Ah. I've got Tesco sweet 'n sour chicken spring rolls for later. Had them before, they're quite nice. Not sure what I'll be having with them yet. Maybe rice and veg with some sweet chilli sauce.

Chicken mini fillets cut up a bit then marinaded in a chilli rub.
Treat as stir fry but cook a bit longer.. fry in olive oil then add chopped green onion and red pepper.
Add light soy sauce,small tin pineapple and juice plus tomato puree and paprika.
A splash of modena vinegar and let it thicken in pan while cooking rice..
I used jasmine rice.

I'm planning a cheesy veg bake, with cauli, brocolli, mushrooms, carrots, kidney beans and maybe other bits. Might use a creamy tomato sauce and there'll be loads of cheese topping.
