    I do it the other way round. Fry the slices until beginning to brown and finish them in the oven. That way much of the oil drains from the potato pieces. It works.

    Tonight's tea, enjoyed in the fading Wrexham sunshine, after having worked hard in the garden all day, so decided to treat myself... Pan-fried Gressingham duck a l'orange with homemade dauphinoise potatoes and fresh spinach:
