    Because it is an auction.

    If the seller stated the price he wanted, it would probably be so high buyers could be put off and no-one would bid. If, on the other hand, there is no BIN (Buy it now) price, bidding will start and could well end up reaching a figure in excess of what the seller was hoping to get. The reserve means the item does not get sold for too low a figure - just as is done in conventional auctions.
