from either reducing the grind slightly, making it a little less coarse, using a *little* more coffee and/or tamping the grinds down *very slightly* more. It should be a little thicker/gloopier.
Also, although you may like Lavazza Red, you can do MUCH better on the beans front!;)

Another wee thing, do you guys (Gaz and Neil) heat up your cup or mug before filling it with coffee? That makes quite a difference in terms of how long the coffee stays warm for.
I always boil some water and fill my mug up with it, and let the water sit there, while the coffee is being made, then empty it out just before pouring the coffee in:)

I had a cheap electric grinder (blade) which was about 50 years old which was fine until my ex burnt it out on some bread. I was looking for something similar but can't find them now.
That one seems to take a long time to grind the beans.
It's a trade-off, Ray, between convenience and results. If the former is most important, then go for an electric one, but at the budget end of things your coffee will taste markedly better with a hand-grinder.

yup, was an issue with the usb drivers i think.. got a blue screen so it must have tried an update overnight.. i thought i had it set not to but obviously it ran out..time does fly in lockdown mode

I ordered that one from Amazon, went to grind some Lao coffee beans up but when I opened the box it had an EU plug on it. Very annoying and took about 30 minutes with Amazon to get a return label. They were saying it was supplied by a seller so was not their property, even though they supplied it, so they can not exchange it. Anyway I have the return label now, so I will send it back for a refund and re-order it from Amazon, but the price has gone up now.
The blade looks similar to the old grinder I had before. This is also made in China, I thought it was German. Difficult to get away from made in China. Had the same on a "german" cable.

Thanks, it's no big deal but just rather annoying. I will reorder so should be here in a few days. I will return the other one when I go out shopping on Wednesday.
I wish items had the country of origin on them, it is far too unclear on some items. I would avoid Amazon as well but difficult to get some things elsewhere and no big shopping centres near me, Norwich is the nearest but that's 30 miles away and parking is a nightmare.

i would wait til you get it and measure the inner size as they often aint the size they say, for a start.. a normal decent quality tamper is fine imo. heavy tamp pressure is ok if the coffee is right grind and machine can handle it, which most cant. trial and error is best.. dont over finely grind coffee initially. then tamp it with reasonable pressure.. maybe 15lbs.. the adjust from there til you get it right.
book says mine is x size but an x size tamper doesnt fit, hence id measure it first. 20, to 40 should get you a nice one
Ok, noted on the measuring thing. I remember you mentioned that before, so will defo measure the inner size first, or perhaps the size of the plastic tamper that comes with the machine, as I presume that'll have been made to fit it?:)
What do you think of that 'HI OCD' one? I love how it works, and if it fits ok, surely that would give very consistent results, as indeed would a calibrated device?

I saw those, but it says you still need to use a tamper *as well* as that, and for me that's too much.
I liked the HI OCD, because of the screw down thing, which seemed to do a good job as an 'all in one' device. Or there's this which seems very well regarded (quite like the adjustable depth angle):

tbh imo although tamping is important, too much is made of it. getting a good grind level where the water can pass through at right speed is easier and more regularly important thant tamp pressure as you will get a feel for that even with your eye.
there has been a few scientific test which have shown that a rougher grind than many "ibaristas" use produces better coffee.. ive been using this method for a long time and its served me well; it was nice to have it proved tho...imo better slightly rougher than too fine when using most machines under 2k anyways.
also a good mix of beans is important as youve found.. adding just enough of the crema making ones to the flavour making ones gets you reliable results with minimal mucking about.. i only have to adj grind slightly with a single bean change if at all as im using several beans.
when you use all the same then they will change next time you buy most likely.
its a lot to get used to but like fitting a cartridge it soon becomes so easy you can do it blindfold
Interesting about the rougher grind, so I'll bear that in mind. I still have to experiment with that too, as it'll likely be different than with what I use for the Moka pot.
In terms of the tamper thing though, I do like that PUSH one, and having watched the video it looks dead easy to use, plus they also do one in red to match the Smeg!:)
So... If once I've measured the basket inner size and it'll fit ok, I think I'll get one of those:cool:

by rougher i mean rougher than the standard espresso grind, although not a huge amount. it will be finer than the mokka pot for sure as its happening quicker.. maybe 30 sec top.
its fun to learn so trial on a cheaper coffee is wise. but you might hit it off very quickly so just play it by ear.. some folk never get it right mind:lol:

