Was very good made with my favourite Pork & Caramelised Red Onion Sausages.

Lunch was s but of salmon on toast with a drop of hoisin on top

Hard to see whats actually in this but it’s kind of like a lasagna made with corn tortillas and slow-cooked chicken chilli.

Cooked the chilli yesterday using chicken thighs, black beans and a mix of chili peppers (Ancho, Cascabel, Jalapeño, Chipotle and Guajillo), tomato, chicken stock, garlic and onion.

Just layered the chilli with corn tortillas and a bit of grated cheese on top.

Served with a bit of salad with honey/mustard dressing.
