Jules, I tried the Suarez in a Aeropress for the first time this morning and was disappointed by it too, it lacked body and flavour but I used my normal weight (around 16g) and grind settings when using an Aeropress. It's quite a light roast compared to my normal Columbian beans, so I ground the beans finer and upped the weight to 20g . . . wham, wonderful and even better than a pour over. Rich, sweet and all the normal Colombian chocolate notes were there, best cup of Columbian I've had at home for sometime.

The beans have rested for over 2 weeks since roasting now, so that might have a bearing, but I was impressed. I made a second cup using the same grind setting and weight to see if it was a fluke? Nope, bang on again. The water was hotter than normal too, about 20s after a full boil and a 2 minute immersion (inverted method).

Just shows it pays to play around if it doesn't quite hit the spot first time around.

I know you can't alter the grind size, but might be worth exploring water temps, amount of coffee and brew times?