Given my perfectionist nature, however, I would like to become half-decent at it, and eventually be able have an attempt at some latte art. I've pretty much mastered now how to get the best coffee possible from a Moka pot [I know, different thing], but even with something as simple as that, with experience there's still lots of things you can pick up, which you'd never learn otherwise.
Anyway, I'm looking forward to having a play and making some drinkable espresso!

a pressurised basket in fore has fewer holes and pressure is built up in the basket/portaflter.
the basket with lots of holes is sames as a naked but there is a bottom on the portafilter...
its also called dual wall as it has lots of holes at top and a few on bottom wall
first is hardest and the pressurised is easiest but not best

Do you use a coffee distributor? Word is, they're supposed to offer a notable improvement, plus also be instrumental in ensuring that the flow is optimised/evenly distributed.

I don't tbh but not sure I agree with his statements either. You don't go deep to foam, although deeper than froth, and deeper later maybe depending. Don't agree re milk age either lol.
Still I'm sure he knows what he's talking about. I've steamed older milk fine. Sometimes better than super fresh.. Obviously you don't want it near expiry tho. Tbh lactose free stuff steams better imo. Full fat is easiest.
Best advice is watch someone then just practice. It will become obvious the first time u get it right, and you'll wonder why it took you so bloody long [emoji23]
You want tip just under surface with the jug at an angle towards the spout. Move the just to side to get a vortex started, and keep surfing just under surface. This means altering pitcher depth constantly and if vortex is too strong, reducing both pitcher angle and position towards centre. Keep dropping pitcher as milk rapidly expands. You should get a nice slightly throaty noise when it's stretching.
Once your getting volume up to double original, and also checking temp doesn't get above about 66c, you can if needed stop the expension and keep heating but stopping vortex and dipping wand deeper.
Give pitcher a few swirls and bangs on counter to improve gloss and break up any big bubbles.
If there is a little froth on top, skim it off.

Cheers, mate. I think it suits its surroundings. I wanted something that looked retro cool and stylish, as we both love classic 1950s design. Basically that area of the kitchen is used solely for me to prepare drinks, which can be speciality teas, coffee, soft drinks, or something more alcoholic - usually cocktails!:D
Had no idea about the "froth assist", so what does that mean and why would it make frothing easier?:)
Gotcha on the microfoam thing... No idea yet until I use it, and I'm prepared to put in plenty of practice to get the milk steaming/frothing right! So far, it ticks the looks box - now I just need to see if makes good coffee!:cool:
Quite pleased also with the quality of the relatively low-cost accessories from Amazon.

well it's easier to make froth as it does a lot of the work, but it's harder to make great foam. Not impossible tho. I had one on my dilonghi machine
forgot to answer the question.... auto frothing steam lines ...these wands work by automatically injecting a small amount of air into milk as it's heated and swirled in a pitcher. the mixing of milk. and air takes place within the wand, rather than on the tip surface/milk surface.
Ah gotcha (on both counts) - will bear that in mind:)

Yeah, remember I'm using the Lido separately, so will be pouring the coffee grinds in from its reservoir...
For £7.95, and nicely machined/finished in aluminium, it seemed a no-brainer:)

Yeah, but (apparently) also a very capable grinder. One thing I won't be doing is buying an electric grinder on looks alone - it would have to produce professional/consistent results, at least as good as the Lido!:)

Beans although not changed, the amounts of each have so a few adjustments to grind and tamp.

Cool stuff... That looks great.
To my eyes, the coffee (and milk froth) has a lighter, silkier consistency than usual, still lovely and rich looking, just a bit less 'gloopy', for want of a better word!

Yup, mate, so many variables... One thing that's massively important though for taking good pics is getting the light right. I took extra care yesterday in that respect, when photographing the Smegster, and think it paid off:)

Bear in mind though, and I suspect that this will be significant, that was made with the same grind settling I'd have used for the Moka pot, as I was using up some excess coffee I had to play around with, so I wouldn't waste my good stuff!:)
So, what's the best way to go again, mate - a coarser or finer grind for espresso?

looks very decent.. dont worry too much re black spot; its just where its been pouring and depth of crema isnnt huge. Maybe add a little extra robusta in to help..not much tho.

