What food are you having with them, Danny-boy? Obviously if you're having fish, I'd go with the Pouilly-Fumé [gorgeous wine], but it could also be drunk on its own. I'm unfamiliar with the red next to it, but know Fleurie very well and always enjoy it. It's very 'florid', light and fruity, which I'm presuming is a style of wine you like?:)
I was under the impression you preferred 'big hitters', such as Musar?

The whites/English Sparklings will be an aperitif really; we're on smoked trout/salmon and pickled herring as nibbles etc; roast fore rib and goose as the 'mains'; but it's more like a walking buffet this afternoon :D
The Fleurie; like you said, very light and fruity, but a lot more complex than something like a Beaujolais or similar. The Mollydooker is an Aussie red, at 16% it's a good, rich and very full bodied red, not overly alcohol in its taste, very similar kick to the likes of a Bulls Blood or Il Bombero etc. It'll suit the goose and beef well; it's this years replacement to the Musar for today. We had a 93' Musar yesterday and a 2000 Pomerol, both were splendid :) ;)

It wasn't straight out the bottle... Like an unhappy Pauillac haha :lol: We decanted it yesterday around 8am, had a quick taste and it was harsh and very dry... But a good 5 hours plus of it breathing next to a warm radiator; it was a stunner! Get the turkey & trimmings out of the way and had a small glass; very, very good indeed. The right kick of oak, the right kick of grape skins and vine cuttings and then a peppery/plummy/fig and date taste to it with vanilla and damson jam on the back taste... As odd as it sounds, it went bloody well with cold pigs in blankets :D The red cut through the fattiness etc ;) If you can find one, buy it and enjoy it!
I'm looking forward to the goose this afternoon ;) we've homemade pickled chillies and mostarda de frutta (mustard fruits); I used home grown Williams pears and very small conference pears with mustard seeds/dry cider and red chillies. First time I've ever done these and they're superb; it was a River Cottage recipe I used
Hahaha... All part of the fun of the wine experience!:D In terms of the warming up, I thought you'd have had your coal/log fire on, so why the radiator? I've got a nice flat log I use to sit wine on, to the side of the log burner, and use that to bring wine up to temp:)
As you say, aeration (along with decanting for older wines) is absolutely essential, in order to for them to release their full potential. However, in terms of aeration, simply popping the cork and leaving the wine to 'breathe', no matter for how long, really don't achieve much, as without decanting, all you're doing is allowing air into the gap inside the neck of the bottle. It's not circulating throughout.
To achieve effective/optimum aeration, I normally just decant. However, I've wanted a proper wine aerator for ages, and got this for Christmas:

Works great and what a difference it makes!!:eek::eek: Honestly, it transforms the drinking experience and really brings out everything that's good about the wine in question, especially in terms of fruit flavours. 2000 was a fab year for all 'clarets', including Pomerol. Do you also enjoy a good burgundy? Anyway, you need to post more about the wines you drink, not just whisky!;)

Not sure I would buy it at the full retail price. £200 for a bottle is a bit steep when there are so many good whiskys for less money.
Not sure who it was that recommended the Bowmore single malt at £20 but it is really good value - nice and peaty and smokey if that’s what you like.

I love the Ardbeg Kelpie; very impressed with it so far. Need to get the Groves as ell; but not sure it's worth it's current price of somewhere north of £200!

The Supernova is now north of £600, and certainly not worth it.
I set myself a limit of £100 per bottle, but tend to shop in the lower end of the market.
I think whisky is like HiFi, and the law of diminishing returns kicks in.
Probably the nicest bottle I ever bought was a 23 year old Bowmore, single cask bottling. Very smooth, but that has long gone.

