I prefer to cook potatoes with the skins on (as that is where all the vitamines etc. reside), so just give them a good scrub and remove as you have noticed any 'eyes' and spade 'cuts'.
There was a more meat left in the pan: but as Alex had noted we did go a bit overboard with the veg. Not that I'm complaining - I love vegetables.
