I would disagree, a large show is easy, you get a venue and then book a Saturday / Sunday not at Christmas or in the middle of holiday season and publicise the hell out of it, knowing that as long as the venue you have booked is relatively easy to get to by most folks then you're on to a winner, whereas a small bake off you really do need to consider the people who would potentially want to come and their calendar, with a big show if 50 people can't make it then it's no big deal, but with a bake off if 5 or 10 people can't attend then it may be a none starter.
Just my opinion
unless it snows! most bake-offs are oversubscribed (often with a subs bench) and really no outlay / risk