Cheers - it tasted bloody good! Pretty fast (but controlled) pour, and nice and even. Noted about the Robusta.
So should I make the grind more or less course than I had it for the Moka pot?

finer a little in stages, also ensure its properly tamped. were you using the single filter or double?
Single, as it was a small espresso cup, and tamped down only with the distributor, not distributor and tamper, so fairly lightly tamped down.
I'll try it a bit harder later, by also using the tamper, as well as the distributor, and see what happens. Will also make the grind a little finer too, but will only introduce one variable at a time, so I know exactly what's causing the difference. Then when I'm happy with single shots, I'll try some doubles!
Not bad for a first effort though, eh?:)

I remember seeing a barista on TV a few years ago (part of some food program) - he strongly recommended swirling the coffee. He said that it improved the look, taste and ease of making artwork on the espresso, the presenter agreed on the difference/improvement of the taste.

Slower than last time.... It's no biggie, mate, as it tasted fantastic! Oh I should mention, I stirred that one, just like Guy said, so that's probably why the crema has faded!:D

I'm done with playing today though, as I've got other stuff to do, but I'll try what you've said tomorrow, as I'm sure that'll make a difference. One thing's for sure, once I get used to it, this machine is defo capable of making top-notch coffee... I was a little worried it'd be a bit style over substance, but happily that's not the case:)
I did froth/steam some milk though and make a small cappuccino - wow what a difference in flavour the milk had, much 'sweeter' and more creamy, so you were right there!:cool:

Lurvely... Still getting the hang of me milk spout, and how many shots of coffee to put in that 'bathtub' I like drinking my cappuccino out of:eyebrows: BUT.... Although not overly 'pretty', I've had a couple of tasty ones - WAY better than I was getting from the Moka pot:)

Cheers, I just want to optimise [down to fractions of a gram] the amount of coffee I use for both single or double espresso shots, then it'll be quantity of milk to use for (is it the 'flat whites' you make?) and also lattes and cappuccinos, which when finalised I'll take a note of and follow, so I can ensure maximum consistency!:)
Got the grind setting sorted now on the Lido (just a shade under 5 turns anti-clockwise from the zero position), which is giving me fast, even pours (in conjunction with a light tamp, and then twist with the coffee distributor), producing a lovely rich crema.
Btw, I found those illuminated milk thermometer strips a bit of a faff, as when you're holding the jug , frothing milk, you can't really see the readings, especially in low light conditions, so I'm using these now, which clamp onto the jug and work really well with their very clear analogue display:

Oh, and when the milk's in the red zone, at the optimal 60-65C, at least for me, heat-wise on the base of the jug, it's well beyond what is comfortable to hold!:eek:

Lol... I value the skin on my hand too much... I think it got to 55C, and I had to support the jug with the handle, or risk scalding! I have soft delicate skin, though:eyebrows:
More seriously, I think the Bialetti SS milk jug conducts heat really well!:)

just put hand down for a few secs now and then youll know when its ready. The doubling of size, milk wise is an indicator too.

If I spend big money on anything else coffee-related, I'll be a really good electric grinder... As mentioned, possibly the matching Smeg. But I'll be doing plenty of research first, so my choice delivers maximum 'GPPV' [grind-per-pound-value]!

it was some smeg user who said he got one as the noozle on smeg wasnt great.. but if your making capachino mostly itll be fine. i used to make latte with a similar one on my old machine. they are just a tad short tho
No worries, I've had no issues in that respect. I just ensure that there's enough milk in the jug for the nozzle to properly reach!;)
And any excess milk is popped into the fridge and used for making the next coffee.... I'm getting lovely rich, creamy froth, with no issues. I want to try the nozzle though, naked, without the attached 'sleeve', froth assist or whatever, and see what happens... Any predictions?
Also, have you tried filling the water tank in your machine with sparkling mineral water, just to see if the fizz creates more (or thicker) crema? I had positive results doing that with the Moka pot.

you shouldnt reuse steamed milk
I'm talking about within an hour, during which time it's been kept in the fridge, plus remember the milk I get is super-fresh from the dairy, delivered every morning.

P.S Have you tried using sparkling mineral water for making your coffee? I reckon it could improve the crema.
It's dangerous bacteria wise and you damage the milk structure proteins etc when steaming. Milk is technically only safe below 6c and above 60c. In between it can very quickly grow bacteria.. Just saying for safety wise. Also resteaming won't taste as good or foam well.
