Lol, nice one. I like them, but it's not something I really have. Don't think I've had a jacket potato for years! Chips aside, I generally see potatoes as an accompaniment to a meat or fish dish, and not eaten on their own, but that's just me

Also got some stew delivered with a tight timeline so will cook that today. can freeze it then.

Cool, chestnuts are good. I'm not talking about fresh porcini mushrooms though, as they're hard to find and expensive, but rather the dried variety, which you can find in most supermarkets. They have a really intense umami flavour and work well in risottos.

You need to soak them for a while before use (around 20 mins), then add the mushroom liquor to the pan to increase flavour further, then fire in some sliced fresh chestnut mushrooms to give texture and more flavour

I did use some really good saffron in this one though as it brings it’s own joy. Also, I DID have some cream this time for a bit of luxury.

Lol, I thought I might have been, but wasn't sure! Nice one. As dried stuff keeps for ages, we always have plenty of them in our 'pantry'.

Sorry to hear of illness in your family. Gosh, that's a lot of commuting! Anyway, I hope he or she gets well soon

Yup, they are good for you. It's a cheap and filling meal, although if I were having them, I think I'd smother them in baked beans (and a nice knob of butter), to add a sauce and some moistness, as they can be quite dry - and you know me for dry food!!

ive never tried beans with a baker.. butter and cheese usually... maybe bacon or chicken as a garnish etc
