    Think some folk get nasty reactions with fermented foods but most are ok.. Will get a lot of gas initially tho..lol.
    ... Im not going to eat any tho as i would likely react badly

    If you like the spicy garlic/ginger taste you can still make a Kimchi rub and use it on veggies without fermenting them or just leaving in a fridge to marinate for a couple of hours. Nice with rice or on top of jacket potatoes! You can also use it to make a sarni similar to a Vietnamese Bánh Mì

    I make kimchi myself. It's very easy to do. I bought a special Korean fermenting pot on Amazon. It has a double lid which really prevents it from stinking up the kitchen.

    The trick is to use gochugaru (Korean red pepper flakes) and not regular chilies. Gochugaru is not super hot, but it's very fragrant, reminds me of good paprika.

    The pot is also brilliant for making sauerkraut and other fermented veggies, salted tomatoes being my favourite stuff ever.

    I think I've been making kimchi myself without even knowing it. The binmen come and empty my fermenting pot every two weeks.

    My Son and I take the piss out of Mrs Puffin as she is really into this sort of stuff.....However she tried some Kimchi which I presume wasn't a hit with her as some weeks later I saw it on the garden wall awaiting some sort of ritual burial.......I think. Mrs P is into what son and I call ponsy lifestyle foods like Pingi Pingi beans of Foo Foo root and "weeds" that sell at inflated prices as superfoods

    Lea and Perrins is Worcestershire Kimchi sauce. It is fermented with many of the same ingredients as Kimchi, including fish (anchovies)
