Today's breakfast, avocado with spring onion, burrata cheese, poached egg, tarrgon, balsamic, fried baby tomatoes. Part of my low carb diet, ruined by a piece of toast with jam afterwards.

Trying to eat vegetarian 5 days a week now for the sake of my kidneys. This was delicious, just a simple dish of bulgar wheat with aubergine and tomato, feta, mint.

Both so easy to make, got the aubergine/bulgar wheat recipe from Yotam Ottolenghi's cookbook 'Simple'.
