    Had a wonderful week in Puglia, southern Italy, last week, mix of Italian and cooking lessons and a bit of sightseeing. (Yes ok Marco you have permission to be smug).

    First addition to my repertoire was cooked last night: Parmigiana - basically sliced aubergines, mortadela meat, tomatoes, parsley, two kinds of cheese (Pecorino Romano - a hard cheese from sheep - and Parmesan).

    I think it came out pretty well:

    Trick I picked up was to coat the slices in egg and flour and fry till a bit crunchy... when I tried this dish before with aubergine slices on their own it went mushy. This held together beautiful and the flavour benefited too.
