I don't tbh but not sure I agree with his statements either. You don't go deep to foam, although deeper than froth, and deeper later maybe depending. Don't agree re milk age either lol.
Still I'm sure he knows what he's talking about. I've steamed older milk fine. Sometimes better than super fresh.. Obviously you don't want it near expiry tho. Tbh lactose free stuff steams better imo. Full fat is easiest.
Best advice is watch someone then just practice. It will become obvious the first time u get it right, and you'll wonder why it took you so bloody long [emoji23]

I'm Grant.
You want tip just under surface with the jug at an angle towards the spout. Move the just to side to get a vortex started, and keep surfing just under surface. This means altering pitcher depth constantly and if vortex is too strong, reducing both pitcher angle and position towards centre. Keep dropping pitcher as milk rapidly expands. You should get a nice slightly throaty noise when it's stretching.
Once your getting volume up to double original, and also checking temp doesn't get above about 66c, you can if needed stop the expension and keep heating but stopping vortex and dipping wand deeper.
Give pitcher a few swirls and bangs on counter to improve gloss and break up any big bubbles.
If there is a little froth on top, skim it off.

Not had a chance to use it yet [that probably won't happen until tomorrow], but she's now in situ on my kitchen 'drinks station', including recently purchased accessories, such as the Bialetti stainless-steel milk pitcher (fitted with Granty's recommended adhesive thermometer), and depth-adjustable coffee distributor, plus tamper. And of course, the Lido 3 hand coffee-grinder:
Top tray heats up and stores espresso cups, which is quite handy:
I think it looks rather cool! Well pleased with it, plus it matches our red Dualit toaster at the other end of the kitchen. Anyway, I'm now an official Smeghead
I wasn't going to open it up it until my birthday (as it was bought as a gift for then), but my uncle's coming down from Scotland to visit my dad and me, and have lunch with us on Sunday, so decided to give them a nice espresso - *if* I'm capable of making something half-decent by then!

It's got a froth assist so frothing will be easier. Sometimes it can make foaming trickier tho, just depends so don't get depressed if microfoam doest come easily.

Cheers, mate. I think it suits its surroundings. I wanted something that looked retro cool and stylish, as we both love classic 1950s design.
