Agreed - always an egg on my gammon, never pineapple.
I'm more ambivalent when it comes to sweet and sour sauce. I have enjoyed it in China, but then you would assume they know what they are doing. The same with duck á l'orange, or duck with plum sauce.

There's some artistic licence, but at a minimum a risotto uses short grain rice, that's the whole dish, the creaminess.Since when has a risotto had chilli peppers in it, kidney beans or garum masala, fenugreek, tumeric for that matter. There is no law which says you have to use arborio rice. I prefer long grain rice, or if I want to be a bit more traditional, carnaroli rice.
You stick to your dirty grey mushroom omelettes, and I'll stick to my 'meta'-risottos.

All sorted, daughter heard my hiccups from upstairs, came down, scared the crap out of me with a "boo" and hiccups are gone. Unfortunately I shat myself, so new problem - but a spoon and a sponge will resolve that so no drama.
