When I get some bad beans, I deliberately leave them to oxidise. Very often, sometimes after weeks, they come out better.Interesting... Haven't noticed any effect like that. The beans come out the same way as they went in

Not really. It might be in France, but in Italy (especially in households) it's served during the morning in a traditional wide-mouthed cup, so folks can dip their thick, crusty bread in!
