Recipe said 1 hour, it was tough at 40 mins, and still tough at 1 hr 10 mins, so think it wasn't ever gonna tenderise. It seems to be a hard one to find in restaurants, be nice to try it by a real chef. Will be changing over to a largely vegetarian diet soon though, as I suspect I have early stages of CKD (chronic kidney disease).
A bit sore today so ordered a carry out in... Burger and some pakora.

First time I ate rabbit was in France, back in the middle '60s. It was served up like an anatomy dissection - put me off for life.
I have tried most fowl: chicken; turkey; pheasant; partridge; quail; plover and goose. Can't say I like any of them.
The only bird I like is ostrich, which has a much more 'meaty' taste. And it's very low in cholesterol. :)
turkey, chicken and a bit of lean duck for me. the rest i can happily do without. not tried ostrich or plover. beef, pig and lamb but only fairly lean. just as well i can eat meat as im not a big veg eater due to my system not agreeing with them now. i like beans, lentils, peas, green beans, tomatoes, potatoes, carrot, onion depending..etc
tbh im perfectly happy most of time with something like corn flakes, and honey nut ones if gluten free and rhubarb or stewed strawbs, apples etc. can jjust about live on that. i like a bit of fruit juice, especially spice tomato.. so i guess i could live meat free if pushed. ive got lots of meat in freezer and it rarely gets eaten unless im in mood. i do like a scotch pie tho lol
Ah - forgot to mention duck. Don't like that either.
Of four-legged mammals, I've eaten: cow; pig; lamb; water buffalo; zebu (a humped cattle); goat, and camel. I like all of them save goat and camel (the latter because they are so useful as beasts of burden, they are rarely slaughterd to eat, but if they are they have lived a life of hard work so the meat is tough).
I've also eaten other strange and to my tastes disgusting things on my travels (such as tortoise), but have not, to my knowledge, eaten cat or dog.
I'm also pretty choosey about what fish and sea food I eat: love cod and haddock, less so sea-bass. Also love prawns and octopus, but dislike squid and shell fish, apart from crab and lobster.
Think I ought to become a vegetarian - but I love red meat too much!
