Cheers, I just want to optimise [down to fractions of a gram] the amount of coffee I use for both single or double espresso shots, then it'll be quantity of milk to use for (is it the 'flat whites' you make?) and also lattes and cappuccinos, which when finalised I'll take a note of and follow, so I can ensure maximum consistency!
Got the grind setting sorted now on the Lido (just a shade under 5 turns anti-clockwise from the zero position), which is giving me fast, even pours (in conjunction with a light tamp, and then twist with the coffee distributor), producing a lovely rich crema.
Btw, I found those illuminated milk thermometer strips a bit of a faff, as when you're holding the jug , frothing milk, you can't really see the readings, especially in low light conditions, so I'm using these now, which clamp onto the jug and work really well with their very clear analogue display:

Oh, and when the milk's in the red zone, at the optimal 60-65C, at least for me, heat-wise on the base of the jug, it's well beyond what is comfortable to hold!
