Last night’s dinner, a sort-of variation on Butter Chicken (without the cream).
Marinated Chicken Thighs overnight in yoghurt, fresh ginger, turmeric, cayenne, garam masala, cumin and salt.
Browned the chicken off in a pan, then cooked with onions, garlic, ginger, green chilli, Patak’s Butter Chicken paste, water and fresh, chopped tomatoes.
Finished off cooking with a splash of milk (to thicken), fresh Coriander and Kasoori Methi (dried fenugreek leaves).
Served with brown rice and a bottle of Peroni beer.