Never smoked in my life, or drank alcohol to excess. The fact is *nothing* (short of pure poison) is outright bad for you when consumed in moderation, but a lot of folks simply don't have the willpower to consume something that they love the taste or effect of in moderation (they get greedy for it/the 'hit'), and that leads to the consumption of it in excess, which is where the problems start...
Plus, when it comes to alcohol or drug abuse, that usually happens when unhappy people are trying to escape from their unhappy/unfulfilled lives, and blot it out, which is why having a 'happy head' is the best cure/antidote of all for any bad habits;)

Thats right, i used to booze for england as an escape. Which led to being very over weight cos id already consumed my daily Calorie intake in Booze before i even started eating..
Yup, dude, it's a vicious circle.... Recognising the problem though [and not constantly being in denial], is the biggest step to doing something about it:)

Yup, the other thing to remember is that alcohol is a depressive, and so too much is not only bad for you physically, but mentally... The trick to enjoying it in moderation, is just like with anything else you enjoy in life: always control IT, and never let it control to YOU:)

I gave up smoking after 30+ years in April after my doc thought i had throat cancer and upon arrival for tests at the hospital i was accosted by an irate Romanian who was shouting at me for stealing his parking space.
After i removed him (by his throat and dumped him in a flower bed) and had the tests which were clear, the decision was made to never smoke again. Why would i want to go through that again?
But, i still like a tipple, and my guilty pleasure tonight is…

Ah, 'proper' cider, Jon [i.e. stuff that's actually been made from apples, rather than simply chemicals]. Lovely stuff, but for me mostly best drunk ice-cold in warm weather:)

Me too, a few of us usually ride past Aspall on the way to Eye then across to Aldeburgh for fish’n’chips on the beach.
It really doesn’t get better, especially after a pint of Adnams Ghost Ship.

Yeah, real ales always hit the spot during winter months, and conversely lager during the summer.
Just briefly returning to the alcohol thing, I think one of the reasons why I never became 'hooked' is because I grew up with it. In Italian households wine is as commonly drunk as water, even by children (albeit in diluted form), and so from about the age of 4, I drank watered-down wine during meals. Del was brought up the same in her German background.
It's also common in Italian families to have a well-stocked drinks cabinet at home, for both pre-meal aperitifs (which I was introduced to around the age of 15) and to offer to family and friends visiting, plus the use of alcohol features heavily in traditional Italian cooking. Therefore, I was both used to its taste, and surrounded by it, from an early age, and so unlike most British kids, for whom it had been strictly forbidden to drink by their parents, when I became of legal age to drink at 18, it was simply 'no big deal'...
I wasn't tempted to go out to the nearest pub and get pissed, as I'd been drinking alcohol for years beforehand, in moderation, and crucially always accompanying food, and grown to respect it, with such taught to me by parents who had been brought up by their parents to do the same. In my experience, that's often rather different from the situation present in most British households.
And my healthy relationship with alcohol has remained the same to this day:)

Had this with an excellent Thai takeaway on Saturday. Was a superb match. Always pleasing how food and drink cultures so widely geographically separated can compliment each other so well.

100 yrs ago today prohibition started in the USA.. Dark days indeed except for the criminals who made a fortune.... Thankfully we never went there, but it does make you wonder why some drugs whose use is often no more harmful, and sometimes less than alcohol is prohibited, allowing gangsters to run billion £ empires.
ps I have never taken drugs.... but I do think if they were licenced similarly to alcohol than much of societies ailments could have been avoided..

I have a fair amount of claret in my wine collection, probably around 35 bottles - a mixture of Haut-Médoc, Côtes de Bourg, Saint-Émilion Grand Cru classé, Pomerol and Margaux, but tend to keep it for special occasions, the same as my collection of red and white Burgundy, although it depends on what we're eating:)

I really should drink more Burgandy - keep meaning to order a case of Chateauneuf du Pape or of Nuits-Saint-George, but other things just crop up and I forget.
No worries, if you try the Bandol I think you'd love it. Remember though that Châteauneuf-du-Pape is a Rhône wine, and not from Burgundy;)
Nuits-Saint-Georges, however is fabulous, although Gevrey-Chambertin is where it's *really* at with red Burgundy. However prices, especially of the best vintages, can be eye-watering!:eek:
Pommard and Savigny-lès-Beaune can offer decent value with Burgundy, but the use of Pinot Noir will mean quite a different style of wine than you're used to from Bordeaux!
Chinon and Saumur-Champigny are also beautiful red wines from the Loire Valley:)

Château neuf is normally over priced, compared to the equally good Vacqueyras and Gigondas IMHO.

Yeah, Anto, I know what you mean. I used to be like that too, but now enjoy having a range of wines at home from different countries, and different styles, in red, white and (good quality) rosé, although the latter is usually drunk during summer months, but sometimes outside of that with fish and seafood dishes.
That's the thing for me too, as both Del and I are major foodies, so like to pair the right wine with the right food, and we also enjoy entertaining and having dinner parties with friends and family (nothing too formal, though). Plus, I'm always on the lookout for bargains or unusual wines, so can't resist picking up something when I'm in shops and supermarkets. However, it's always consumed in moderation, so doesn't end up being 'necked' just because it's there...
Generally, I like to keep a stock of around 100 bottles, but often it ends up being much more!:D

The other thing that's worth mentioning is price. Barry listed some pricey bottles earlier, but if you know what you're buying and get it right, there's a MASSIVE difference in quality between, say, a £20 bottle of wine, and ones for a tenner - almost as much as there is when going from a fiver to a tenner...
Beyond the £20 mark though, improvements are generally more subtle, and when you get to £50 and above, you need to ensure that you're not just paying through the nose for a bad vintage from a 'fancy name', which could be bettered for half the price! Do your research and only pay big money for fine wines, for the best vintages, as that's where the rewards are, and the results can be mind-blowing, if not very wallet-friendly!!
A good tip though, for getting maximum 'slurp-per-pound', when buying wine from specialist wine shops on the high street (my favourite way to shop for wine, as I love browsing through all the bottles), is to look for wines without a bar code. Quite often wines from very small producers don't have barcodes, as they haven't been through the UPC/EAN coding system, but can be utterly superb and offer excellent value for money, ably competing with wines at two or three times the price!
So if you've got a good independent wine shop in town, and use it, bear that in mind, or ask a member of staff if they have any wines from very small, specialist producers without barcodes, as that's often where you'll find some stonking bargains! :exactly:

25ml just coats the bottom of the glass, we always use a measure in the now in the house, but usually pour a 50ml measure.

Enjoy haggis if it’s good, and I have several friends who are on the “Burns circuit” locally. Also I have been known to enjoy the odd glass of whisky.
I'll report later on whether or not the haggis was good, but based on the standard of the food we had before, I'm expecting it to be excellent, and indeed also everything else:)

It really was exceptional value at £23 a head, because what we didn't realise were included were several whiskies, toasting the haggis and the 'laddies and lassies', with humorous speeches, etc, plus the "small" plate of cheese and oatcakes to finish turned out to be a very BIG one, with numerous different kinds, including a WHOLE baked camembert per table!:eek:
And the oatcakes were made by one of the locals, as was the clootie dumpling, which was fabulous. It seems the pub has a policy of local residents, who are good cooks, supplying certain dishes to the pub, which is a great idea and facilitates a strong community spirit:)
All in all, a fab night was had, meeting the locals and having a good chinwag, which shows that proper, family-run village pubs still exist today - and what a welcome change they make in comparison with the soulless chains you get now all over the place!:cool:

The feeling of a close community spirit in these little village pubs is palpable, warm and friendly, and so different from the soulless and impersonal nature of chain establishments, which I utterly detest.
Superb food (both in terms of quality and value), a great selection of beers/local ales, all enjoyed in a convivial atmosphere... What more could you want?:cool:

Marco.Rye whiskey has a mash bill of at very minimum 51% rye cereal in it. That would be called barely legal lol. Some have 100%.
Its quite spicy stuff. They are starting to put a bit of rye in other whisky now I hear,..
Glass is pewter based. Nice and heavy.

Yes it was, though being a restaurant I paid nearly double that. However it wasn't the cheapest wine on the list; which is an embarrassment of riches, with several bottles costing €1,000 or more.
No worries, if you try the Bandol I think you'd love it. Remember though that Châteauneuf-du-Pape is a Rhône wine, and not from Burgundy;)
Nuits-Saint-Georges, however is fabulous, although Gevrey-Chambertin is where it's *really* at with red Burgundy. However prices, especially of the best vintages, can be eye-watering!:eek:
Pommard and Savigny-lès-Beaune can offer decent value with Burgundy, but the use of Pinot Noir will mean quite a different style of wine than you're used to from Bordeaux!
Chinon and Saumur-Champigny are also beautiful red wines from the Loire Valley:)

Its not that complex but it needs to be warm to get the flavours out. If slightly cold it is a bit bland.
That doesn't sound too positive but it is really nice stuff. Their wines just aren't that complex as a rule.

