OK, What's For Lunch or Tea Today?

Mini Chicken Enchiladas - Chicken thighs cooked with Chipotle, freshly squeezed Orange Juice, Red Pepper, Tomato, Onion, Garlic, Black Beans and Coriander (with a Scotch Bonnet thrown in for a bit of fun). Mini Corn Tortillas then rolled with the shredded chicken and basted with the remaining sauce, covered with grated cheese and baked in the oven.

Served with a Mexican Green Salad of lettuce, spring onion, avocado, coriander and a dressing of fresh lime and olive oil. Dressed with mayo and some Valentina hot sauce.

Some here may scoff (the unrepentant carnivores, lol), but the salad looks as good/appetising to me as the rest!

Yeah, most of the butter was underneath, Alan, (and sooked up with a slice of crusty bread)

Nah! The enchiladas had all the spice needed. The ‘rabbit food’ was a welcome fresh contrast and also prevented me from going into a Carb Coma

Nah... Nice, fresh crispy salad roolz!

Anyway, Del made a home-made curry for tea (chicken patia) with pilau rice (infused with cardamom seeds), plus home-made chapatis...

Some of the prep (rolling out of the chapatis and making of base sauce for the curry):







She also made some spiced onions (a speciality in Indian restaurants in Scotland. The sauce comprises of tomato ketchup, mint sauce, mango chutney and chilli powder, sprinkled with fresh coriander) and raita, which was served with onion bhajis and veg samosas, from Lidl, which actually were remarkably good:





And the finished curry and rice, with a chapati:





Defo as good as anything I've had from most Indian restaurants
