The beans have rested for over 2 weeks since roasting now, so that might have a bearing, but I was impressed. I made a second cup using the same grind setting and weight to see if it was a fluke? Nope, bang on again. The water was hotter than normal too, about 20s after a full boil and a 2 minute immersion (inverted method).
Just shows it pays to play around if it doesn't quite hit the spot first time around.
I know you can't alter the grind size, but might be worth exploring water temps, amount of coffee and brew times?
Ah that's interesting Tim - I just didn't think to try changing the brew time, it's not like I didn't know how important it is! 
By the way, the Columbia and El Salvador from North Star are both superb, highly recommended.
