Lol, no worries. When you open a new block of Parmesan, once you've used what you need, do you just pop it back into it's plastic wrapping, and into the fridge?
If so, try putting it inside an airtight container instead, such as an old takeaway food carton, and put that in the fridge, and it'll stay fresh for ages then

No worries. Inside an old takeaway carton does the job for us. Do you have any?
You'll know though when it's past its best (regardless if it's off/past it's sell-by date or not), as it starts to go hard and a bit yellow (instead of soft and creamy white), then it just tastes nasty, and when grated, bitter. If it gets like that, it needs chucked, regardless, or used in a risotto.
