Perhaps not to everyone's taste but Chris de Burgh's Moonfleet & Other Stories is very well produced. Good album too if you like concept albums with a little narrative...

Hmm, Storm Corrosion mentioned (just listening it, again)
There are plenty of fine albums despite the format out there that have both the contents and the recording quality present, so will go for some not mentioned yet and ignore the count to three..
Rock/Prog/Pop
1. Black Sabbath - Paranoid
2. Jethro Tull - Aqualung (especially the 40th year anniversary edition)
3. David Bowie - Let's dance
4. Wishbone Ash - Argus
5. Dire Straits - Communique
Jazz:
1. Oliver Nelson - The blues and the abstract truth
2. Keith Jarrett - Köln concert
3. Ben Webster - Soulville
4. Jim Black - Endangered Blood
5. Jack Dejohnette - Inflation Blues

This is a public service announcement.
If you haven't got The Healer by John Lee Hooker, just buy it.
I am forever in debt to whoever recommended it. Total class. Stunning recording.
