Huevos Rancheros for brunch today. Homemade corn tortillas, salsa, refried beans, avocado and fried eggs with a splash of hot sauce.

Some great cooking here, guys... In particular, Tony, your tortillas look great! We don't tend to do Mexican food much, but LOVE it (and it's great for Del being a veggie), so must have a crack at it again:)
Anyway, today's lunch was Del's homemade spinach and ricotta crespelle, with homemade tomato sauce, sprinkled with freshly grated parmesan:

Much lighter than cannelloni and just as tasty! And washed down with a nice bottle of Barbera d'Asti DOCG Superiore.

Donald Russell s Best stew. I sautéed it first and added herbs etc.. Then used foodi to pressure cook it.
The it's transferred.. Sauce is sieved and thickened.
Absolutely fab.. Tender as a tender thing. Full on flavour