Picked up a miniature of Deanston 12yr old to try. This is at 46.3vol, And now non chill filtered too on its relaunch.
Lovely light fresh nose, and a good finish too. I between there is a bit of seaside and fruit, of which I think might be oranges or lemons.
Wishing I'd bought more now lol.

Signatory usually produce good bottling. Being cask strength it goes a lot further too

Lol... Told you, though. Drink IN MODERATION, and you'll be fine! Far better for your soul than being tea-total and miserable, or pumping yourself full of chemicals (if for pain relief, you're substituting pills for alcohol).
I'm not a big spirits drinker, but that's why I enjoy a couple of glasses of red wine with a meal. It's enjoyable and relaxing!:)

it is.. its from the Buffalo Trace distillery.. buffalo trace itself is very good too, but a little younger.. similar mashbill although not quite same; barrel placement is a lot to do with good bourbon due to weather in kentucky. Young ones can pick up flavours from wood quickly due to the heat etc producing more movement into and out of the wood. where in scotland it happens much more slowly

its nice but not worth the silly money you pay now tbh. Eagle rare has a lot of its attributes... not putting you off but i wouldnt spend what it goes for now. 20 yrs ago it was expensive but affordable.

rather nice with the cucumber tonic .. you could use seltzer as well, although originally it would be club soda... ginger ale too can be used.
i might add eagle isnt the best bourbon to use tbh, but that was what was open. its a bit full bodied. think i will try a rye one next time as ive never had a rye old f

This is only the second bottle of Swiss wine I've tasted, and unlike the first reported here, I really enjoyed this one.
Nice earthy nose, the taste starts as tart cherry finishing towards almond.
The blurb on the bottle states:
Nose: red fruits, strawberry, raspberry and cherry
Taste: fruity start, silky soft tannin, beautifully rounded
Can be drunk with red and white meats, charcuterie and cheese.

Went in last year whilst we were at a family camp-along in the Delamere Forest :lol: Train ride in (I'd forgotten to take any whisky with me, just had bourbon); my brothers a cigar fan and we couldn't help ourselves haha
Whisky has the usual 'tourist', premium added to it; but a few bottles there that were only c£5 more expensive than normal; think I came away with 2 bottles :D

Burns Crystal are a family business who have been hand engraving crystal and galls for the last 3 decades.
This finely crafted glass is a reproduction of a mid-18th century Jacobite Dram Glass. In the aftermath of the 1745 Jacobite Rebellion, followers of the outlawed Stuart cause met in secret to honour the defeated Prince Charles Edward Stuart and toasts were drunk to the "King across the water".

Impressive collection there Grant. Personally am not a whiskey lover prefer Tequila which i have nice collection of at the moment. Will try get some pics together once we finished this batch of lambing and have the time. Also like a nice real ale prefer Blondes among my favourites are Blueberry by Coachhouse Brewery, Boxer Blonde by local brewery Bowland and like the Tequila Blonde by Saltaire Brewery.
Also like to mess with flavouring my tequilas at mo i have a bottle of Sloe Tequila and one Pear drops :)

I have 5 litres of 90%+ stuff in the garage to make record cleaner. It won’t be going in hand sanitizer, as it is less effective than soap and hot water.

Opened another bottle tonight. Bunnahabhain Stuireadair, or on English, stuir meaning Helmsman.
This is a 46.3% matured in first and second sherry casks.
This is a lovely coastal dram. Very smooth and rich, with a bit of salt and seaweed t'boot. not my style but nice for a change

Quite enjoy a Bunnahabhain.Not a distillery I've used a lot. That one was pleasent enough although it left a taste that I'm not sure I loved. Possibly the seaweed aftertaste I felt was there. I had this once from anoth whisky. Might have been a singleton

I quite like the malts from Islay.
I quite like the malts from Islay.Used to be more into smokies but not so much now. Palates change I guess

Everything changes as we get older Grant. My dad always used to enjoy Black Bottle, and it was probably my favourite of the blends then a few years ago they decided to change the blend and the bottle shape, one taste of the new blend was my last.
