That and the fact that there wasn't very much of it (sauce), lol! I like something 'wet'/juicy (made with a proper stock and good ingredients) to dip meat into - and for the potatoes to sook up
The sauce, which accompanied the pheasant, had vintage cider, a touch of cream, apple and fresh sage in, all reduced right down to maximise flavour. It was awesome!
