    Pizza with brocolli and sweetcorn - that's unthinkable. But mushrooms are IMO (but not Happy's) sine qua non to a pizza.

    Not for me, although you do get ones with porcini mushrooms on them in Italy.

    But that's the problem when things become bastardised beyond recognition, like pizza has become today, which let's not forget originated in ITALY. What's forgotten in the quest for turning pizza into a heavy, stodgy overelaborated mess, is that the star of the show is always THE BASE, and the toppings of secondary importance.

    It's mostly the other way round these days, until that is, anyone visits Italy and gets a (pleasant) surprise at what REAL PIZZA looks and tastes like!!

    Now don't get me started on lasagne!!

    Looks pretty good, Roy. Perhaps, for me, just a little too much sauce and parmesan cheese. I'm sure it tasted nice, though!

    At the end of the day, cooking is all about making what YOU like to eat, but in Britain, especially in the majority of Italian restaurants, the tendency is to overcomplicate/overelaborate Italian food, which when done right, majors on simplicity [the 'less is more' concept].

    The key is always in the quality of the ingredients used and their freshness, not on how many you can use and bung on a plate
