using two or more subs will cancel room resonances, that's why people use more than one, nothing to do with stereo imaging.

We will have to differ on this one. At these long wavelengths (many times the length of the room) the chances of getting cancellation of room resonances are slim.

The best one could hope for is optimisation at the listening seat and I would suggest that this can be better achieved by movement of the single sub within the room or by room treatments.

There's nothing to differ about. The reason people use ,multiple subwoofers is to give even bass in all locations, which is why you often see them in dedicated home cinema set ups. Yes, for one listening spot one sub will be fine. After all if you can hear the sub doing its thing distinctly then it's not set up right.
