One of my 'specials' is sausage omelette. Fry chipolata sausages until they start browning, cut them into inch long pieces then finish frying them. Pour beaten eggs for the omelette into the pan and sprinkle the sausage pieces into it, fry until cooked to suit. Comes out great! The grand kids like that one.
